BLUEBERRY CHEESECAKE CRESCENT ROLLS
"Not only are they absolutely delicious and definitely a special treat....but they couldn't be easier to make. Start to finish in less than 20 minutes", Recipe and description by Cathy of Lemon Tree Dwelling Blog. It took me about 30 minutes prep and 9-12 minutes baking time but is well worth the time spent on these delicious treats! Putting this here for safekeeping:)

Steps:
- Unroll crescent dough; separate into 8 triangles on a baking sheet lined with parchment paper.
- In a small mixing bowl, combine cream cheese, 2 Tbsp. sugar, and 1 teaspoons vanilla. Mix until smooth.
- Fold in blueberries.
- Fill each crescent triangle with approximately ¼ cup filling. My note: (you may want to measure out 8 servings of this mixture in a separate dish so you don't run out. If needed add extra blueberries to make 8 separate fillings for the rolls).
- Fill each crescent triangle with approximately ¼ cup filling.
- Tuck edges to seal. My note: Gently form them into rectangles.
- In a separate bowl, combine flour, 2 Tbsp. butter, and 2 Tbsp. sugar. Mix until crumbly.
- Divide evenly among crescent rolls and sprinkle on top of each roll.
- Bake at 375 degrees for 12-15 minutes or until light golden brown. Check the bottoms at 9 minutes and watch carefully.

Steps:
- Combine warm water and 1 teaspoon sugar in a large mixing bowl. Sprinkle yeast over the surface. Let sit until yeast becomes foamy, about 10 minutes. Stir in 2 cups flour, eggs, 1/4 cup sugar, and melted butter; mix until dough takes on the consistency of oatmeal. Add remaining flour. Knead with fists until dough is smooth and elastic.
- Turn oven to warm setting. Place dough in a lightly oiled bowl; set inside oven. Warm until dough has doubled in volume, about 1 hour.
- Remove risen dough from oven; punch down dough with hands until deflated. Place back in oven; allow to rise until doubled again, about 45 minutes. Remove from oven and punch down dough to deflate. Place on a lightly floured surface.
- Lightly grease 12 muffin cups.
- Divide dough into 12 equal portions. Roll out portions with the palm of your hand to flatten, shape into small rectangles. Place blueberries evenly in the center of each dough portion. Roll up dough and pinch the ends together; place rolls seam-side up into muffin cups. Sprinkle white sugar over roll tops. Allow to rise for 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven until lightly browned, about 20 minutes. Remove from the oven and carefully loosen the edges to remove the rolls from the muffin cups.

Steps:
- Preheat the oven to 350 F and spray or grease a 9-inch square baking pan.
- In a large bowl, whisk together flour, sugar and baking powder. Cut butter into small pieces. Add egg, milk, butter and lemon peel; mix just until dry ingredients are moistened. You may need to finish mixing with your hands to get all the flour incorporated. the batter will be very thick.
- Fold in the blueberries. Because the batter is so thick, this may take a few minutes. Spread into a greased 9-in. square baking pan.
- For topping, combine sugar, flour, walnuts and cinnamon in a mini food processor or bowl. Add butter and process, or cut in if doing by hand, until mixture is crumbly. I like to do this with my fingers so I can tell when it's ready by touch. Sprinkle over batter. Bake at 350 degrees F for 40-45 minutes or until cake tests done.
- For drizzle, combine the powdered sugar and milk. If too thick, add a few drops of additional milk at a time until it reaches drizzling consistency. Drizzles over the top of the cake and allow to sit until sugar solidifies.

- Preheat oven to 350 degrees. Coat a 9-inch loaf pan with cooking spray. Cut a piece of parchment paper to fit the bottom of the pan, then spray it with a little additional spray.
- In a mixing bowl, beat together butter, 1 cup sugar, 3 tablespoons juice and eggs. Combine flour, baking powder and salt; stir into egg mixture alternately with milk. Beat in lemon zest. Toss blueberries with just enough flour to coat. (This helps keep them evenly distributed throughout rather than sinking to the bottom.) Gently stir blueberries into batter, then pour batter into prepared pan.
- Bake in preheated oven for about 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean. (You may want to check at 45 minutes.) Cool bread in pan for 10 minutes.
- Meanwhile, combine 2 tablespoons lemon juice and 1/3 cup powdered sugar in a small bowl. Drizzle over warm loaves, using pastry brush to evening distribute. Finish cooling in pan on wire rack. (Note: If you want to take the loaves out of your pan, remove from pan after 10 minutes of cooling and before drizzling with glaze.)

- Combine the frozen blueberries, sugar, and cornstarch in a bowl. Gently toss around and let sit while you prepare the dough.
- Set aside 1/2 cup of flour. In a large bowl, toss the remaining flour, sugar, salt, and yeast together. Set aside.
- Heat the water, milk, and butter together in the microwave until the butter is melted and the mixture is hot to touch. About 115°F (46°C)-120°F (49°C). Stir the butter mixture into the flour mixture. Add the egg and only enough of the reserved flour to make a soft dough. I only needed 1/3 cup, but you may need the full 1/2 cup. Dough will be ready when it gently pulls away from the side of the bowl and has an elastic consistency.
- On a lightly floured surface, knead the dough for about 5-6 minutes. Place in a lightly greased bowl (I used non-stick spray) and let rest for about 10 minutes.
BLUEBERRY BREAKFAST RECIPES: 14 DELICIOUS OPTIONS
From greatist.com

- Blueberry Buttermilk Pancakes. Sunday mornings somehow feel a little bit more complete with a stack of blueberry buttermilk pancakes. We like to sprinkle the berries onto each pancake as they cook, ensuring that no one cake gets shorted.
- Ultimate Blueberry Muffins. Store-bought blueberry muffins tend to be all cake and not enough blueberry. This recipe rights those wrongs by not only jam packing each muffin full of berries, but also by adding a crisp streusel crumb on top to keep things lively.
- Blueberry Cornbread Muffins. When you add blueberries to cornbread muffins, it’s almost as if the jam is baked right in. Serve these puppies warm with some salted butter.
- Whole-Wheat-and-Almond Blueberry Muffins with Streusel Topping. Or if you think that most blueberry muffins are all fluff and sweetness, these will suggest otherwise.
- Blueberry-Spice Coffee Cake. Choosing between blueberry muffins or coffee cake while staring at the pastry case is an impossibly hard decision, the hardest one you might make before you’ve had your morning latte.
- Gluten-Free Banana-Blueberry Waffles. Good waffles have a crackly, crisp exterior, which this gluten-free batter aces with ease. A schmear of butter that melts into the crevices will make the blueberries’ little bursts of sweetness all the more easy to enjoy.
- Blueberry Cobbler. Simple enough to make by the campfire but tasty enough to make on a Sunday morning at home, this blueberry cobbler recipe is made of just flour, butter, baking powder, buttermilk, a moderate amount of sugar, and fresh blueberries—so yes, you can totally eat it for breakfast too.
- Lemon Blueberry Granola. Blueberries aren’t just soft and squishy, they can have a bit of an edge, too. This recipe pairs the dried berries up with almonds, oats, flax seed, and lemon zest for a granola that crunches and captivates with each bite.
- Quinoa Berry Breakfast Bowl. Chock-full of protein, quinoa is a healthful and energizing food to start off the day with. You might know it mostly as a savory staple, but blueberries and chocolate can help coax it over to the sweet side.
- Blueberry Lemon Sweet Rolls. When these rolls go in the oven, they’re mere swaths of pale dough with fresh blueberries tucked between the layers. But when they come out, they’re golden spirals with succulent indigo juice seeping from the crevices—how’s that for a total transformation?

- Now mix in your flour 1 cup at a time, eggs, salt, and sugar. You will mix until the dough is formed into a ball and not super sticky to the touch. You might not use all the flour listed above.
- Once the dough is ready, you will place it in the Instant Pot on the yogurt setting for 30 minutes. Use a glass lid or plate to cover the top of the Instant Pot. But, if you don't have an Instant Pot feel free to cover and let rise on a bowl for 1 hour or 2 hours, or until doubled.
