Poached Dried Apricots and Currants with Zabaglione image

Serve this Italian-style dessert with our Whole-Wheat Lemon Biscotti.

Number Of Ingredients 13

1 1/2 cups water
1 cup dry white wine
1/2 cup sugar
1/2 cup honey
1 1/2 navel oranges, thinly sliced
1/2 vanilla bean, seeds scraped, pod reserved for another use
2 green cardamom pods, smashed
1 teaspoon grated peeled fresh ginger
3/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
40 dried apricots (1 1/2 cups)
1 cup currants
Zabaglione

Steps:

  • Bring water, wine, sugar, honey, oranges, vanilla seeds, and spices to a simmer in a medium saucepan over medium-low heat. Cook, stirring occasionally, until sugar dissolves, about 8 minutes.
  • Add apricots and currants. Cover, and cook until apricots have softened, about 30 minutes. Strain through a fine sieve, reserving liquid and transferring fruit to a bowl. Simmer liquid until reduced to 1 cup, about 6 minutes. Strain syrup through fine sieve. Pour syrup over fruit. Refrigerate for at least 4 hours or overnight. Serve with zabaglione.

1/2 cup sugar
1 tablespoon finely grated orange zest
1/2 vanilla bean, split and scraped, pod reserved for another use
8 large egg yolks
1/2 cup Vin Santo or other sweet white dessert wine
Pinch of sea salt

Steps:

  • Rub together sugar, zest, and vanilla seeds in a medium heatproof bowl using your fingers. Add yolks. Whisk until pale and creamy. Whisk in Vin Santo and salt. Set bowl over a pan of simmering water, and whisk until mixture thickens and doubles in volume, about 10 minutes. Serve warm.

Pears
2 tablespoons (1/4 stick) unsalted butter
2 1/4 pounds firm but ripe pears (about 6), peeled, cored, cut into 1/2-inch pieces
1/4 cup (packed) golden brown sugar
2 tablespoons sugar
1/4 cup Pinot Grigio or other dry white wine
1/2 vanilla bean, split lengthwise in half
Zabaglione
8 large egg yolks
1/2 cup sugar
6 tablespoons Tuaca liqueur
2 tablespoons plus 1 cup chilled whipping cream
1/4 teaspoon ground cinnamon
Powdered sugar

Steps:

  • For pears:
  • Melt butter in heavy large skillet over high heat. Add pears; sauté 1 minute. Add both sugars and wine and stir until sugar dissolves. Scrape out seeds from vanilla bean and add to skillet; add bean. Boil until pears are tender and juices in skillet form thick syrup, about 5 minutes. Remove from heat. Cool. Discard vanilla bean. (Can be made 1 day ahead. Cover; chill.)
  • For zabaglione:
  • Whisk yolks, sugar, Tuaca, and 2 tablespoons cream in large metal bowl to blend well. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water). Using electric mixer, beat yolk mixture constantly until mixture thickens and instant-read thermometer inserted into mixture registers 140°F for 3 minutes, about 7 minutes total. Remove bowl from over water; place bowl in larger bowl of ice water. Whisk occasionally until mixture is cool, about 3 minutes.
  • Using electric mixer, beat remaining 1 cup cream and cinnamon in medium bowl until peaks form. Fold 1/3 of whipped cream into yolk mixture, then fold in remaining cream in 2 additions. Chill until cold. (Can be prepared 1 day ahead. Cover and keep refrigerated.)
  • Divide pears among 6 dessert glasses. Spoon zabaglione over each. Dust with powdered sugar and serve.

2 cups water
1 1/2 cups sugar
1/2 vanilla bean, split and scraped, pod reserved for another use

Steps:

  • Mix all the ingredients in a medium saucepan over medium heat. Cover, and simmer, stirring occasionally, until apricots are soft but not mushy, about 22 minutes.

1 cup water
1/3 cup dry white wine
1/4 cup white sugar
1 small vanilla beans or 1/2 large vanilla bean
1 lb fresh ripe but not mushy apricot, halved and pitted

Steps:

  • In a medium saucepan, stir sugar into water and wine.
  • Slit vanilla bean open along the side and spread it apart exposing the tiny dot-like seeds.
  • Cut the vanilla bean crosswise into several pieces and place them in the pan.
  • Bring mixture to a boil, reduce heat to simmer, cover and cook 5 minutes.
  • Add apricots; shake them to settle them into liquid.
  • Heat just until mixture begins to boil.
  • Apricots should be tender but not falling apart.
  • Cook slightly longer if fruit is still firm.
  • Using a slotted spoon, gently remove apricots, leaving liquid in pan.
  • With cover off, reduce poaching liquid to about 1/2 cup.
  • Remove and discard vanilla bean pieces.
  • Pour concentrated syrup over apricots.
  • Cool; chill if time permits before serving.

3 cups water
1/4 cup plus 1 tablespoon agave nectar (more if desired)
4 strips organic orange peel, each about 3 inches long
6 medium-ripe apricots (about 1 pound), pitted and cut into sixths or quarters

Steps:

  • Bring water, agave nectar, and orange peel to a brisk simmer in a medium saucepan over high heat. Add apricots, pushing down to cover with liquid; reduce to a gentle simmer. Cook until apricots are just tender, 2 to 5 minutes, depending on ripeness.
  • Transfer apricots gently with a slotted spoon to a shallow bowl or dish. Pour just enough liquid over them to cover and return saucepan with remaining liquid to stove. Simmer over medium-high until reduced by half and lightly syrupy, about 10 minutes.
  • Strain syrup into dish with apricots. Refrigerate at least 1 hour and serve.

  • Put the sugar into a medium pan with 150ml water. Heat gently until the sugar dissolves, then add the apricots and simmer for 15 mins until soft. Take off the heat, splash in the rosewater and leave to cool. Spoon into glasses to serve, topped with a few dollops of the yogurt and a scattering of nuts.
