A wonderful dish that is a favorite for Derby Day (or any day) brunch.

¾ cup milk
1 egg
1 tablespoon garlic powder
1 dash hot pepper sauce
4 cups water
1 teaspoon salt
1 cup quick-cooking grits
¼ cup butter
12 ounces shredded sharp Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.
  • Beat milk, egg, garlic powder, and hot pepper sauce in a bowl.
  • Bring water and salt to a boil in a saucepan; cook and stir grits in boiling water until thickened, 3 to 5 minutes. Remove from heat; add butter and about 1/2 of the Cheddar cheese. Stir egg mixture into grits and pour grits into the prepared baking dish. Sprinkle remaining Cheddar cheese over grits.
  • Bake in the preheated oven until cheese is melted and grits are set, about 1 hour. Allow grits to cool 20 to 30 minutes before serving. Grits should be cornbread-like.

1 cup quick-cooking grits
1 cup shredded Velveeta
1/2 cup butter
1 teaspoon garlic salt
1 large egg
1/4 to 1/3 cup 2% milk
Additional cheese, optional

Steps:

  • Cook grits according to package directions. Add cheese, butter and garlic salt; stir until cheese and butter are melted. In a measuring cup, beat egg; add milk to measure 1/2 cup. Stir into grits. , Pour into a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 20-25 minutes or until bubbly around the edges. Sprinkle with additional cheese if desired.

3 3/4 cups water
2 tablespoons butter or margarine
1/2 ounce canned jalapenos, diced
1 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon cayenne pepper
1 cup grits
1/2 cup sour cream
1 cup grated Cheddar
1 cup grated Monterey jack
1 cup diced green peppers
1 cup diced onions
3.5 ounces canned pimentos, drained
6 ounces sugar-cured ham or deli ham, diced
1/4 cup diced scallions
1/4 cup diced tomatoes

Steps:

  • In a large pan, combine 3 1/2 cups of water, the butter, jalapenos, garlic powder, salt, and cayenne pepper and bring it to a boil. Add the grits and stir. Reduce the heat to medium and continue stirring until the grits start to thicken. Add the sour cream, half of the Cheddar, and half of the Monterey jack and stir until creamy.
  • Preheat the oven broiler.
  • In a small skillet, add the remaining 1/4 cup water, green peppers, onions, and pimentos and cook over high heat until tender. Pour the grits mixture into a large flameproof casserole dish and top it with the cooked vegetables and ham. Add the remaining cheese on top and broil in the oven until the cheese is melted. Garnish each serving with scallions and tomatoes and serve immediately.

4 cups water or chicken broth, homemade or low sodium canned
3 cups whole milk
1 tablespoon kosher salt
1/4 teaspoon cayenne pepper
1 1/4 cups grits (not instant)
1 1/2 cups grated sharp cheddar cheese (about 4 ounces)
3 to 5 tablespoons unsalted butter
Freshly ground black pepper
3 large eggs beaten (optional)

Steps:

  • In a medium saucepan, combine the water or broth, milk, salt, and cayenne and bring to a boil. Slowly whisk in the grits and lower the heat to a simmer. Cover and cook, stirring occasionally, until thickened, about 30 minutes.
  • Stir in the cheese and butter until evenly incorporated. Season with pepper to taste. Serve immediately.
  • Remove from the oven and let cool for 5 minutes before serving.

CHEESY ROASTED GARLIC GRITS

1/2 cup heavy whipping cream
4 slices yellow Cheddar
1 head garlic
Olive oil, for drizzling
Kosher salt and freshly ground pepper
Kosher salt and freshly ground pepper
4 cups chicken stock
1 cup stone-ground grits
1/2 cup grated white Cheddar

Steps:

  • Preheat the oven to 400 degrees F.
  • Trim the top off the garlic, drizzle with oil and sprinkle with salt and pepper. Seal the garlic in aluminum foil, place on a baking sheet and roast until the cloves are golden and super soft, 20 to 30 minutes. Squeeze the cloves out, add a pinch of salt and smear with a knife on a flat surface to form a paste. Reserve.
  • Bring the stock to a simmer. Slowly add the grits in small batches, whisking the whole time. Cook, whisking often, until the grits are creamy and tender, 20 to 30 minutes.
  • Remove the grits from the heat and stir in the roasted garlic paste, white Cheddar and cream. Adjust the seasoning with salt and pepper. Carefully ladle the grits into the ramekins on a baking sheet. Top each ramekin with a slice of yellow Cheddar so the slice just comes over the sides of the ramekin. Bake until the cheese is gooey and bubbly, 2 to 3 minutes. Top with freshly ground black pepper and serve!

1 cup quick-cooking grits (not instant)
2 cups water
1/2 teaspoon salt
1/2 lb Velveeta cheese, diced
2 teaspoons garlic, minced (may used bottled)
1/2 cup butter, sliced for quicker melting
2 large eggs
1 (10 ounce) can Rotel Tomatoes, diced, including juice
1 lb breakfast sausage, spicy, browned, drained and crumbled

Steps:

  • In 4 quart saucepan, bring 2 cups and salt water to boil. Stir in the grits. Cook according to grits pkg directions.
  • After cooking the grits, place eggs in a measuring cup, then completely fill the cup with water. In a small mixing bowl whisk the eggs and water slightly.
  • Cut up cheese and butter and add to hot grits, stirring over low heat until butter and cheese are melted.
  • Add diced tomatoes and juice.
  • Temper egg and water mixture by adding about 1/4 cup of grits mixture to the eggs and water -- and stir.
  • Immediately add egg mixture to the hot grits.
  • Pour all into slightly greased 9 x 12-inch baking dish.
  • Bake 1 hour at 300°F.

This recipe, originally from the Cornerstone Inn B&B in Gatlinburg Tennessee, had a few problems. Although I liked the flavor, I wanted to tweak it a bit before posting. I have since made changes and found my version much more to my liking, perfect as an accompaniment to any southern or country breakfast. Enjoy!

1 cup old fashioned grits (not quick cooking)
3 1/2 cups water
4 tablespoons unsalted butter
3 cloves garlic, minced
8 ounces cream cheese, softened (may use low-fat, but not fat-free)
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 cup heavy cream
1/2 teaspoon Tabasco sauce (or more, depending on taste)
2 eggs, lightly beaten

Steps:

  • Preheat oven to 350°F.
  • Cook the grits in the 3 1/2 cups water for about 15 minutes, or until done, stirring frequently (adjust water amount if needed).
  • Mix in butter, garlic, and cream cheese, stirring until blended and butter melts.
  • Allow to cool a little bit.
  • Mix in salt, pepper, cream, hot sauce, and eggs (the eggs are why you don't want this hot at this point, or they will scramble on contact).
  • Place mixture into a greased square casserole dish (or you may use a 8x8 baking pan).
