CHICHARRONES TACOS
A wildly popular Latin snack food throughout the Americas, chicharrones are made from pork belly that has been cooked for a long time with the skin on, and contains a little meat (what we think of as pork rinds in the United States). Though usually eaten as a crispy snack, they also make a tasty taco filling when heated in a sauce until softened and chewy. The most unusual chicharrones are those made from the whole pork skin fried in one piece-they're about four feet long by two feet wide and resemble some dried prehistoric animal. You'll see them for sale on weekends along the highways in areas of Mexico where there are a lot of pigs, sometimes next to a huge pot of pork fat boiling over an open fire. They're almost always made to order; you stop and buy a piece or buy the whole thing. I'm guessing you only see them by the highways because they are so enormous you need a car or pickup truck to get one home.

Steps:
- In a large, heavy skillet, add the pork fat and salt and cook over low heat until the pork has fully rendered its fat and the pieces are puffed and airy, about 40 minutes. Transfer the chicharrones to a large saucepan, add the tomatillo salsa, and cook on medium-high heat until the sauce is almost dried up and coats the chicharrones, about 9 minutes.
- Remove from the heat and serve immediately, or keep warm in the pan until ready to serve.
- To serve, lay the tortillas side by side, open face and overlapping on a platter. Divide the filling equally between the tortillas and top with garnish and salsa. Grab, fold, and eat right away. Or build your own taco: lay a tortilla, open face, in one hand. Spoon on some filling, top with garnish and salsa, fold, and eat right away.
CHUNKY CHICHARRONES

- cube pork into bite size pieces wash and set aside
- In a large ziplock bag combine flour salt pepper garlic powder and shake well
- Heat oil in deep frying pan, place pork into bag and shake well until completly covered deep fry until crispy.
- in seperate sauce pan saute garlic and tomatos in some oil oil when meat is cooked start adding to sauce and top off with fresh Cilantro

- Whisk lime juice, rum, onion, and garlic together in a bowl. Place chicken strips in a shallow glass baking pan and pour marinade over top. Mix up chicken so all pieces are well coated. Cover with plastic wrap and marinate in the refrigerator for 2 to 3 hours.
- Beat egg and water together in a shallow bowl. Mix flour, 2 teaspoons salt, and 2 teaspoons pepper together in a second shallow bowl.
- Heat oil in a large skillet over medium-high heat.
- While the oil is heating, remove chicken from the marinade and shake off excess. Discard the remaining marinade. Dip chicken in the egg wash, then dredge in the seasoned flour mixture until well coated.
- Fry chicken in small batches (don't overcrowd the skillet) in the hot oil until all sides are golden brown and the juices run clear, 8 to 10 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

CHICHARRONES DE POLLO--PUERTO RICAN FRIED CHICKEN
This is my mom's recipe, and still my favorite. It's just as good at room temp as it is hot (well, almost).

- Cut the chicken into chunks. You should get 10-16 pieces.
- Combine the soy sauce, lemon juice, rum, garlic, ginger, and bay leaf in a bowl or zipper bag, add the chicken pieces, and let marinate at least 4 hours in the refridgerator (overnight is best).
- Combine the flour, salt, and pepper, and put on a plate or waxed paper for dredging.
- In an electric fryer, or on the stove, heat the vegetable oil to 375 degrees.
- Once the oil has reached the correct temperature, dredge the chicken 4-5 pieces at a time, and fry until crisp and golden brown. The time will depend on the size of the chicken.
- As you complete each batch, remove the cooked pieces to a rack to drain, and dredge and fry the next batch.
- Serve with rice and beans. A salad is good here, too.

This is a Dominican version of fried chicken with added flavors. You'll fall in love with this recipe. You can serve it with Spanish white rice or you can serve it fried plantains (tostones).

- Combine the chicken, rum, lemon juice, garlic, Worcestershire sauce, garlic powder, adobo seasoning, onion powder, pepper, coriander, and sazon seasoning in a bowl; stir. Cover and allow to marinate in refrigerator 4 hours.
- Heat the oil in a large pot over medium heat to about 300 degrees F (150 degrees C).
- Spread the flour into the bottom of a shallow dish. Coat each piece of marinated chicken with flour.
- Fry the coated chicken pieces in the hot oil in small batches until no longer pink in the center and golden brown on the outside, 5 to 10 minutes.

- Cut chicken into chunks, if you purchase from a butcher have them cut it into chunks to save time and effort. You should get 10-16 pieces.

- As you complete each batch, remove cooked pieces to a rack or paper towel lined plate to drain. Dredge and fry next batch.

- Procure Some Pork Skin. Depending on where you live, this might be the hardest part of making chicharrónes: you need to procure 1 1/2 to 2 pounds of fresh pork skin.
- Cut the pork skin into large pieces. The easiest way to cook chicharrónes is to roast the pork skin in large-ish pieces—about 6 inches long by 4 inches wide is a good manageable size.
- Roast the pork skin. Before you deep-fry the pork skin into puffy chicharrones, you need to roast it for a few hours at low heat to dry it out. Extra fat will drip out of the skin during this phase, so arrange the pork skin on a wire rack set inside a foil-lined rimmed baking sheet to catch the drips.
- Heat the frying oil. Traditionally, chicharrónes are fried in lard, but that can get a little stinky to do at home, so you can use canola, grapeseed oil, or another vegetable oil with a high smoke point instead.
- Deep-fry the chicharrónes. Add a piece of your roasted pork skin and watch it closely. It should start to bubble and pop and expand within 30 seconds—if it doesn't, your oil isn't hot enough.
- Season and Enjoy. As soon as the chicharrónes are finished frying, sprinkle them with salt. You can also sprinkle them with some chile powder or lime zest too if you want—but salt is the most essential ingredient.
