No Bake Rhubarb Cheesecake comprises a ginger biscuit base, a creamy orange scented filling topped with roasted rhubarb batons.

300g (10oz) chocolate gingernut biscuits
125g (½ cup) butter
1.25ml (¼ tsp) salt
500g (1lb) rhubarb, washed and cut into 5cm (2in) batons
1 blood orange, zest and juice
1 vanilla pod
15ml (1 tbsp) pink peppercorns [optional]
150g (¾ cup) caster sugar
500g (2 cups) cream cheese
300ml (1¼ cup) double cream
50g (½ cup) icing sugar, sifted
3 gelatin leaves

Steps:

  • Crush the biscuits in a sealable plastic bag with a rolling pin until everything turns into crumbs.
  • Mix the butter and salt with the crumbs.
  • Spoon the mixture into the base of a 23cm (9in) springform cake tin and level with the back of a spoon.
  • Place in the fridge to set.
  • Preheat the oven to 200°C / fan 180°C / 390°F / gas mark 6.
  • Line a large baking tray with parchment paper.
  • Align the rhubarb in a single layer on top of the parchment paper.
  • Sprinkle evenly with caster sugar.
  • Sprinkle with the blood orange zest and juice.
  • [Optional] Place peppercorns in muslim and tie it up. Put in the orange juice.
  • Bake in the oven for 20 minutes, then leave to cool.
  • Drain the rhubarb juices into a small saucepan and place over a low heat. Place the gelatine leaves in the liquid to soften and stir until everything is dissolved.
  • Place the liquid and three quarters of the cooled rhubarb batons into a food mixer and process until smooth. Set aside the rhubarb puree and store the remaining rhubarb batons in the fridge.
  • Place the cream cheese in a stand mixer.
  • While it's running, slowly add the icing sugar.
  • Fold the rhubarb puree into the cream cheese mixture.
  • In a separate bowl, whisk double cream until soft peaks form.
  • Fold the double cream into the cream cheese mixture a bit at a time. Repeat until the double cream is finished.
  • Remove the cheesecake base from the fridge and tip the mixture into the springform tin. Gently drop the tin onto the kitchen counter a few times to let any bubbles out.
  • Place the cheesecake in the fridge to chill for at least 6 hours.
  • Before serving, decorate with the remaining rhubarb batons. Enjoy!

1/2 teaspoon ground cinnamon
3 tablespoons reduced-fat margarine, melted
FILLING:
2 packages (8 ounces each) reduced-fat cream cheese, softened
1 cup fat-free vanilla yogurt
3/4 cup sugar
1 cup egg substitute
1 teaspoon grated lemon zest
1/4 cup lemon juice
TOPPING:
3 cups diced fresh or frozen rhubarb
1 cup sugar
2 tablespoons plus 1/2 cup cold water, divided
1 tablespoon cornstarch
Red food coloring, optional

Steps:

  • In a small bowl, combine cracker crumbs and cinnamon; stir in margarine. Press onto the bottom of a 9-in. springform pan; set aside. , In a large bowl, beat the cream cheese, yogurt and sugar, until smooth. Gradually add egg substitute; beat on low speed just until combined. Stir in lemon zest and juice. Pour filling over crust. , Bake at 350° for 35-40 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Cover and refrigerate overnight. , In a large saucepan, combine the rhubarb, sugar and 2 tablespoons water. Bring to a boil. Reduce heat; simmer until rhubarb is tender, about 10 minutes. 500g forced rhubarb , chopped into 4cm lengths
150g caster sugar
1 blood orange , zested and juiced
1 vanilla pod
100g butter , melted, plus extra for the tin
200g gingernut biscuits
500g mascarpone or soft cheese
100g quark or thick natural yogurt
1 tbsp pistachios , chopped

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line a large baking tray with baking parchment and fill with the rhubarb. Scatter over the sugar and orange zest and pour over the juice. Scrape the seeds from the vanilla pod in there too, throwing the spent pod on top. Cover with foil and roast for 20 mins. Remove from the oven. Purée a third of the rhubarb, reserving the rest for the top.
  • Butter a 20cm springform cake tin and line it with baking parchment. To make the base, put the biscuits in a bag and smash them with a rolling pin, or put them in a food processor and grind to crumbs. Tip into a mixing bowl, and stir in a pinch of sea salt. Pour the butter over the crumbs. Mix it together with a fork and tip it into the tin. Tap the side of the tin with your hand to even the crumbs out, and gently compress it with the back of a large spoon until it's packed in and level. You want it fairly well packed so that it holds together. Put in the fridge to chill.
  • To make the filling, put the cheese and quark or yogurt into a mixing bowl, or the bowl of a stand mixer, and beat it together. Mix until combined and thickened, then fold through the rhubarb purée.
  • Pile the mixture on top of the biscuit base and smooth it down. Cover with cling film and chill overnight until set. Remove the rhubarb from its syrup with a slotted spoon, tip the syrup into a pan and bring to the boil. Reduce for about 3-5 mins until the syrup is more concentrated. Allow to cool.
  • Carefully remove the cheesecake from its tin. Pile the rhubarb on top and drizzle over some syrup (you can save the rest for drizzling over porridge), then scatter with the pistachios to serve.

1/2 cup packed brown sugar

  • In a bowl, combine flour, brown sugar and salt; cut in butter until mixture resembles coarse crumbs. Stir in walnuts and vanilla. Press into a greased 13-in. x 9-in. baking dish. Bake at 375° for 10 minutes. Cool slightly. , In a large bowl, beat cream cheese and sugar until lightly and fluffy. Add egg; beat on low speed just until combined. Add vanilla. Pour over the crust. 175 g digestive biscuits
1 tablespoon sugar
60 g butter
900 g cream cheese
250 g sugar
4 eggs
1 pod vanilla
125 ml double cream
35 g plain flour
2 teaspoons vanilla extract
5 stalks rhubarb
3 tablespoons orange juice
3 tablespoons sugar
1 sheet gelatin

Steps:

  • Preheat the oven to gas 6, 200C, fan 180°C Put the digestive biscuits and sugar into a food processor and pulse until the mixture looks like fine gravel. Pour in the melted butter and pulse again. Pour the mixture into the base of a 25cm (10in) springform cake tin, press into the base, and pack tightly flat with the base of a tumbler. Bake for 5 minutes, remove, and set aside.
  • Reduce the heat to gas 3, 170C, fan 150°C Put the cream cheese and the caster sugar in the mixer and beat for 5 minutes or until just combined and smooth. Add the eggs one at a time, beating well after each addition. Add the vanilla seeds, flour, cream, and vanilla extract and beat until well combined. Pour ito the tin and spread evenly. Bake on the middle rack for 1 hour, or until set but still slightly wobbly in the centre.
  • Turn the oven off and remove the cheesecake. Run a knife around the edge of the tin and return it to the oven, with the door ajar, to cool. Leave for 1 hour, then chill for at least 4 hours, or overnight. Cheesecakes can crack when chilled, but don't worry if it does - you can cover them with the rhubarb.
  • Chop the rhubarb into 1in pieces. In a medium pan add the sugar, orange juice and rhubarb. Bring to the boil and simmer for 2 minutes. Soak the sheet of gelatine in cold water for a few minutes until it softens, squeeze the water out and add the gelatine to the rhubarb. Gently heat until the gelatine melts and the rhubarb is tender (about another 3 minutes). Pour the mixture over the chilled cheesecake and chill for 1 1/2 hours to set. Cut into slices and serve with some mint, if you like.

2 Madagascar vanilla beans
1 ¼ cups graham cracker crumbs (such as Keebler®)
⅓ cup butter, melted
¼ cup white sugar
2 (8 ounce) packages cream cheese, softened
1 (8 ounce) container sour cream
1 cup white sugar
2 tablespoons cornstarch
2 tablespoons butter, softened
1 teaspoon vanilla extract
2 cups heavy whipping cream
¼ cup confectioners' sugar
2 (4 ounce) bars white baking chocolate, chopped
1 (8 ounce) package cream cheese, softened
1 cup heavy whipping cream
1 ½ tablespoons confectioners' sugar

Steps:

  • Split 1 vanilla bean lengthwise with the tip of a sharp knife. Holding the pod open, scrape seeds from each half using the flat side of your knife; place in a bowl. Repeat with second vanilla bean, placing seeds in a separate bowl.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix graham cracker crumbs, melted butter, and 1/4 white sugar together in a bowl. Press over the bottom and up the sides of a 9-inch springform pan.
  • Combine 2 packages cream cheese, sour cream, 1 cup white sugar, and cornstarch in a large bowl; mix until sugar is dissolved. Add seeds from 1 vanilla bean, softened butter, and vanilla extract; blend until smooth. Pour over graham cracker crust.
  • Bake in the preheated oven until top is a light tan color, 30 to 35 minutes. Cool for 1 to 2 hours.
  • Beat 2 cups heavy cream in a chilled bowl with an electric mixer until soft peaks form. Add 1/4 confectioners' sugar, 1 tablespoon at a time, beating until cream is stiff. Place in the refrigerator.
  • Melt white chocolate in top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Remove from heat and let cool, about 5 minutes.
  • Beat 1 package cream cheese with an electric mixer until fluffy. Beat in white chocolate until smooth. Fold in whipped cream. Spread over the cooled cheesecake. Chill for 1 to 2 hours.
  • Beat 1 cup heavy cream in a chilled bowl with an electric mixer until soft peaks form. Beat in seeds from the second vanilla bean and 1 1/2 tablespoon confectioners' sugar until stiff peaks form. Spread over cheesecake. Cover and refrigerate until firm, at least 1 day.
