Pickled eggs are the perfect salty tangy snack, and an easy way to preserve eggs for months at a time.

9-10 hard-boiled eggs, peeled
1 cup white vinegar
1 cup beet juice (or beet cooking water)
1/2 small onion
2 Tbsp. sugar
2 Tbsp. salt
6-8 cloves
4-5 allspice berries
1 cinnamon stick

1/2 cup water
2 Tbsp. salt
1 Tbsp. sugar
1 or 2 Jalapeños, sliced
1/2 onion, sliced
3-4 garlic cloves
2-4 bay leaves
1 tsp coriander seeds
3-4 cloves
3-4 allspice berries

Steps:

  • Place peeled, hard-boiled eggs into a quart wide mouth mason jar (or use a half recipe for pint jars).
  • Place liquids (water/vinegar, etc) into a small saucepan and add sugar and salt. Gently heat until dissolved, then remove from heat.
  • Add spices and sliced veggies (onions/garlic/etc) directly into the jars.
  • Pour the hot brine over the eggs and spices, leaving as little headspace as possible (around 1/4 inch).
  • Seal jars with lids and allow them to cool slightly before storing them in the refrigerator.
  • Allow the eggs to pickle for at least 24 hours before eating, preferably around 1-2 weeks for better flavors.
  • Pickled eggs should last 3-4 months in the refrigerator.

Here's a great recipe for leftover Easter eggs or any eggs you happen to have in your fridge. The combination of coriander seeds, yellow mustard seeds and fresh dill makes for a delicious bite.

2 1/4 cups distilled white vinegar
Kosher salt
1 tablespoon coriander seeds
1 tablespoon yellow mustard seeds
1 tablespoon sugar
1/2 small yellow or white onion, halved and thinly sliced
1/2 to 1 Fresno or other hot red chile, thinly sliced
12 hard-boiled eggs, peeled
Tips from 9 inner celery ribs
6 sprigs dill

Steps:

  • Bring the vinegar, 3/4 cup water, 3 tablespoons salt, the coriander seeds, mustard seeds, sugar, onions and chiles to a boil in a medium saucepan over medium heat, stirring to dissolve the salt and sugar. Reduce the heat, cover and let the brine simmer for 5 minutes.
  • Meanwhile, pierce each egg all the way through about 6 times with a cake tester or toothpick. Put 2 eggs in each of 3 glass pint jars with lids, and tuck the celery and dill in around them. Ladle in enough brine to cover the eggs, add 2 more eggs to each jar and ladle in more brine to cover, leaving about 1/4 inch of space at the top. Close the jars, let cool to room temperature and refrigerate for at least 24 hours before serving.
  • To serve, halve or quarter the eggs, and spoon some pickling liquid and vegetables over the top. (The eggs will keep, covered by liquid and refrigerated, for up to 5 days.)

1 pound red beets, stems and leaves removed
1 cup apple cider vinegar
1/2 cup granulated sugar
1/2 teaspoon whole black peppercorns
1/8 teaspoon pickling spice
6 large hard-boiled eggs, peeled
1 small yellow onion, peeled and sliced
2 cloves garlic, peeled and smashed
Fresh dill sprigs, garnish
Sliced French bread, as an accompaniment

Steps:

  • Preheat the oven to 350 degrees F.
  • Wrap the beets tightly in aluminum foil and roast until tender, 1 to 1 1/2 hours. Remove from the oven, uncover, and let sit until cool enough to handle. When cool, slip the skins from the beets and cut into eighths.
  • In a non-reactive saucepan, combine the vinegar, sugar, peppercorns, and pickling spice. Bring to a boil and cook, stirring occasionally, until the sugar dissolves. Remove from the heat and let sit for 2 hours for the flavors to develop. Add the eggs, onions, garlic, and beets and turn to coat evenly. Cover tightly and refrigerate, turning occasionally, until the eggs are a deep pink color, at least 8 hours and up to 24 hours.
  • To serve, remove the eggs, beets, and onions from the marinade and arrange on a platter. Garnish with sprigs of dill and serve with sliced French bread.

Steps:

  • Mix your vinegar, sugar, water, prepared mustard, salt, celery seed, mustard seed and cloves in a large saucepan. Let it boil and then lower the heat so that it simmers for about 10 minutes. Remove from the stove and allow the mixture to cool. Get a large, glass jar with a lid, and put your eggs and onions inside. Pour in the vinegar mixture until the eggs are completely covered. Close the jar, and place it in the refrigerator to chill overnight (or at least for 8 hours). These will last in the refrigerator for a week.

¼ cup brown sugar
½ cup white vinegar
½ cup cold water
½ teaspoon salt
4 whole cloves
1 small cinnamon stick
6 hard-cooked eggs

Steps:

  • Pour the beet juice into a medium-size pot. Stir in the brown sugar, vinegar, water, salt, cloves, and the cinnamon stick. Place the pot over a medium heat for 8 minutes, stirring occasionally.
  • Place the beets into the liquid mixture and let it cook for an additional 2 minutes to allow the beets to heat.
  • Place the hard cooked eggs (with the shells removed) in a container with a tight-fitting lid. Pour the liquid and beets into the container with the eggs. Store the container in the refrigerator for approximately 5 days before eating.

This is an easy recipe that my grandmother used to serve in the spring. My brother still refers to this dish as "Easter eggs". Slices of onion or hot pepper may also be added to the pickling liquid with the beets and eggs.

3 cups vinegar
2 cups water
2 1/2 cups sugar
2 teaspoons whole allspice
2 inches piece cinnamon sticks
1/2 teaspoon whole cloves
1 teaspoon salt

Steps:

  • Cook the beets until just tender.
  • Slip off skins.
  • Combine vinegar, water, sugar, spices and salt.
  • Bring to a boil and simmer 15 minutes.
  • Add the beets and simmer 5 minutes longer.
  • Pack the beets into hot sterilized jars.
  • Bring the syrup to a boil, then pour over beets.
  • If not enough to cover add hot vinegar.
  • Seal immediately.
  • Allow to *pickle for 3 weeks before testing*.

1 medium onion, sliced into rings
1 cup white vinegar

  • Prepare the pickling brine by combining the first 5 ingredients in medium sized pot. Bring the ingredients to a boil, then reduce to a low simmer. Simmer until all of the sugar is dissolved.
  • Layer the peeled hard boiled eggs into a sterilized 2 liter glass jar. You can use a larger jar if you want, you don't have to water bath seal these so a certain amount of headspace at the top doesn't matter. You can also add in slices of onions if you want at this point. Tuck the bay leaves and the fresh dill down the side of the jar.
  • Store in your refrigerator for 1-2 weeks before serving for the best taste, but maybe make a double batch if you want to start snacking right away!
