REAL WELSH RAREBIT



Real Welsh Rarebit image

A classic version of this dish was shared with me years ago. This is is my adaptation to more local ingredients. If you don't like beer, you can replace it with milk and it will still taste great. Serve over toasted bread or English muffins.

¼ cup butter
¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon dry mustard
¼ teaspoon Worcestershire sauce
2 drops hot pepper sauce (such as Tabasco®)
1 cup whole milk
½ cup beer
½ pound Cheddar cheese, shredded

Steps:

  • Melt the butter in a saucepan over low heat; blend in the flour, salt, pepper, mustard, Worcestershire sauce, and hot pepper sauce; continue cooking and stirring until the mixture is smooth and bubbly, about 5 minutes. Remove from heat; gradually stir in the milk; return to heat and stir continually until the mixture comes to a boil. Slowly pour in the beer; cook 1 minute more while still stirring. Melt the Cheddar cheese into the mixture in small portions until completely incorporated. Remove from heat.

A twist on a classic Welsh Rarebit.

Number Of Ingredients 7

1 oz butter (1/4 stick)
3 tbsp milk
8 oz Castello Herbs & Spice Havarti cheese, grated
1 tsp white vinegar
1 tsp prepared English mustard (or substitute your favorite mustard, or omit)
freshly grated black pepper, to taste
2 tbsp chopped gherkin or cornichons

Steps:

  • Melt the butter in a medium saucepan over low heat, then add the milk and grated cheese, stirring until the cheese melts and becomes smooth. Add the vinegar, mustard, black pepper and gherkins; stir to combine and remove from heat.
  • Allow to cool slightly, stirring occasionally. Preheat the broiler (grill) then place the four pieces of toast on a baking sheet and divide the cheese mixture evenly between them.
  • Place under the broiler, until bubbly and hot; place on plates and serve with gherkins/cornichons and salad, if desired.

A quick, easy and very tasty Irish recipe though something more usually associated with Wales. This Irish Guinness Rarebit is a take on a Welsh Rarebit with a good splash of the 'black stuff' aka Guinness. This recipe is from Elaine Lemm, a renowned food and drink writer in the UK. Enjoy!

1/4 lb Mature cheddar cheese
1/2 teaspoon English mustard (bright yellow, very strong)
1/2 egg yolk
1 teaspoon Worcestershire sauce
2 tablespoons Guinness stout
salt and pepper
4 slices sourdough bread or 4 slices white baguette

Steps:

  • Mix together the cheese, mustard, 1/2 egg yolk, Worcestershire sauce, Guinness and salt and pepper.
  • Under the broiler, toast the slices of bread on one side.
  • Sprinkle the cheese mixture between each of the toasts on the un-toasted side.
  • Place under broiler for 2 - 3 minutes or until the cheese is melting, watching carefully. Serve immediately.

Irish Rarebit on Soda Bread With Cheddar Cheese and Ale image

An easy and very tasty rarebit dish made with Irish cheddar cheese and the ubiquitous Irish ale, Guinness. The Emerald Isle produces some great dairy products and none is better than their butter and Cheddar style cheese. This recipe has Ireland written right the way through it, using soda bread as the base for this cheesy snack, as well as the aforementioned cheese and ale. I have also made these to eat with a bowl of hearty soup or Irish stew, perfect for a cold or damp winter's day. Amazing high tea time food as well; served with salad, chutneys and pickles for a cheap and easy fire-side supper.

Number Of Ingredients 10

2 tablespoons butter
2 tablespoons plain flour
1 teaspoon Dijon mustard or 1 teaspoon English mustard
1 teaspoon honey
1/2 cup milk or 1/2 cup buttermilk
1/2 cup irish stout beer, such as Guinness
2 finely chopped spring onions (green onions)
1 cup irish cheddar cheese, grated (or similar Cheddar cheese)
salt and pepper
4 slices soda bread

Steps:

  • Melt the butter in a heavy pan and stir in flour to make a roux. Cook on a low heat for a further minute without allowing it to brown.
  • Remove pan from heat and gradually beat the milk or buttermilk into the roux. Return to heat and stir until the mixture thickens. Stir in mustard and honey, spring onions and finally the stout/Guinness. Cook this mixture fairly rapidly for 2-3 minutes then add the grated cheese and stir over very low heat only until all the cheese has melted.
  • Spread thickly on four slices of soda bread and place under the grill until golden brown and bubbling. Serve hot with soups, stews, salad, chutneys or pickles.
  • (Serves 2 as a light meal or snack with salad and 4 as an accompaniment to soup or stew.).
