3 tablespoons extra-virgin olive oil
1 shallot, chopped
2 (14 ounce) cans quartered artichoke hearts in water, drained
Salt and pepper
1/4 cup parsley leaves, chopped
2 tablespoons capers, drained
16 sea scallops
1/2 cup dry vermouth

Steps:

  • Heat a large nonstick skillet over medium high heat. Add 2 turns of the pan of olive oil, about 2 tablespoons and the chopped shallots to the pan. Cook shallots in oil a minute or so, add artichoke hearts and toss to heat through. Season artichokes with salt and pepper and combine with parsley and capers. Transfer artichokes to a serving dish.
  • Wipe out pan and return to the heat, raising heat a bit. Season drained and trimmed scallops with salt and pepper. Add 1 turn of olive oil to the very hot pan and immediately place the scallops in the pan. Sear the scallops in a single layer, causing them to caramelize, 2 minutes on each side. Add vermouth to the pan and cook out the alcohol, 1 to 2 minutes. Arrange the scallops in vermouth over top of the artichokes and serve.

1 pound veal scallop
kosher salt
1/3 cup flour
2 tablespoons butter
1 cup chicken broth
1/4 cup dry vermouth
2 teaspoons Worcestershire sauce
1/2 teaspoon marjoram
1/4 teaspoon garlic powder
1 10-ounce package frozen artichoke hearts
8 lemons slices
4 ounces uncooked noodles

Steps:

  • Sprinkle veal with lightly with salt, then coat with flour and quicly down both sides in hot butter over medium heat. Remove and keep warm. Boil water and cook noodles. Add broth, vermouth, Worceshire sauce, marjoram, garlic powder and bay leaf to skillet and bring to a boil, stirring. Add veal, artichoke hearts and 4 lemon slices. Simmer 10-15 minutes or until liquid thickens. Discard bay leaf and lemon. Arrange on noodles. Pour on sauce. Garnish with remaining lemon slices.

8 veal cutlets, pounded into scaloppini
Flour for dredging
Salt and pepper to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
Fresh lemon juice to taste
Minced fresh chervil to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
1/2 cup minced shallots
1/2 pound wild mushrooms, such as chanterelles, shiitake, oyster or a combination
1 teaspoon minced fresh thyme
Salt and pepper to taste
1 large clove garlic, minced
1/2 cup dry white wine
1 cup veal demiglace
1 cup heavy cream

Steps:

  • Dredge scallops in flour, shaking off excess, and season with salt and pepper. In large skillet set over moderate flame, heat olive oil and butter until hot. Add scallops and saute for 1 minute on each side. Transfer to sauce for just a minute and season mixture with fresh lemon juice and chervil.
  • Make the sauce: In a saute pan set over moderately high flame, heat the oil and butter until hot. Add the shallots and cook, stirring, 1 minute. Add the mushrooms, thyme and salt and pepper and cook, stirring occasionally, for 3 to 5 minutes, or until mushrooms are soft. Add the garlic and cook, stirring, 1 minute. Add the wine and reduce by half. Add the demiglace and simmer 5 minutes. Add the cream and reduce until lightly thickened. Correct seasoning. Cover with a round of buttered waxed paper and keep hot.

1 pound jumbo sea scallops
2 tablespoon butter
1/4 cup vermouth
1/2 cup cream
1/8 teaspoon salt and pepper

Steps:

  • Clean scallops (see instructions above this recipe).
  • Heat butter in large skillet on high heat.
  • When melted, add well dried scallops into butter. Sear on high for 2 to 2.5 minutes, then flip.
  • Sear for another 2 minutes until a golden crust is formed.
  • Remove to a plate, turn skillet to low.
  • Add vermouth to skillet, and simmer for 1-2 minutes to reduce the vermouth, stirring. Scrape up any butter or scallop remains in the pan.
  • Add cream, salt and pepper. Stir, simmering for another 1-2 minutes to combine.
  • Serve sauce over scallops.

Veal scallopini with lemon and capers is a remarkably quick dinner to pull together, with plenty of flavor to satisfy.

1 pound veal scallopini or cutlets
1/4 teaspoon fine sea salt, plus more to taste
2 teaspoons vegetable oil
2 tablespoons capers , drained
1/4 cup white wine
2 tablespoons lemon juice, freshly squeezed
3 tablespoons butter, cut into 4 to 8 pieces
4 cups arugula leaves, loosely packed for serving

Steps:

  • Gather the ingredients.
  • Pat the veal dry with paper towels and sprinkle it lightly with the salt.
  • Heat the oil in a large frying pan (preferably large enough to hold all the veal in a single layer) over medium-high heat.
  • Put as much of the veal as fits in a single layer in the pan (it is important you don't crowd the pan) and cook until it has started to brown and releases from the surface of the pan-about 2 minutes.
  • Turn the cutlets and cook them until they're cooked through and browned on the second side-about 2 more minutes. Transfer the veal to a plate. Repeat with any remaining veal, as necessary.
  • Return the frying pan to the heat. Add the capers to the pan and let them sizzle for about 30 seconds.
  • Add the white wine and use a spatula to help scrape up any brown bits on the bottom of the pan.
  • Whisk together and cook until the wine is reduced by at least half, about 2 minutes.
  • Add the lemon juice and stir to combine.
  • Swirl in the pieces of butter, whisking if you like, to make a sauce. Taste and add salt if needed.
  • Return all of the veal to the pan to coat it in the sauce.
  • Divide the arugula among 4 plates. Drizzle a bit of the sauce over each serving of arugula before placing the veal on top of the salad. Drizzle any remaining sauce evenly over the veal.
  • Serve immediately.
