Steps:
- For the base ice cream: Stir the milk, sugar and vanilla together in a medium bowl. Pour 1/2 cup of the mixture into a sandwich-size resealable plastic bag. Make vanilla ice cream or add in your desired flavors to make mint chocolate chip, chocolate or strawberry ice cream. Tightly seal the bag. Put that bag into another sandwich-size resealable plastic bag and tightly seal. Repeat with the remaining batter and desired flavors.
- Place the ice and the salt into a 4-quart food storage container with a lid. Put the filled bags into the container and secure the lid. Shake the container until the mixture is frozen and resembles ice cream, about 5 minutes. Remove the bags with the ice cream in it from the outer bag and snip a large piece off one corner of each bag. Pipe the ice cream into small bowls.

Steps:
- Place the milk, sugar and vanilla into the doubled-up medium zip-seal bags. Close and secure with sticky tape if the seal isn't strong. Tip the ice and salt into the large bag, then place the smaller bags inside the larger one, and seal well.
- You will need to keep the bags moving for 10-15 mins to freeze the milk. Gently throw the bag from hand to hand or take turns shaking it - it's a good idea to wear gloves to keep your hands warm! Remove the ice-cream bag, open and scoop into bowls. Sprinkle with hundreds & thousands.

VANILLA ICE CREAM
Steps:
- Place the half-and-half and the heavy cream into a medium saucepan, over medium heat. Bring the mixture just to a simmer, stirring occasionally, and remove from the heat.
- In a medium mixing bowl whisk the egg yolks until they lighten in color. Gradually add the sugar and whisk to combine. Temper the cream mixture into the eggs and sugar by gradually adding small amounts, until about a third of the cream mixture has been added. Pour in the remainder and return the entire mixture to the saucepan and place over low heat. Continue to cook, stirring frequently, until the mixture thickens slightly and coats the back of a spoon and reaches 170 to 175 degrees F. Pour the mixture into a container and allow to sit at room temperature for 30 minutes. Stir in the vanilla extract. Place the mixture into the refrigerator and once it is cool enough not to form condensation on the lid, cover and store for 4 to 8 hours or until the temperature reaches 40 degrees F or below.
- Pour into an ice cream maker and process according to the manufacturer's directions. This should take approximately 25 to 35 minutes. Serve as is for soft serve or freeze for another 3 to 4 hours to allow the ice cream to harden.
HOMEMADE STRAWBERRY ICE CREAM
My husband used to think he didn't like strawberry ice cream, and come to find out it's because he'd never had "real" strawberry ice cream before ... only the bright pink stuff out of a box. But once I made him the real deal his mind was forever changed, and I promise you'll be "won over" by this simple recipe as well.

Steps:
- Combine the cream, milk and maple syrup in a large glass measuring cup (with a pour spout).
- Remove the stems/leaves from the strawberries and crush them. I used our mini-chopper to mash them up and it worked great. A simple potato masher might do the trick as well.
- If you have a Cuisinart ice cream maker like us just turn on the machine and pour in both the cream/syrup mixture and the crushed strawberries. After about 15 - 20 minutes the ice cream will look really "thick" and ready when it's done. If you are using a different machine be sure to follow manufacturer directions for making your ice cream.

- If you are not using an ice cream maker, place your ice cream freezer storage container in the freezer at least an hour to get it cold. If you are using an ice cream maker then you can skip this and use a bowl that has not been placed into the freezer.
- For both methods, in a large mixing bowl use a whisk attachment to mix together all of the ingredients on low. Mix this for a few minutes to make sure that all of the ingredients are well blended together. Using a blender will also work for this step.
- If you are not using an ice cream maker you can transfer the mixture to the frozen bowl and freeze. Every 30 minutes for the next 2 -2 1/2 hours take the mixture out of the freezer and beat for a couple of minutes. Then return the ice cream to the freezer. Continue this process until your ice cream has that desired consistency
- If you are using an ice cream maker follow the instructions provided with your ice cream maker. You can freeze this ice cream for up to eight hours (covered) before transferring it to the ice cream maker as well.

- Scrape out seeds from vanilla bean with a sharp paring knife. Add seeds and pods to a medium, heavy saucepan.
- Add the half-and-half, cream and sugar and bring to a simmer over moderate heat, stirring to dissolve the sugar. Cover and let steep off the heat for 30 minutes.
- In a large stainless-steel bowl, whisk the egg yolks. Very gradually whisk in 1/2 cup of the hot half-and-half, then gradually whisk in the rest. Pour the mixture into the saucepan and cook over very low heat, stirring constantly, until the custard thickens, about 10 minutes. The custard should be thick enough to coat the back of a spoon.
- Strain the custard into a large stainless-steel bowl set in an ice water bath and discard the vanilla pod. Stir occasionally until the custard is thoroughly chilled. Pour the custard in an ice cream maker, in batches, according to the manufacturer's instructions. Churn until the ice cream is set but not rock hard. Store the ice cream in airtight containers in the freezer for up to 3 days.

- Also the night before, in a blender or food processor, add coconut milk, maple syrup and vanilla extract. If using vanilla beans, lay them on a cutting board, cut in the middle lengthwise and scrape out the seeds with a paring knife. Add to the blender and process until well combined. Place mixture in a fridge to chill overnight. This is important step otherwise your ice cream won’t crystallize, especially if it is hot outside.
- The next day, pour ice cream mixture into frozen ice cream bowl, place lid on top and turn it on to start churning. Depending on your ice cream machine it may take 20-60 minutes to bring ice cream to a soft serve consistency. It won’t fully freeze.
- Transfer soft serve ice cream into any container with a lid and freeze for another hour or so. To serve, let thaw for 5-10 minutes.

- Pour the cream and almond milk into a saucepan. Add the vanilla seeds and the scraped pods and bring to a low boil. When you see the edges start to bubble remove from the heat and allow to cool for about 30 minutes. Stir regularly so it doesn’t form a skin. Remove the vanilla pods.
- Meanwhile, put the egg yolks in a mixing bowl. Add the erythritol and a tiny pinch of salt. Using an electric whisk, beat until pale in colour (about 2 minutes).
