1 tablespoon gelatin
3 tablespoons water
1 ⅓ cups milk
¼ cup sugar
1 teaspoon vanilla extract
¾ cup heavy cream
1 mango, diced
1 tablespoon sugar
1 tablespoon lemon juice
¼ cup orange juice
mango, diced, to serve
raspberry, to serve

Steps:

  • In a bowl, combine the water and gelatin. When gelatin thickens, microwave for 10 seconds.
  • Combine sugar, milk, and vanilla extract in a small pan over low heat and stir. Once it begins to simmer, add the gelatin and whisk to combine.
  • Place a bowl into a bowl filled with ice. Strain the milk mixture through a sieve into the empty bowl.
  • Add the heavy cream and whisk until the mixture begins to thicken.
  • Transfer the mixture to four cups, cover with plastic wrap, and chill in the refrigerator for 2 hours.
  • Combine diced mango, sugar, lemon juice, and orange juice in a pan and stir over medium heat until boiling. Using an immersion blender, blend until smooth.
  • Turn down the heat to low, and bring to a simmer. Chill for one hour.
  • Pour the mango purée over the panna cotta. Top with diced mango and raspberries.
  • Enjoy!

1/4 cup cold water
2 1/2 teaspoons unflavored gelatin (from 2 packages)
3 cups whipping cream
1 cup sugar
1 1/2 teaspoons vanilla extract
4 1/2-pint baskets assorted fresh berries (such as raspberries, blueberries, blackberries, and strawberries)
1/3 cup sweet white wine (such as Moscato)

Steps:

  • Pour 1/4 cup cold water into small custard cup. Sprinkle gelatin over. Let stand until gelatin softens, about 15 minutes. Bring 1 inch of water in small skillet to boil. Place cup with gelatin in water. Stir until gelatin dissolves, about 2 minutes. Remove from heat.
  • Combine cream and 2/3 cup sugar in heavy medium saucepan. Stir over medium heat just until sugar dissolves. Remove from heat. Mix in vanilla and gelatin. Divide pudding mixture among 8 wineglasses. Cover and chill until set, at least 6 hours and up to 1 day.
  • Combine berries and remaining 1/3 cup sugar in medium bowl. Crush berries slightly with back of spoon. Mix in wine. Let compote stand until berry juices and sugar form syrup, stirring often, at least 1 hour and up to 2 hours.
  • Spoon compote over puddings.

1/2 vanilla bean (preferably Tahitian), split lengthwise
1 1/4 cups whole milk
1 cup heavy cream
6 tablespoons sugar, divided
2 teaspoon agar flakes (preferably Eden brand)
2 (3/4-pound) mangoes
1/2 cup water
3 tablespoons fresh lemon juice
2 tablespoons fresh lime juice
4 (5- to 6-ounces) glasses or ramekins

Steps:

  • Using a paring knife, scrape vanilla seeds from pod into a 1 1/2- to 2-quarts heavy saucepan, then add pod, milk, cream, and 3 tablespoons sugar. Bring to a boil. Whisk in agar and simmer, whisking, until completely dissolved, about 5 minutes. Discard pod. Cool panna cotta slightly. Pour into glasses and chill until set, at least 2 hours.
  • Meanwhile, peel mangoes and thinly slice.
  • Bring water, juices, and remaining 3 tablespoon sugar to a simmer in cleaned saucepan, whisking until sugar has dissolved. Pour over mangoes in a bowl and macerate until ready to use. Serve panna cotta with mangoes.

3 tablespoons water
1 tablespoon powdered gelatin
4 cups heavy cream
1/2 vanilla bean, split lengthwise
1/2 cup sugar
Mixed berries
Satin chocolate sauce, recipe follows
2 ounces unsweetened chocolate
4 1/2 ounces semisweet chocolate
1/4 cup light corn syrup
1/3 cup hot water

Steps:

  • In a small bowl, combine the water and gelatin and let soak about 10 minutes (do not stir). Meanwhile, in a medium saucepan, heat the cream, vanilla bean and sugar to a simmer over medium heat, stirring occasionally to dissolve the sugar. As soon as it simmers, turn off the heat and add the gelatin mixture, stirring to dissolve the gelatin. If the gelatin doesn't completely dissolve in 3 minutes, return the mixture to the heat and warm gently until dissolved. Pour the mixture into 6 to 8 ramekins or dessert cups. Chill, uncovered, 2 hours.
  • Satin Chocolate Sauce: In the top half of a double boiler, combine the 2 chocolates over simmering water. Stir constantly until melted, then whisk in the syrup and water without removing the double boiler from the heat. Whisk until smooth and shiny. The sauce can be made up to 24 hours in advance and refrigerated. To rewarm, stir over low heat or heat in a microwave.
  • To serve panna cotta, dip the cups in hot water for 10 seconds, then turn the panna cottas out onto dessert plates (or, serve in the cups). Surround each panna cotta with berries and satin chocolate sauce.

2 ½ sheets gelatine
150ml milk
400ml double cream
60g caster sugar
1 vanilla pod, split lengthways
fresh strawberries, to serve
strawberry compote, to serve

Steps:

  • Add the sheets of gelatine to a bowl of cold water and soak for 5 mins.
  • Pour the milk and cream into a saucepan with the sugar and vanilla seeds (to scrape the seeds out of the pod, use the back of a knife). Stir to combine and bring to a simmer, then remove from the heat. Take the gelatine out of the cold water and squeeze out the excess, then add to the milk mixture. Stir until completely dissolved. Tip into four ramekins and place in the fridge to set for at least a couple of hours.
  • To serve, turn each ramekin upside-down onto a serving plate. If the panna cotta won't drop out, carefully dip the ramekin in a bowl of warm water to loosen it. Serve with a drizzle of strawberry compote and sliced fresh strawberries.

Using a paring knife, split each vanilla bean open lengthwise and scrap out the seeds with the flat edge of the knife. Add the seeds and the split vanilla beans into the milk liquids. Heat the milk and cream over medium heat for 5 to 6 minutes, until the liquids come up to a low simmer; whisk occasionally.
  • While the mixture is heating, prepare the gelatin. Pour the 2 tablespoons (30 ml) of water into a small ramekin and stir in the gelatin. Microwave the gelatin in 10 second intervals for about 30 seconds, until it’s completely dissolved. Immediately, pour the hot gelatin into the liquids and stir. Do not allow the gelatin to cool, it will form clumps.
  • Once the liquids come up to simmer, remove the pan from the heat. Pour the prepared panna cotta liquids into small glasses, parfait cups or brandy sipping glasses.   • When the panna cotta has set up slightly, prepare the mango gelee. Do not add the gelee too early, otherwise it will sink to the bottom. Peel and slice the mangos, then place into a food processor along with the sugar. Pulse for a few minutes until the mango is smooth and finely pureed. Add the lemon juice and ½ cup water at first. Pulse again and add more water if needed; the consistency shouldn’t be too thick.
