- In a small heavy saucepan, mix cream, egg yolks and sugar. Cook and stir over low heat until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°. Do not allow to boil., Transfer to a bowl; stir in vanilla. Refrigerate, covered, until cold. Serve over fresh berries.

- Combine Champagne, 3 tablespoons agave, and rind in a large bowl. Add berries and toss gently to combine. Cover and chill 30 minutes. Place cream in a medium bowl. Beat with a mixer at high speed until stiff peaks form. Beat in remaining 1 tablespoon agave. Place 3/4 cup berry mixture in each of 8 bowls. Top each serving with 2 tablespoons whipped cream. Divide crushed cookies among servings.

- For the cream: In a saucepan, bring some water to a boil, then reduce the heat to a simmer. Have a mixing bowl ready that will fit over the top of the pan but not sink all the way in.
- Put the egg yolks in the mixing bowl off heat. Add the granulated sugar and whisk until the yolks start to turn pale. Place the mixing bowl over the saucepan with the simmering water. Scrape the seeds from the vanilla bean and add to the egg mixture. Slowly add the rum and whisk to combine. Cook over the simmering water until thick, using a rubber spatula to scrape the bowl, about 5 minutes. Cover with plastic wrap and refrigerate until cool.
- For the orange liqueur raspberries: Add the raspberries, confectioners' sugar, orange liqueur and orange zest to a bowl and mix together. Let macerate for 1 hour.
- To assemble: Pile the fruit into 6 individual martini glasses and top with the cream. Crush a cookie over each one and garnish with mint.

- In a small bowl, stir together the whipped topping and Champagne flavor. Layer the berries and champagne cream in champagne flutes. Serve immediately.
BERRIES IN CHAMPAGNE JELLY
My sister gave me this recipe a few years back when I was looking for an elegant fruit dish to serve guests. I sometimes serve this party-pretty fruit treat at brunch-just before the main dish. - In a large saucepan, sprinkle gelatin over cold water; let stand 2 minutes. Add sugar. Cook and stir over medium-low heat until gelatin and sugar are dissolved (do not boil). Remove from heat. Slowly stir in champagne and grape juice. , Transfer to a 13x9-in. dish coated with cooking spray. Refrigerate, covered, for 8 hours or overnight. Using a potato masher, gently break up champagne jelly. Layer jelly and berries in 12 dessert dishes. Refrigerate, covered, for at least 2 hours before serving.

BERRIES IN CHAMPAGNE JELLY
This is very fancy-looking served in wine glasses. Champagne-based gelatin dessert with strawberries and blueberries. Posted for ZWT 2006. Time does not include allowing the gelatin to refrigerate until set.

- In a bowl, pour 2 cups champagne or sparkling white wine, and allow the bubbles to subside.
- Sprinkle the gelatine over the top in an even layer. Leave until the gelatine is spongy - do not stir.
- Place the remaining champagne in a large saucepan. Add the sugar, lemon and orange rinds, and heat gently, stirring until all sugar is dissolved.
- Remove the pan from the heat. Add the gelatine mixture and stir until thoroughly dissolved. Leave the jelly to cool completely, then remove the lemon and orange rind.
- Divide the strawberries and blueberries among eight 1/2 cup wine glasses or clear bowls and pour the jelly over them.
- Chill until the jelly has fully set. Remove from the fridge 15 minutes before serving.
SUMMER BERRIES WITH SWEET WINE CREAM

- Hull or de-stalk the fruits as necessary, then tip into a serving bowl. Drizzle with cassis, if using, and mix together gently.
- Measure the sweet wine and sugar into a bowl. Add the cream and whisk with a hand electric whisk until it just holds its shape and flops from the spoon. Spoon into a bowl and serve with the berries and madeleines.

- Set up a double boiler using a 4 quart sauce pan and a medium size stainless steel bowl. The bowl should fit on top and partially into the pan. Fill sauce pan with about 3 inches of water. Be sure the the water does not touch the bottom of the bowl you are using. Bring to a simmer.
- Off of the heat, whisk the egg yolks and sugar in the bowl until smooth, thick and pale. Place the bowl over the simmering water and wedge a small soft potholder between the pan edge and bowl for stabilization. Whisking quickly, in a steady stream add the wine. Continue whisking until the sauce becomes light and foamy and all of the wine is incorporated.
- Place berries or mixed fruit in wine glasses, brandy snifters or glass bowls. Pour sauce over the top. Garnish with mint for color.
