MY TASTY TASTY VENISON & PORK CHILI
My husband loves venison chili. We hope that you will enjoy this spicy dish, which can be made hotter or milder, by adding or decreasing the amount of chili powder and peppers. When cooking with venison, I always add ground pork or bacon because venison is very lean and can dry out easily. For the best tasting chili remove from heat, let the chili cool completely, then cover and refrigerate it until the next day.

Steps:
- In a large pan saute the onions and garlic in oil and butter until they are limp and golden.
- Next add the ground venison & pork, stirring until well browned.
- Then add the rest of the ingredients except for the beans and cook on high for 5 minutes making sure to stir constantly at this stage.
- Lower heat, cover and simmer for 30 minutes.
- Add the drained kidney beans and stir to blend the flavors together.
- Place the chili in a slow cooker on low and cook for 2 - 3 hours.
- Cook until the chili is thickened and rich in flavor.
- Remember to taste your chili as it's cooking to see if you need to adjust your seasonings.
- Adjust the spices accordingly and add more liquid if the mixture gets too dry.
- Top with a mixture of shredded cheddar & Monterey jack cheese & thinly sliced green onions.
PORK CHILI
I searched all over for a pork chili using minced (ground) pork, but couldn't find one (or one to suit) so came up with my own version. Russell thought it was an actual recipe and gave it 5 stars ;-) This doesn't make a huge pot of chili like some recipes I see, but is enough for 4 hearty eaters. We like our chili over rice.

Steps:
- Heat the oil over medium heat and fry onion and garlic gently until softened (about 10 minutes).
- Add pork and chorizo sausage and cook unti pordk changes colour.
- Add the spices, sugar, cocoa, stock powder and sugar and stir cooking for about 1 minute.
- Add the tomato paste to the pan and cook it for a few minutes-I think this takes away the "raw" taste.
- Add the water and tomatoes and simmer for about 1 1/2 hours and until it is a nice thick consistency (add more water if it gets too thick).
- About 15 minutes before serving, add the kidney beans to the chili.
- We like to eat our chili topped with sour cream, grated cheese and pickled jalapenos and sometimes guacomale.

- In a large skillet, brown pork in 2-3 T of olive oil. (My uncle also adds a little beer.).
- Mix all ingredients in a large pot and simmer for at least 3 hours.
- Let set and cool over night for all spices to blend.
- Reheat and serve!

PULLED PORK CHILI VERDE
All I can say is yummm! This is a different take on chili (with no beans) that I found absolutely delicious! Hope you enjoy it as much as I do! Enjoy with a dollop of sour cream and tortilla chips or use as a taco filling.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Cut off about 1/4 inch the top of the head of garlic to expose the cloves. Brush the cut cloves with a small amount of olive oil and nestle the head into a piece of aluminum foil; place on a baking sheet.
- Bake in preheated oven until cloves are tender and browned, about 45 minutes. Remove garlic from the oven and cool until easily handled, about 15 minutes. Squeeze out cloves and chop.
- Preheat the oven's broiler. Line a baking sheet with aluminum foil.
- Place tomatillos, green bell peppers, Anaheim chile peppers, jalapeno peppers, and sweet banana peppers, cut-sides down, onto the lined baking sheet.
- Cook under the preheated broiler until the skin of the tomatillos and peppers has blackened and blistered, 5 to 8 minutes. Transfer to a bowl and cover tightly with plastic wrap. Allow tomatillos and peppers to steam as they cool, about 10 minutes. Remove and discard skins.
- Transfer peeled tomatillos and peppers to a blender or food processor; blend into a smooth green sauce.
- Heat olive oil in a large pot over medium heat. Add onions and celery; cook and stir until onions are glistening, about 5 minutes. Add chopped roasted garlic, shredded pork, cilantro, oregano, coriander, cumin, cinnamon, nutmeg, salt, and black pepper. Pour in 1 cup chicken stock; bring to a simmer.
- Stir green sauce mixture into the pot. Add coconut milk. Bring to a boil; reduce heat and simmer. Cook until chili thickens, about 30 minutes. Stir in chicken stock and continue cooking until chili reaches desired consistency, 30 to 90 minutes.

MOJO PORK CHILI
Adapted from a Publix recipe, this is wonderful alternative to traditional chili. I serve this in either sourdough or pumpernickel bread bowls. The Zesty Wedge Salad is a perfect accompaniment to this dish. This goes together very quickly and is quite filling. While not spicy, you could easily change that by adding pepper sauce (or hot sauce) to your preferred level of heat.

- In a large stock pot, saute the pulled pork and chopped onion in the canola oil 2-3 minutes until onions are soft.
- Stir in the broth, marinade, beans, and potatoes.
- Cover and simmer on low for at least 20 minutes.
- While the stew is simmering, chop the cilantro, olives and avocado and set aside.
- Cut the tops off the bread bowls and hollow out insides, taking care to leave a thick shell, then set aside.
- Stir rice into the chili and simmer for an additional 5 minutes.
- To serve, ladle chili into bread bowls, then top with chopped olives, avocados, and cilantro.

UNCLE DONALD'S CHILI
By far the best tasting chili I've ever had! Easy to make and easy on the wallet. Sometimes I only add the one pound of ground beef and a extra can of beans to replace the sausage. And of course serve it with cornbread! Tip: If you don't like the acidy flavor/effect the canned tomatoes give off, when the chili (or any other tomato based sauce like spaghetti) is boiling, stir in a half teaspoon of baking soda. It'll bubble and foam up for a minute then disappear. It'll magically remove it. For me, it's a must!

MEXICAN PORK CHILI

- Preheat oven to 325 degrees F.
- Season the pork shoulder with salt, pepper, fennel and cumin. Take a large roasting dish and place over medium-high heat. Add a 3-count of olive oil and sear pork shoulder all over until golden brown on the outside, 3 to 4 minutes per side. Add vegetables, spreading out tomatillos, poblanos, onion, garlic and bay leaf around the seared pork shoulder. Drizzle with olive oil, squeeze lime juice all over and season with salt and pepper. Cover the whole tray with aluminum foil and roast in the oven for 2 to 2 1/2 hours until the pork is falling apart. Remove from oven, set the pork aside and pull apart. Rake all the other ingredients into a blender (a bit at a time) with the bunch of fresh cilantro and process until smooth. Pour into a large Dutch oven. Set over medium heat and add chicken stock. Bring to a simmer and whisk in masa harina to thicken the sauce up. Fold in shredded pork shoulder and season with salt and pepper to finish. Serve with Chili bar toppings.
GREEN PORK CHILI
A colleague of mine brought this in years ago for a soup potluck lunch and I fell in love with it. I love big batches of soup to freeze (especially when I was single and just wanted to come home to a good dinner...) and this one is perfect. I've also added beans, potatoes, carrots, celery and whatever else looked like it needed to be used up. Nowadays I don't usually add the jalapenos (daughter doesn't like heat...so sad....)...but love having this to warm things up. You can make it soup-like or more stew like depending upon your preference by adding more broth.

- Place pork in crock pot with chicken broth and garlic; cook on high for 6-8 hours until fork tender.
- Remove pork, reserve liquid and garlic cloves. Cool until easy to handle then chop into bite sized pieces.
