A sweet yet flavorful sauce that is great on BBQ or chicken nuggets or potato chips or a bologna sandwich. We used it on taco's tonight. Just Great.

1 medium onion (chopped)
1 -2 tablespoon margarine
1 1/2 cups Heinz ketchup
2/3 cup light brown sugar
1/2 cup white vinegar
1 (15 ounce) can whole canned tomatoes
1 cup molasses
1/4 cup Worcestershire sauce
2 tablespoons lemon juice
1 tablespoon liquid smoke
1/2 teaspoon Kitchen Bouquet
1 teaspoon chili powder
1 teaspoon ground red pepper

Steps:

  • In sauce pan melt margerine and saute onions until tender. Do not burn.
  • Add onions and all other ingredients to blender. Blend until liquid.
  • Pour in pan and heat until sugar disolves.
  • Add ground red pepper as needed for heat.

An internet buddy of mine, aka Skwerl-X, took a special interest in two 'Zaar recipes which I had sent to him: Whipper's "Mustard Paint" and Dee514's "Italian Spice Blend". And so, from that, (slightly modified), we have this new barbecue sauce recipe, "Uncle Skwerl's Speckled Pig Paint". Well, as it turns out, this sauce is THE BOMB! You slather this stuff on your pork or chicken before it hits the grill and, WOW! So, thank you to those individual 'Zaarites and thank you Uncle Skwerl!*.*

Number Of Ingredients 11

1 cup prepared yellow mustard (I prefer Heinz)
4 tablespoons cider vinegar
2 tablespoons lemon juice
4 tablespoons dark brown sugar
5 teaspoons dried basil
5 teaspoons dried marjoram
2 teaspoons garlic powder
2 teaspoons dried oregano
2 teaspoons dried thyme
2 teaspoons dried rosemary, crushed
2 teaspoons crushed red pepper flakes

Steps:

  • Blend all ingredients in a bowl with a whisk.
  • Refrigerate until use.
  • Use a brush to mop this sauce on pork or, on chicken that you're going to either grill or smoke.
  • Enjoy!

My dad is from South Carolina, married my mom when he came up to be in the submarine service in Groton, CT. We went home to SC once or twice a year when we were kids. Great Uncle John owned a real live barbecue pit! His pit sauce recipe is my all time favorite for using on pork of any kind: ribs, chops, etc., as well as chicken. Oh my, delicious! Since we're all grown up now, both my dad and I have had plenty of time to modify the recipe. I hope you enjoy this well kept family secret and its variations! I'll be the family black sheep for sharing, but it's just too good to keep to myself!

1 stick(s) butter
- juice of two lemons
1/4 cup(s) yellow mustard
1/2 teaspoon(s) coarsely ground black pepper
to taste - frozen concentrate apple juice, not dilute

Steps:

  • Melt the butter in a small saucepan. Add the lemon juice and yellow mustard with the pepper. Stir all to combine well.
  • Stir in the thawed apple juice concentrate to taste.
  • If you like, you can personalize this recipe by adding 1 tsp. of dried tarragon, which is just wonderful on chicken. Or You can add a couple of tablespoons of molasses if you like a very sweet and earthy sauce
  • The time to start brushing this on your meat, pork or chicken, is when the meat has already begun to cook. Use a slow heat and brush it onto the meat, basting it with more sauce each time you turn it. If I use the sauce without any sweetening or apple juice concentrate I will dip my chicken pieces or pork at the beginning of their cooking process and tend accordingly. I am more careful if there are sweeteners in the sauce to avoid burning. Enjoy! You're part of the family, now!
