8 large tomatoes
8 ounces ground veal or pork
A knob of butter
4 slices hard toast, crumbled
1 to 2 eggs, beaten
3 tablespoons chopped parsley
1 clove garlic, chopped
Freshly grated nutmeg
Salt
Black pepper, freshly ground
Oil

Steps:

  • Cut the top off each tomato, scoop the pulp and seeds out and turn the tomatoes upside down on paper towel to drain. Leave for 1/2 hour.
  • Preheat the oven to 350 degrees.
  • Fry the meat with the butter in a frying pan until the meat is browned and crumbly. Remove from the heat. Add the toast crumbs, eggs, parsley, garlic, nutmeg, salt and pepper to taste.
  • Stuff the tomatoes with the meat mixture and put the tomato lids back on the tomatoes. Place the tomatoes in a deep, ovenproof dish and put a drop of oil on each lid. Bake in the oven for 30 minutes.

12 ripe (around 10cm diameter) vine tomatoes
a few sprigs tarragon
12 basil leaves
olive oil
a glass white wine
50g crème fraîche
½ a bunch basil, chopped
½ a bunch tarragon, chopped
½ a bunch flat-leaf parsley, chopped
100g veal mince
100g pork mince
20g chicken livers, trimmed and finely chopped
50g pancetta, finely chopped
30g breadcrumbs, soaked in 2 tbsp milk
30g ricotta
1 tsp fennel seeds, crushed

Steps:

  • Heat the oven to 190C/fan 170C/gas 5. For the stuffing, mix all of the ingredients together. Season with salt and lots of black pepper. You can fry a little bit of the mixture to check the seasoning.
  • Cut the tops off the tomatoes and reserve. Hollow out, discarding the seeds and put the tomatoes in a baking dish on top of the scattered tarragon sprigs and basil leaves. Lightly season the insides with salt, and stuff with the filling. Perch the tops of the tomatoes back on. Season with salt, drizzle with olive oil and add the wine to the dish.
  • Roast in the oven for about 25 minutes: after 15 minutes, add the crème fraîche. Roast until the tomatoes are soft and the stuffing is cooked. Serve with the juices from the dish and some toast if you like.

1 teaspoon minced garlic
2 cups chopped tomatoes (canned are fine; drain them first)
Salt and pepper
1 cup mixed good olives
8 to 12 thin slices veal, preferably from the leg, pounded slightly until less than 1/4-inch thick
Flour for dredging
1 lemon, thinly sliced
Chopped fresh parsley leaves for garnish

Steps:

  • Heat oven to 200 degrees. Put 2 tablespoons olive oil in a medium saucepan over medium heat; add garlic and, when it sizzles, tomatoes and salt and pepper. Cook, stirring occasionally, until tomatoes break down, about 10 minutes, then add olives, and turn heat to low.
  • Put about 3 tablespoons olive oil in a large skillet, preferably nonstick, over medium-high heat. Sprinkle veal with salt and pepper, then dredge it in flour. Sauté as many slices as will comfortably fit in skillet, just until brown on both sides, 5 minutes or less. Remove to a plate, and keep warm in oven while sautéing remaining slices.
  • Taste sauce, and adjust seasoning; spoon it over veal slices, and arrange lemon on top. Sprinkle with parsley, and serve.

This is a little more time consuming than the recipes I have been posting lately but it is well worth the effort. It would be one to make for a special occasion or a dinner party to impress.

800 g veal loin
2 medium yellow peppers, roasted
150 g boursin garlic & herb spreadable cheese, at room temperature
150 g soft fresh goat cheese, at room temperature
20 baby spinach leaves
12 basil leaves
pepper
salt

4 large sun-dried tomatoes, drained
6 slices bacon
olive oil
olive oil
2 shallots, chopped finely
1 1/2 cups water
1 1/2 teaspoons instant chicken bouillon granules
2 tablespoons lemon juice
2 tablespoons capers
2 tablespoons fresh parsley, finely chopped
1/4 cup butter, 40-50g approx
pepper
2 teaspoons cornflour

Steps:

  • Roast peppers in 200c oven, flesh side down, until skin blisters and blackens. Allow to cool peel skin off and slice into thin strips, set to one side.
  • Stir the boursin and goats cheese until well combined, set to one side.
  • Slice veal down the middle, length ways, being careful not to cut all the way through. Open out and with a meat mallet pound until is of equal thickness and a rough rectangle shape. Season with pepper, salt and garlic powder.
  • Place spinach leaves down the centre of the veal to form about a 2 inch wide strip, lay peppers on top of spinach, arrange sun-dried tomatoes on pepper.
  • Set aside about 1/4 cup of cheese mixture for the sauce. Spoon remaining cheese mixture in an even log over the tomatoes, finally arrange basil leaves on the top of the cheese.
  • Fold veal over filling,and roll up, secure by tying kitchen string at several intervals down the length, also wrap the string once lengthwise around the veal to secure ends.
  • Cover ends of veal with aluminum foil to enclose filling completely. Cover veal and reserved cheese separately and chill for at least 6 hours. This can prepared a day ahead of time.
  • Melt the butter and olive oil in a large fryimg pan over medium high heat. Remove foil from ends of veal, keep to put back on. Brown veal on all sides, turning frequently, about 10 Min's. Remove from pan, replace foil on ends and drape bacon across the veal and tuck ends under.
  • Place veal in a roasting pan and roast in pre-heated oven 180c-190c depending on oven temps for 50 Min's, Remove and transfer to a chopping board and allow to rest 10 Min's before slicing.
  • Sauce.
  • Heat a small amount of oil in a pan and add shallots, cook until shallots soften.
  • Add water and stock granules, bring to the boil, reduce to a simmer, for a few minutes.
  • Whisk in lemon juice, capers and parsley, over a low heat gradually whisk in butter and 1/4 cup reserved cheese mixture.
  • Season with pepper.
  • Mix a little water with cornflour, add to sauce, turn the heat up slightly and cook, stirring, until mixture thickens.
  • To Serve: Remove foil, bacon and string from veal, slice into even slices, arrange on a plate and drizzle sauce over. I served mine with dilled carrots. So serve with your favourite veg and mash if desired.
  • I served this for three and it was perfect but I did not serve any starchy carbs with, so it may work for 4, but I would suggest upping veal to 1kg for 4.

Provençal Veal Breast Stuffed With Swiss Chard image

This Passover holiday recipe, an ancient jewel of Jewish Provençal cooking, feels modern with our new love of Swiss chard. It is traditional to use a whole veal breast with all the bones, but that makes for a giant roast by today's standards. For this simplified but magnificent version, have a butcher trim, butterfly and remove the bones -- and save them to cook beside the meat, where they will add flavor and texture to the braise. The dish tastes best cooked a day ahead to allow the flavors to blend.

6 tablespoons olive oil
3 large onions; 2 diced, 1 cut into 2-inch pieces
Kosher salt
Freshly ground black pepper
3 garlic cloves, finely chopped (about 1 tablespoon) plus 2 cloves, unpeeled
4 sprigs thyme, leaves removed and chopped (about 1 teaspoon)
1 sprig fresh rosemary, leaves removed and finely chopped (1 teaspoon chopped)
2 pounds Swiss chard (2 to 3 bunches), leaves and stems chopped
1 (15-ounce) can crushed tomatoes
1 large egg, lightly beaten
1 square matzo, crumbled into 1/2-inch pieces
1 boneless breast of veal, about 4 pounds, trimmed, butterflied, bones reserved (a butcher can do this, or order it for you); see note
1/2 cup Côtes du Rhône or other dry red wine
3 carrots, cut in half lengthwise and then cut on the diagonal in 1-inch slices

Steps:

  • Make the filling: In a large skillet, heat 4 tablespoons of the olive oil over medium heat. Add diced onions, season with salt and pepper and sauté until softened. Mix in the chopped garlic, thyme and rosemary. A few handfuls at a time, stir in the chard and, using tongs to toss, cook with the onion mixture until all the greens are soft, about 10 minutes. Turn off the heat and use a slotted spoon to transfer chard mixture to a large bowl. Stir in tomatoes, egg and matzo pieces, mixing well. You will have at least 5 cups cooked filling.
  • Heat oven to 375 degrees. Lay the meat flat on a clean work surface, season the top with salt and pepper and spread a thin layer of the filling (about half) evenly over the surface of the meat, leaving a 1-inch border. Reserve and refrigerate the remaining stuffing. Tightly roll the meat and secure it with kitchen twine, making a knot every 1 1/2 inches and tucking the meat in to enclose the ends. Season the outside of the roll with salt and pepper.
  • Add the remaining olive oil to the skillet, turn the heat to medium-high and brown the stuffed veal on all sides. Transfer to a large roasting pan with a lid. (If your skillet isn't large enough, brown veal directly in the roasting pan, laid over 2 burners of your stovetop.) To the pan where you browned the meat, add wine and simmer for about a minute, scraping up any browned bits from the bottom of the pan. Spoon liquid over the meat. Scatter the carrots, large onion pieces and whole garlic cloves around the veal, place the bones, and pour in about 8 cups of water or enough to come halfway up the meat.
  • Reduce oven to 325 degrees and cook, covered, 2 1/2 hours, basting every 20 minutes or so, until veal is cooked through and tender, 165 degrees on a meat thermometer.
  • Remove the meat from the pan, set aside to cool, then refrigerate overnight. Strain the sauce, reserving the carrots and discarding the bones and the onions. Refrigerate sauce and carrots.
  • The next day (or when ready to serve), remove and discard the fat from the sauce and simmer sauce in a small pot until reduced by 1/3. Season with salt and pepper. Using a long sharp knife, slice the veal into 1-inch portions. (Pull out kitchen twine as necessary). Carefully transfer slices to a large ovenproof serving dish or roasting pan, scatter the reserved stuffing around the veal and pour the braising liquid and carrots over the top. (You can refrigerate the whole dish at this point, to be reheated just before serving, or proceed to reheat the meat now.)
  • Just before serving, reheat in a 350-degree oven, covered with foil, about 20 minutes or until heated through. Serve in individual portions or on a platter, with a little chard stuffing and carrots on top of each slice for color, and drizzled with some of the braising liquid.

1 lb veal scallops, pounded thin
1/3 cup flour
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup milk
2 tablespoons olive oil
2 tablespoons butter
2 tomatoes, chopped
4 green onions, chopped
2 garlic cloves, minced
2 tablespoons white wine
1/2 cup whipping cream
1/8 cup parmesan cheese (garnish) (optional)

Steps:

  • Dredge the veal in the flour, salt and pepper mixture.
  • Dip in milk, then again in flour, set aside meat.
  • Heat 1 tbsp of oil and 1 tbsp butter in large pan.
  • Add the veal and cook until light brown on both sides.
  • Remove veal and keep warm.
  • Add the remaining oil and butter, the tomatoes, onion, garlic and wine to pan.
  • Cook over moderate heat 5 minutes.
  • Add the cream and cook over high until bubbly.
  • Add veal to reheat.
  • Serve with hot fettuccine and garnish with parmesan cheese.

1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
3 garlic cloves (minced)

1 cup chicken broth
1 large onion, thinly sliced
1 large red pepper, thinly sliced

Steps:

  • Combine flour with salt and pepper.
  • Coat veal cubes with flour.
  • Saute the veal cubes in olive oil in dutch oven until lightly browned.
  • Add additional oil if pot appears too dry.
  • Add minced garlic and saute a few minutes to release the flavor of the garlic.
  • Remove veal and garlic from pot.
  • Add wine to pot, scraping up browned bits.
  • Bring to boil and cook for a few minutes to reduce the wine by half.
  • Add diced tomatoes and chicken broth to the pot.
  • Bring to boil, while stirring.
  • Return veal to pot, cover and simmer approx 1 hr or until veal is tender.
  • Add peppers and onions, cover and simmer approx 30 minutes.
  • Add mushrooms (if desired).
  • Stir until heated.
  • Serve in bowls wih crusty bread for dipping into the sauce.
  • Entree is also excellent served over rice, pasta, or a side of mashed potatoes.

1 (8 ounce) package cannelloni pasta
8 ounces ground veal
2 carrots, chopped
½ stalk celery, chopped
½ yellow onion, chopped
10 ounces spinach, rinsed and chopped
1 ¼ teaspoons salt
1 ¼ teaspoons ground black pepper
2 tablespoons olive oil
1 cup dry white wine
1 cup heavy cream
1 cup roma (plum) tomatoes, diced
½ cup grated Parmesan cheese
2 teaspoons Italian seasoning
2 tablespoons chopped fresh basil
1 (16 ounce) can Italian-style diced tomatoes
2 tablespoons extra virgin olive oil
2 cloves garlic, minced
1 onion, chopped
1 teaspoon salt
1 teaspoon ground black pepper
4 leaves fresh basil, chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain, separate shells, and set aside.
  • Preheat oven to 500 degrees F (260 degrees C). In a 9 x 13 baking dish, combine veal, carrots, celery, chopped half onion and spinach. Stir well. Stir in 1 1/4 teaspoon salt, 1 1/4 teaspoon pepper, 2 tablespoons olive oil and white wine. Place in oven and roast until veal is brown and vegetables are soft, 30 to 40 minutes. Stir frequently. If meat begins to smoke, reduce heat to 400 degrees (200 degrees C).
  • Let meat mixture cool 15 minutes, then process in food processor until finely chopped. Return to pan and stir in cream, Roma tomatoes, Parmesan, Italian seasoning and 2 tablespoons chopped fresh basil. Bake 20 minutes more. Remove from oven and let cool.
  • While meat mixture is cooling enough to handle, make tomato sauce. Puree canned tomatoes with their juice in food processor until smooth. In large skillet over medium heat, heat 2 tablespoons virgin olive oil. Saute garlic and chopped onion until soft. Stir in pureed tomato, 1 teaspoon salt and 1 teaspoon pepper. Cook 5 to 10 minutes, or until no longer watery. Add four chopped basil leaves and cook 1 minute more.
  • Reduce oven temperature to 350 degrees F (175 degrees C). Stuff pasta shells with cooled meat mixture, 2 to 3 tablespoons per shell. Place shells in clean 9 x 13 baking dish. Pour tomato sauce over shells and bake 20 minutes, or until sauce is bubbly.

1 onion, minced
10 ounces ground veal or turkey

3 tablespoons minced fresh parsley
1/4 cup minced drained sun-dried tomatoes in oil
1 pound part-skim ricotta
1/3 cup freshly grated Parmesan
3 cups store-bought marinara sauce

Steps:

  • Preheat the oven to 350 degrees F. In a large pot of boiling, salted water, cook the manicotti tubes according to package directions. Drain, rinse in cold water, and pat dry. In a nonstick skillet set over moderate heat, warm the oil until hot. Add the onion and cook it, stirring occasionally, for 5 minutes. Add the meat, lemon pepper, oregano, salt, and pepper, and cook, stirring, until the meat is no longer pink. Transfer the meat to a bowl, add the parsley, tomatoes, ricotta, and half the Parmesan, and fill the pasta tubes with the meat mixture. 1 3 1/2- to 3 3/4-pound piece boneless veal breast, butterflied, pounded to 15 x 13-inch rectangle
2 tablespoons olive oil
6 cups coarsely chopped onions
3 cups coarsely chopped carrots
2 cups coarsely chopped celery
1 750-ml bottle dry red wine
3 1/2 cups (about) chicken stock or canned low-salt chicken broth
1 14 1/2- to 16-ounce can diced tomatoes in juice

Steps:

  • Mix first 5 ingredients, 1 tablespoon marjoram, 1 tablespoon garlic, 1 1/2 teaspoons salt, 1/2 teaspoon pepper and nutmeg in large bowl to blend.
  • Preheat oven to 400°F. Place veal breast, pounded side up, on work surface. Sprinkle lightly with salt and pepper. Form ground veal mixture into 8-inch-long, 3 1/2-inch-wide loaf. Place loaf atop breast about 3 inches from 1 long side. Fold short sides of breast over stuffing. Fold long side nearest stuffing over. Roll up, enclosing stuffing. Tie in several places with twine. Fasten each short end with toothpicks. (Can be made 8 hours ahead. Wrap in plastic; chill.)
  • Sprinkle veal with salt and pepper. Heat 1 tablespoon oil in heavy large skillet over high heat. Add veal; sauté until brown on all sides, about 10 minutes. Transfer to large roasting pan. Add 1 tablespoon oil, onions, carrots and celery to skillet; sauté until golden, about 15 minutes. Transfer vegetables to pan with veal. Add wine, 2 cups stock, tomatoes with juices, 2 tablespoons marjoram and 1 1/2 tablespoons garlic to roasting pan.
  • Roast veal until very tender, turning and basting with pan juices every 30 minutes and adding stock as needed to keep juices halfway up sides of veal, about 2 hours 30 minutes. Remove from oven. Transfer to platter; let stand 30 minutes. Remove twine. Slice veal. Transfer pan juices and vegetables to saucepan; rewarm. Season with salt and pepper. Spoon juices and vegetables around veal.
