BAKED SCALLOPED POTATOES WITH CHEESE
These scalloped potatoes are EXTRA cheesy thanks to three cheeses used as well as super rich and CREAMY!! They're a perfect HOLIDAY SIDE DISH as well as family friendly weeknight COMFORT FOOD!

- Preheat oven to 400F and to a 9×13-inch casserole dish or baking pan, arrange the potatoes upright in the pan along one of the long edges. Repeat with the remaining potatoes until you have three columns of potato slices; set aside. Tip - If you have a mandoline, use it here!
- To a saucepan, add and melt the butter, add the onion and garlic, and cook for 5 minutes; stir frequently.
- Add flour, and cook for another minute, whisking nearly constantly, or until the flour is lightly golden browned. This is what's called a 'roux' and is important so that later on the mixture properly thickens.
- Add the salt, seasoning blend, pepper, broth, cream, and stir until somewhat thickened, about 3 minutes.
- Turn off the heat and stir in 1 cup each of the Colby Jack and cheddar cheeses and 1/2 cup of the Parmesan; set aside momentarily.
- Spread the sour cream over potatoes and pour the cheesy mixture evenly over potatoes.
- Evenly sprinkle the remaining one-half cup of each of the three cheeses over potatoes.
- Cover potatoes with foil and bake for 1 hour, remove from the oven, and check for doneness. The potatoes should be fork tender and not at all hard. If they're not cooked through yet, recover with the foil and bake for an additional 10 to 15 minutes, or as long as necessary so they cook through.
- After the potatoes have cooked through completely, remove and discard the foil, and allow the potatoes to bake uncovered for an additional 30 minutes, or as desired to brown the cheeses. In the final moments of baking the potatoes uncovered, keep a close eye on them so you know exactly how fast the cheese is browning**
- Allow potatoes to cool momentarily before serving, about 5 minutes.

- Preheat oven to 350 degrees.
- Boil potatoes in skins; peel and grate.
- Heat ¼ cup butter with cream of chicken soup over medium heat.
- Blend sour cream, onions and cheese into soup until cheese is melted
- Stir in potatoes.
- Place in buttered 9x13 inch baking dish.
- Sprinkle with salt and pepper.
- Bake for 45 minutes.

CRISPY CHEESY SMASHED POTATOES
I had a few ingredients and wanted to do something different with some baby red potatoes that I had. I love bacon, blue cheese, and green onions, so I threw them all together and this is what I came up with. The combination of the three together is absolutely fantastic!

Steps:
- Preheat the oven to 450 degrees F (230 degrees C).
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain.
- Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle. Reserve bacon grease.
- Grease a baking sheet with a small amount of the bacon grease and place potatoes on the sheet. Smash potatoes with the bottom of a glass, then brush with more bacon grease. Repeat once more (smashing/brushing). Lightly salt potatoes.
- Roast potatoes in the preheated oven until crispy, about 15 minutes. Top with blue cheese and crumbled bacon. Bake until cheese is melted, about 5 more minutes.
- Top with green onions and serve.

- Boil potato chunks in salted water until tender; about 12-15 minutes, depending on the size of your chunks. Drain. Place in a large mixing bowl and mash with a potato masher.
- Sauté onion in 1 tablespoons butter until transparent.

Steps:
- Add frozen potatoes to 13 X 9 pan, set aside.
- In heavy sauce pan, over low heat,add half and half, margarine, onion, and cheeses and mix until melted and smooth, stirring frequently.
- Add salt and pepper to taste.
- Pour over potatoes.
- Allow to set approximately 1 hour at room temperature.
