These are my shrimp egg rolls. They might not be the most traditional egg roll, but this is the way I enjoy making them. Recipe can be doubled easily. They can be made with other meats, or without meat at all!

2 tablespoons vegetable oil
12 ounces shrimp, cooked and minced
4 scallions, chopped fine
2 cups Chinese cabbage, finely shredded
2 carrots, shredded
8 water chestnuts, cut into small, thin strips
2 stalks celery, minced
1 cup bean sprouts
1 1/4 teaspoons salt
1 -2 tablespoon soy sauce, to taste
2 teaspoons oyster sauce (optional)
1 tablespoon rice wine
3/4 teaspoon sugar (optional)
6 egg roll wraps
1 egg, beaten (if you wish, you can use water, but it doesnt always work!!!)
oil, for deep frying

Steps:

  • First heat your 2 Tablespoons of oil in either a wok or is a deeper skillet, and stir fry your shrimp, cabbage, carrots, water chestnuts, and celery for 3-4 minutes.
  • Then put into the pan the following: bean sprouts, scallions, salt, soy sauce, and sugar, and stir thoroughly.
  • Add this shrimp mixture to each egg roll wrapper (about 3-4 tablespoons of mixture in each wrapper).
  • You will want to make a bunched line with the mixture closer to one side of the wrapper, making sure that you are placing it lengthwise down the longer side of the wrapper.
  • Brush edges with egg.
  • Fold the shorter side of the wrapper in (the side that runs lengthwise next to the mixture) completely over the mixture, and then fold over both sides of the wrapper that run the other direction.
  • Then you will want to go to the end with the mixture and start folding (rolling) it tightly to make a cylinder.
  • Make sure that when you come to the end of the last edge, that it is sealed tightly.
  • Cover rolls with a damp towel while you finish rolling all of them.
  • Heat oil in your deep pan to 375.
  • I usually use about 1 inch of oil in my pan.
  • Fry egg rolls, a few at a time, until skins are crisp and golden brown, turning them as they brown.
  • Drain egg rolls on paper towels to get rid of excess oil and serve them at once for best results.

4 teaspoons minced fresh ginger
2 teaspoons minced garlic
4 cups shredded cabbage
1 (14 ounce) can bean sprouts, drained and rinsed
4 tablespoons oyster sauce
½ pound tiny cooked shrimp
3 dashes soy sauce, or to taste
oil for frying
12 egg roll wrappers
1 cup duck sauce
2 tablespoons oyster sauce
1 tablespoon soy sauce

Steps:

  • Heat sesame oil in a skillet over medium heat. Add ginger and garlic; cook until fragrant, about 1 minute. Stir in cabbage, bean sprouts, and oyster sauce; saute until veggies start to turn translucent, about 5 minutes. Add shrimp and soy sauce, stir, and remove from heat. Set aside until filling is cool enough to handle.
  • Heat 2 inches oil in a deep skillet to 350 degrees F (175 degrees C).
  • While oil is heating, place an egg roll wrapper on a dry work surface. Spoon about 1 tablespoon of filling onto the center of the wrapper. Pull the bottom left corner over the filling and fold the two sides in, moistening edges with water as you go; roll tightly to seal. Repeat to make a few more egg rolls, wiping the work surface between each roll.
  • Place several egg rolls in the hot oil and fry until wrappers are golden brown, 5 to 7 minutes. Transfer to a paper towel-lined plate to drain while you make and cook remaining egg rolls.
  • Combine duck sauce, oyster sauce, and soy sauce; stir until well combined. Serve sauce with egg rolls.

4 cups (about 1/2 of a 12-ounce bag) dry coleslaw mix
4 ounces cooked and chopped ready-to-eat shrimp
1/2 cup canned sliced water chestnuts, drained and cut into strips
1/2 cup canned sliced water chestnuts, drained and cut into strips
1/4 cup bean sprouts, chopped
2 scallions, chopped
1 stalk celery, thinly sliced widthwise
2 tablespoons reduced-sodium or lite soy sauce
1 teaspoon crushed garlic
1/4 teaspoon ground ginger
1/8 teaspoon salt
Dash black pepper
6 large square egg roll wrappers*
Sweet and sour sauce, for optional dipping

Steps:

  • Preheat oven to 375 degrees F.
  • Put slaw mix in a large microwave-safe bowl with 2 tablespoons of water, cover, and microwave for 2 minutes. Drain any excess water from the bowl. Add all of the other ingredients except the wrappers and optional sauce, mix well, and set aside. For a more intense flavor, allow the mixture to marinate in the refrigerator for 20 minutes.
  • Prepare a large baking sheet by spraying it lightly with nonstick spray. Place an egg roll wrapper on a clean, dry surface. Evenly distribute about 1/2 cup of the mixture onto the wrapper, in a row a little below the center. Moisten all four edges by dabbing your fingers in water and going over the edges smoothly. Fold the sides of each wrapper about 3/4 inch towards the middle, to keep the mixture from falling out of the sides. Then, roll the bottom of each wrapper up around the mixture, and continue rolling until you reach the top. Seal the outside edge with another dab of water. Carefully transfer egg roll to the baking sheet.
  • Repeat the process with the remaining wrappers and filling, making sure you have a clean, dry surface each time.
  • Spray the tops of the egg rolls with nonstick spray. Bake in the oven for 25 to 30 minutes, until golden brown. Allow them to cool slightly. If you like, dip the egg rolls in some sweet and sour sauce!

1/2 small head cabbage, cut into thin shreds
1 c diced onion
2 small carrots, coarsely grated
2-3 clove minced garlic
1/2 Tbsp fresh ginger root, grated
1/2 lb ground pork or ground chicken breast
1/4 tsp pepper
1 Tbsp sesame oil
1/2 Tbsp canola oil
2 Tbsp light soy sauce
SPICY SAUCE
3/4 c rice vinegar
1/2 c sugar
1 tsp red pepper flakes
1/2 tsp salt
1/2 tsp minced or crushed garlic
1 Tbsp water

Steps:

  • 1. Cook ground pork or chicken breast with onions in a large skillet. Drain off some liquid while it's cooking so it cooks down and browns.
  • 2. Combine oils, soy sauce, garlic, ginger and pepper in a small bowl and set aside.
  • 3. When meat is done cooking, add cabbage and carrots and cook over medium high heat for 5 - 6 minutes.
  • 4. Add sauce mixture, reduce heat to medium, and cook for approximately 10 more minutes until the cabbage is tender.
  • 5. Drizzle sauce on top before serving.
  • 6. For sauce: Combine all ingredients and cook over medium heat for 5 to 10 minutes or until sauce begins to get syrupy. Stir constantly. Sauce thickens as it sits; add a little more warm water, if needed.

1 sweet red pepper, cored seeded THINLY sliced

1 tablespoon fresh ginger, grated
2 garlic cloves, finely chopped
2 green onions, sliced thinly
1 carrot, cut into 1-inch julienne strips
1 cup red cabbage, shredded
6 Brussels sprouts, shredded (fresh, not frozen)
1/4 cup chicken broth
2 tablespoons Chinkiang vinegar
1 tablespoon sugar
1 tablespoon oil, sesame
12 egg roll wraps
10 medium shrimp, cooked and minced
8 ounces turkey, cooked and shredded
2 ounces chicken skin or 2 ounces turkey skin
1 tablespoon lime juice (dipping sauce)
1 tablespoon rice vinegar (dipping sauce)
1 tablespoon gochujang (dipping sauce)
1 teaspoon fish sauce (dipping sauce)

Steps:

  • If you don't already have crispy turkey skin or chicken skin, preheat the oven to 375 degrees F. Place parchment sheet or a Silpat on a baking sheet, sprinkle skin with kosher salt and pepper, and cover skin with a second baking sheet so it doesn't curl up. Heat for 20 minutes, rotate the sheet, and cook for another 20 minutes. Remove from oven. When cool, dice skin and set aside.
  • Stir-fry the ginger and garlic on medium heat in 1 tablespoon of oil until fragrant, about 30 seconds. Add green onions, carrots, cabbage, and brussels sprouts and stir-fry for 5 more minutes.
  • In a bowl, combine the chicken broth, Chinkiang vinegar, and sugar. Add mixture to the pan and bring to a boil, then lower heat and simmer for 5 minutes, stirring occasionally, until the vegetables are soft. Add sesame oil, cool for at least 15 minutes, and strain.
  • Fold in the minced shrimp, turkey, and crispy turkey skin.
  • Fill and roll the eggroll wrappers, wetting the edges with water to help them wrapping stick. Apply water to any loose flaps in the eggroll to make them stick.
  • In a skillet set over moderately high heat, heat the remaining oil and saute the egg rolls until golden brown on all sides, using tongs to turn them. Serve when cool enough to eat.
  • Combine dipping sauce ingredients and serve.

1/2 cup sugar
1 cup pineapple juice
1/2 cup white vinegar

1 carrot, shredded
½ cup fresh bean sprouts
1 celery stalk, diced

1 egg, beaten
cornstarch
20 egg roll wrappers
vegetable oil for frying

Steps:

  • In a large bowl, mix together cabbage, carrots, sprouts, celery, and onion. Stir in shrimp, soy sauce, garlic powder, and black pepper.
  • Pour beaten egg into a skillet placed over medium heat; cook flat and thin, flipping once, until done. Remove from skillet, cool, and chop finely. Stir egg into cabbage mixture. Sprinkle top with cornstarch, mix, and allow to sit 10 minutes.
  • Mix 1 tablespoon cornstarch with 2 tablespoons cold water. Set aside.

  • Pour vegetable oil into a deep frying pan to a depth of 3 or 4 inches, and heat oil to 350 degrees F (175 degrees C). Carefully place egg rolls into hot oil, and fry until golden brown. Remove to paper towels.

I wanted to make egg rolls for my hubby and me but I don't own a deep fryer and to be healthier I wanted to bake my egg rolls rather than fry them. I adapted the recipe "Awesome Egg Rolls", Recipe #8674 to be baked rather than fried. This recipe is very simple, and in my opinion fail proof. These egg rolls are delicious, and crispy like restaurant egg rolls, but with out all of the grease. I hope you enjoy this healthier alternative to the traditional fried egg rolls.

1 lb lean ground beef
1 (10 ounce) package shredded cabbage
1 carrot (grated)
salt and pepper
garlic powder
20 -30 egg roll wraps
1 egg
pam nonstick cooking spray

Steps:

  • Preheat oven to 425 degrees.
  • Brown ground beef with salt, pepper and garlic powder. Use a lot of salt, pepper and garlic powder because the flavors will decrease when the meat is mixed with the cabbage and carrots.
  • After browning meat and getting the seasoning to the right taste (try the meat to see if it has enough flavor) place the cabbage and carrots in a very large mixing bowl.
  • Add the ground beef on top of the veggies.
  • Mix well and allow to sit for about 15 minutes. This step allows the cabbage to soften for easier rolling and lets the flavors mix.
  • Taste the cabbage and see if the flavoring is still strong enough. Add more salt, pepper and garlic powder until you get a taste you enjoy.
  • Crack the egg into a small bowl to make an egg wash to use when sealing the egg rolls.
  • Place 1-2 Tbs (more or less for easy rolling of egg rolls) of cabbage/meat mixture onto each egg roll wrap.
  • Fold egg roll wrap according to directions on package being sure to wrap them tightly.
  • Brush egg wash onto wrap while folding to seal the egg rolls.
  • Place egg rolls onto cookie baking sheet.
  • Spray egg rolls with PAM. Use enough PAM to give egg rolls a nice shine.
  • Flip egg rolls over and spray all sides well.
  • Place egg rolls in oven and bake for 15 minutes Egg rolls should be blond in color and crispy. Do not let egg rolls get too dark.

My entire family loves these egg rolls. I have no idea where this particular recipe came from. Perhaps I "stole" it from someone, perhaps I got it out of a recipe book or magazine, or maybe I got it off the Internet back in its infancy. Somehow, I have a feeling that it may be bits and pieces of all these sources. In any case, this is the recipe I have made for many years and I am sticking to it! I truly hope you enjoy it because these eggs rolls are awesome.

1 large green cabbage head (large shredded into thin strips)
12 ounces mung bean sprouts
1 1/2 lbs raw shrimp (peeled and de-veined. For this particular recipe, I used the extra small, 240 count. I normally use )
1 1/2 lbs pork steaks (Cut into about 1/4 to 1/2 inch cubes. I prefer mine on the larger side)
2 large white onions (Chopped)
6 garlic cloves (finely minced)
2 carrots (Shredded)
1/4 cup soy sauce (Your choice)
2 tablespoons teriyaki sauce
3 teaspoons ginger powder
2 teaspoons kosher salt
1 teaspoon black pepper
2 tablespoons virgin olive oil
50 egg roll wraps (I use the 20 count packages so I always have extras. Just put the opened package in a zipper bag and)
oil or shortening (for frying)

Steps:

  • - Heat the olive oil in a very large frying pan* and drop the pork cubes into it. Add 2 tablespoons of Teriyaki sauce, a pinch or two of salt and cook until well browned.
  • - Add the shredded cabbage, bean sprouts, onions, garlic and carrots. Stir thoroughly and then add the remaining 2 tablespoons of virgin olive oil over the top. Stir thoroughly again. Other cooks like to mix the meat with the raw veggies and let the final frying cook the vegetables. However, I like to cook them a little first to get rid of some of the moisture (especially in the cabbage and sprouts). I have found that, if I get rid of some of the moisture first, the veggies will not shrink as much inside the wrapper later during frying and gives me a much firmer roll without large, empty pockets of air.
  • - Sprinkle the Kosher salt, ginger and black pepper over the top. Add the soy sauce and stir until everything is evenly distributed.
  • - Stir the mixture well several times until the cabbage becomes somewhat soft.
  • - When the mixture has reached the desired consistency, turn off the heat and add the shrimp. Stir well and allow mixture to rest for about 10 minutes.
  • - Have a small bowl of water ready. Take an egg roll wrapper out of the package; lay it flat so that one of the corners is pointing at your belly. Dip your fingers into the bowl of water and run them along all four edges of the wrapper so that they are all nice and moist.
  • - Place (approximately) 2 to 3 tablespoons of the filling in the middle of the wrapper so that it forms an elongated hill that comes to about 1 inch from the left and right sides. Fold the bottom corner (the one near your belly) over the mixture and press the corner lightly into the middle of the wrapper. Fold the left and right corners of the rolled wrapper so they end up pointing at each other on top of the folded wrapper. Using slight pressure from your fingers, "roll" the wrapped mixture towards the top until you end up with your roll. Keep it as tight as possible as you roll but not too much or you may break the wrapper and it will be a mess when you fry it. (Holy Mung Beans, Batman! I hope that makes sense!).
  • - FOR FRYING: I use vegetable shortening or canola oil, whichever I have on hand at the time. I also use my deep fryer but, in a pinch, I have used a deep frying pan with enough frying oil in it to completely cover the egg rolls. I have also heard that peanut oil does a great job but I am a cheapskate and don't want to spend the extra bucks.
  • - Fry on medium-high heat. I have found that anything lower makes the wrappers a little soft and chewy and I like mine nice and crispy.
  • - Now, you will find that egg rolls can be temperamental and some will follow basic orders but some won't. As you fry a batch, you will find that some of your egg rolls have turned over by themselves and some have not. You will also find that some will stay in the position once you turn them but some will absolutely refuse to turn; it seems that no matter how many times you turn them, they will turn back leaving the whitish, uncooked belly exposed. For those rebels, you may need to turn them and hold them under the oil with your utensil until they stay turned.
  • - Fry until golden brown and "bumpy". Place on top of a cookie sheet covered with a thick layer of paper towels and let them "drain" for 10 minutes or so. Serve and enjoy!
  • *I use my big Paella pan (see picture) which requires three burners to use. Otherwise, you may need to cook the filling in a couple of batches if your frying pan is not big enough. At times, your frying pan may not appear to be big enough but, after the cabbage and bean sprouts cook for a few minutes, the mixture will shrink so you may be able to keep adding the fresh veggies slowly and cook it all in one batch.).
  • HINT: When filling the egg rolls, I place my frying pan (or Paella pan) on a flat counter. Then, I place a piece of board about 1.5 inches thick under one side of the pan. This puts the pan on a slight angle which allows the juices and sauce to drain to the lower end. I then start using the filling from the higher side with a slotted spoon. This method allows me to use dryer filling without the sloppiness of wet cabbage.

  • Pull off the head if it is still attached. Pull off the outer shell. Devein the back of shrimp with a skewer. The vein runs right along the back. Insert the tip of skewer sideways about ½ inch down from the head of the shrimp and pull the skewer tip up towards you. This will lift up the vein and you can pull off the vein with the skewer or with your hand. If the vein is broken, then insert again a bit lower towards the tail. If you can’t find the vein, then don’t worry about it. [Recommended] Clean the shrimp with a pinch of salt, 1 Tbsp potato/corn starch, and 2 Tbsp water in a bowl and rub until you see dirty water. Rinse until clean.
  • Place an egg roll wrapper in front of you with one point of the long side of the wrapper towards you. Place the Negi Miso and shrimp (tail sticking out ½ of the way onto the wrapper on the long side.
  • In a large frying pan or medium saucepan, place ½ inch of oil. Heat on medium heat until hot and begins to have tiny bubbles when a chopstick tip is placed in the oil.
