Cold days of winter call for a soul warming soup. This potato soup is easy to make with russet potatoes and a leftover ham bone. Perfect meal for a cold evening.

Number Of Ingredients 9

1 medium Onion
1 medium Carrot
2 stalks Celery
3 Tablespoons Butter
8 cups water
1 Ham Bone, meaty
5 medium Russet Potatoes
1 can Evaporated Milk
Salt and Pepper to taste

Steps:

  • Dice the carrot.
  • Dice the celery stalks.
  • Dice the onion.
  • Heat heavy stock pot over Medium heat.
  • Add the butter.
  • Add onions, carrots, celery
  • Stir and cook until vegetables are tender.
  • Add ham bone.
  • Add water.
  • Bring to a boil. Reduce heat and simmer for 1 hour.
  • Remove ham bone. Set aside. Remove meat when cooled.
  • Cube the potatoes into about 1 inch pieces.
  • Add potatoes to pot. Cook about 15 minutes until potatoes are tender.
  • Remove about half of the potatoes. Set aside.
  • Add the milk.
  • Use an Immersion Blender to puree potatoes left in the pot.
  • Add potato pieces and ham meat back to pot. Stir well.
  • Add salt and pepper as needed.
  • Serve warm.
  • Enjoy!

My Dad's Pea Soup Recipe With Ham Bone image

My dad would make this after every easter and it was always great. Nothing can compare. Also, if you do not have a ham bone from easter, hamhocks work just as well. Also, if you can not find turnips, rutabas will work.

16 ounces split peas
4 turnips (purple top small)
1 ham bone
64 ounces chicken broth
1/2 water
3 carrots, chopped
2 celery, chopped
1/4 cup onion, chopped
1 bay leaf

Steps:

  • Soak peas overnight.
  • Next day Place peas in colander and rinse with cold water.
  • Place Ham bone/s in large pot. You may want to remove obvious fat first.
  • Add chicken broth and water to cover ham.
  • Add rinsed peas to pot.
  • Add vegetables to pot.
  • Add diced purple top turnips to pot.
  • Cook over low heat for about 4 hours. Meat should be coming off the bone.
  • Salt to taste.
  • Remove bone and discard.
  • Remove pieces of meat and save for later or just use fresh cut ham leftover.
  • I usually put liquid in a blender to liquefy all the stuff. This usually takes a while to do it all. You'll need an extra pot for the blended pea soup.
  • Put blended soup back on stove to heat. Add shredded carrots and the meat (if you wish) and cook for about 20 minutes stirring occasionally.
  • You may want to add some salt and maybe some more chicken broth to taste.
  • Serve with home made garlic croutons or rye bread.

My DH does the cleaning of the ham, and always leaves some nice meat pieces on the bone so I can make this super easy, tasty soup! Enjoy!

1 ham bone
10 cups water (about)
2 cups chopped carrots
1 1/2 cups chopped celery
1 cup chopped onion
2 medium white potatoes, peeled and chopped
2 teaspoons pepper
2 bay leaves
1 1/2 cups lentils
2 cups egg noodles
1 cup frozen peas

Steps:

  • Place ham bone in a medium stock pot. Fill water to just cover ham bone.
  • Bring water to a boil and add carrots, celery, potato, onion, pepper, and bay leaves.
  • Reduce heat to a medium simmer. Simmer 1 hour.
  • Add lentils.
  • 10 minutes before serving, bring back to a boil and add egg noodles.
  • 5 minutes before serving, add peas.
  • Serve when noodles are cooked to desired "doneness".

Made this up after winning a ham at the company Christmas party. I'm not a big ham or soup fan, but the ham turned out pretty good and I thought I'd experiment with a soup to use up some of the leftovers. I couldn't find a recipe I liked, so I basically combined three recipes I found on 'Zaar. I'm a picky eater - don't like carrots or many types of beans - which is why I didn't stick to the navy bean/pea/carrot type recipes. I used cornstarch to thicken which didn't work very well. Another recipe recommended the potato flakes (which I don't have). I made my ham with looneytunesfan's Brown Sugar Honey Baked Ham recipe (#151563). The soup seemed sweet to me and I'm guessing it's because of the sugary ham. I think it turned out pretty good so I thought I'd share. Feel free to experiment or make suggestions. I'm more of a baker than a cook! :)

1 garlic clove, chopped

1 (16 ounce) can pinto beans
1 (16 ounce) can kidney beans
1/3 cup butter
2 cups milk
pepper
cornstarch or instant potato flakes

Steps:

  • Cover ham bone in water and simmer for about an hour.
  • Add onion and bay leaves. Simmer until onions are tender.
  • Add potatoes, garlic, ham and beans. Simmer until ham falls off bone.
  • Remove ham from ham bone. Add ham to soup and discard bone.
  • Add butter, milk and pepper. Simmer until heated thoroughly.
  • Add cornstarch or instant potato flakes to thicken.

How about: add Julienne'ed carrots close to the end; or 8 oz Velveeta cheese; or 2 cups cooked broccoli florets; or throw in some cooked shrimp and crab meat & some Cajun seasonings...; or any combination you can think of! YUM! If your hambone isn't too meaty, add a cup of shredded or chopped ham from leftovers.

1 ham bone, with visible meat
1 medium onion, diced
4 cups water
1/2 teaspoon celery seeds or 1 stalk celery, chopped
1/2 teaspoon white pepper
1/2 teaspoon ground black pepper
5 medium red potatoes, cut in 1 inch cubes
1/2 cup butter
1/2 cup flour
2 cups half-and-half

Steps:

  • Place first 6 ingredients in a Dutch Oven, bring to a boil over medium heat, and simmer for 30 minutes or until meat easily comes off the bone with a fork. Shred ham from the bone, discard any fat, return meat to the pot. Add diced potatoes, bring to a boil, reduce heat and simmer until potatoes are tender.
  • While potatoes are cooking, in a medium saucepan, melt butter over medium heat being careful not to brown. Add flour, stirring constantly until incorporated well. Bring heat to medium/high and gradually stir in the Half n Half until creamy, thick and bubbly, stirring constantly, being careful not to scorch. Once it thickly coats the spoon, remove from heat.
  • When the potatoes are tender, stir the sauce mixture into the potato pot over medium heat, stirring constantly. Let simmer until soup reaches the desired consistency. You can add milk to adjust.
  • There has been no salt added to this point. You may add salt, pepper, garlic, herbs or seasonings to your taste.

My mother got this recipe at a Weight Watchers meeting about 15 years ago. I have never been able to find the recipe anywhere since. This recipe is fast, versatile, and my husband loves it. Add any frozen vegetables you like. It makes a large batch, so I always have leftovers to freeze. Please don't let the ranch scare you off, it give the stock a really nice flavor. Have fun playing with this recipe by varying the veggies, adding meats, or even grains like barley.

46 ounces V8 vegetable juice
10 ounces original Rotel Tomatoes
1 large chopped onion
1 tablespoon prepared garlic
2 (1 ounce) packages hidden valley ranch dressing mix
2 -3 cups frozen vegetables
salt and pepper

Steps:

  • Add V8 juice, Ro*tel Tomatoes, onions, and garlic to a large sauce pot. Heat on medium high heat.
  • When soups is good and hot add the Ranch power, stirring to break up lumps.
  • After about 5 minutes, reduce the heat tomedium and add 2-3 cups of vegetables. I like peas, corn, lima beans, carrots, and green beans.
  • Let the soup cook for about 15 minutes or until all veggies are done.
  • Enjoy.
