TRADITIONAL KEY LIME PIE

I have been making this pie for many years. Every time that I serve it, people say "this is what a key lime pie is supposed to taste like". And they are right. I have tried those pie recipes using cream cheese or cool whip, but they are not authentic key lime pies. If you want the "real deal", this is it.

4 eggs, separated with one egg white separate by itself
1 (14 ounce) can sweetened condensed milk
1/2 cup key lime juice
3 teaspoons grated lime rind
1 8 inch pie shell or 1 9-inch pie shell, baked and cooled
1/2 teaspoon cream of tartar
1/3 cup sugar

Steps:

  • Beat egg yolks.
  • Stir in sweetened condensed milk, key lime juice and rind.
  • In a small bowl, stiffly beat 1 egg white.
  • Fold into pie mixture.
  • Turn into baked pie shell.
  • Beat the three reserved egg whites with cream of tartar until foamy.
  • Gradually add sugar, beating until stiff but not dry.
  • Spread meringue on top of pie, sealing carefully to the edge of the pie shell.
  • Bake 15 minutes at 350° or until meringue is golden brown.
  • Cool in refrigerator at least 6 hours.

20 chicken wings
1/2 cup honey
1/2 cup dark vinegar
1/2 cup dark brown sugar
2 eggs
2 tablespoons flour
2 tablespoons yellow mustard
1/2 cup kentucky Bourbon
9 ounces horseradish

Steps:

  • Mix the honey, vinegar, sugar, eggs and flour until smooth.
  • Heat on medium high in saucepan until it thickens and just begins to boil.
  • Stir constantly to prevent sticking. Then add the mustard and bourbon. Let on one more minute.
  • Remove from the heat then add horseradish, combining thoroughly.
  • Dip each wing in the mixture, place on a greased cookie sheet, and bake for about 45 minutes.

1 can sweetened condensed milk, 14 ounces
1/2 cup Key Lime Juice
2 teaspoons grated lime zest
2 eggs separated
1/4 teaspoon cream of tarter
1/4 cup sugar
5 tablespoons butter melted
1 1/2 cups graham cracker crumbs
1/2 cup almonds slivered

Steps:

  • Crust: Combine 5 tablespoons butter melted 1 1/2 cups graham cracker crumbs 1/2 cup almonds slivered Combine all crust ingredients and pat in a 9 inch pie pan. Bake 5 to 10 minutes. Filling: In a medium bowl, combine milk, lime juice, and 1 teaspoon zest. Blend in egg yolks. Pour filling into crust. Meringue: beat the egg whites with cream of tarter until soft peaks form. Gradually beat in sugar and 1 teaspoon zest until the mixture is stiff. Spread meringue over filling, spread it to the edge of the crust. Bake at 350 for 12 to 15 minutes or until meringue is golden brown.

Crust:
1 1/4 cups graham cracker crumbs
1/2 cup sugar
1/2 cup slivered almonds
1/2 cup clarified butter, melted
Filling:
2 (14 oz) cans sweetened condensed milk
6 egg yolks
1/2 cup store-bought key lime juice
1 Tbsp. fresh key lime zest
Juice of 1 key lime (about 3 Tbsp)
2 tsp. vanilla extract

Steps:

  • Preheat oven to 325, Lightly grease a 9-inch deep-dish pie plate. In a medium bowl, combine graham cracker crumbs, sugar, and almonds. Pour in melted clarified butter (gently heat butter until melted. Once butter has separated, use a spoon to remove white foam from the top. Carefully pour off golden liquid, leaving behind milky solids without mixing back into butter. Discard solids. About three fourths of the original amount will remain. Clarified butter is ready to use)and mix well. Gently press in bottom and up sides of prepared pie plate. In a medium bowl, combine condensed milk, egg yolks, store bought juice, zest, fresh key lime juice and vanilla extract; stirring to mix well. Evenly spoon mixture into pie crust. Bake for 30 mins. or until set. Let stand at room temperature for 30 mins. Refrigerate until ready to serve.
