Pesto Chicken made with fresh basil, spinach, garlic, walnuts and Parmesan cheese to make each bite irresistible!

Number Of Ingredients 10

2 1/2 pounds boneless skinless chicken breast (4 pieces, pounded to 3/4-inch thickness)
1/2 cup extra-virgin olive oil ((120ml), plus more for drizzling)
1/2 teaspoon kosher salt (plus more for seasoning)
black pepper (as needed for seasoning)
1 cup basil ((30g, 1 ounce) packed)
1 cup baby spinach ((30g, 1 ounce) packed)
3 cloves garlic (unpeeled)
1/4 cup walnuts (plus more for garnish)
1/4 cup grated parmesan cheese (plus more for garnish)
1 cup diced tomatoes (1/4-inch dice)

Steps:

  • Place oven rack to the center position. Preheat oven to 450°F.
  • Drizzle both sides of the chicken breast with olive oil. Season both sides of the chicken with salt and pepper.
  • Place chicken in an ovenproof baking dish or skillet.
  • Bake in preheated oven until the internal temperature of the chicken is no longer pink and reaches an internal temperature of 165°F, about 15 to 18 minutes.
  • Meanwhile, make the pesto. Place the basil and spinach in a resealable plastic bag. Use a rolling pin to lightly bruise the herbs and greens. Transfer to a food processor or blender.
  • Heat a medium-sized skillet over medium heat. Toast garlic until the outsides are lightly browned, shaking pan occasionally, about 8 minutes. Peel garlic and add to food processor.
  • Place walnuts in the same pan and toast over medium heat, 3 to 4 minutes. Transfer to food processor.
  • Add 1/2 teaspoon salt to the food processor.
  • Process pesto by pulsing five times to help break down the greens.
  • Turn food processor on low speed, as it's running slowly drizzle in 1/2 cup olive oil until a smooth pesto with some smaller pieces is formed, about 10 seconds from start to finish.
  • Add the parmesan cheese to the pesto and process on low speed for 5 seconds.
  • Taste and season with salt and pepper as desired. Transfer pesto to a small bowl.
  • Brush some pesto sauce on each cooked chicken breast. Transfer to a serving platter.
  • Top chicken with chopped walnuts, tomatoes, and cheese. Serve extra pesto sauce on the side.

  • Toss in the pasta and cherry tomatoes, stirring until evenly coated. Remove from heat.
  • To serve, sprinkle parmesan cheese and basil on top!

4 cloves garlic, sliced
1 large pinch kosher salt, plus more to taste
½ cup chopped raw walnuts
½ cup chopped Italian parsley
Juice from one lemon
2 tablespoons extra virgin olive oil
water, if needed

Steps:

  • Place garlic and salt in a mortar; smash and mash with the pestle until it becomes a paste, 5 to 8 minutes. Add walnuts; mash walnuts into a paste until you reach your desired texture (coarse or smoother), another 5 to 8 minutes. Add parsley and mash to break up and blend with the walnut/garlic mixture, about 4 minutes. Add lemon juice and olive oil; stir, mash, and emulsify liquids into the mixture until it becomes very thick and well blended, 8 to 10 minutes. Taste and adjust seasonings. If mixture seems too thick, whisk in a tablespoon of water, or as needed.
  • Spread on bread, use on pizza or pasta, or on roasted chicken. The taste is just like garlic butter, so use it as such.

2 cups fresh basil leaves (packed)
1/3 cup parmesan cheese (freshly grated)
1/2 cup extra virgin olive oil
1/3 cup walnuts (chopped)
3 garlic cloves (medium sized, minced)
1 teaspoon kosher salt
1 teaspoon white pepper
2 lbs chicken breasts (Diced, Boneless, Skinless)
3 garlic cloves (smashed)
1 lb egg noodles

Steps:

  • Combine the basil in with the walnuts, pulse a few times in a food processor. Add the garlic, salt and pepper then pulse a few times more.
  • Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated cheese and pulse again until blended.
  • If the chicken is frozen, then cook the chicken in about a half cup of water till it is thawed enough to dice into cubes. Smash the garlic and add to the water and finish cooking the chicken.
  • Boil a pot of water and add the egg noodles and cook to desired softness, I like mine a little al dente so it only took about 6 minutes. Drain the water from the noodles and chicken and mix it all together with the pesto.

1 tomato, thinly sliced

Steps:

  • Remove leaves from basil stem, then place in a food processor (paid link) along with the garlic cloves and walnuts. Pour half of the olive oil into the food processor (paid link) and blend ingredients.
  • Slowly drizzle in the remaining olive oil and blend until smooth.
  • Add blended pesto into a bowl and stir in grated parmesan cheese, black pepper, salt, and garlic powder.
  • Cut fresh mozzarella cheese into thick slices and cut tomatoes into thin slices.
  • Cut boneless chicken breast in half lengthwise and season both sides evenly with Italian seasoning, black pepper, garlic powder, ground thyme, salt, and onion powder.
  • Heat a cooking pan to medium-high heat and add the olive oil.
  • Cook chicken breast for 4 minutes on one side, then flip. Immediately layer the cooked side with pesto, mozzarella cheese, and one or two tomato slices. Cover and cook for an additional 4 minutes.
  • Remove from the heat and drizzle balsamic glaze on top. Serve immediately.

Our baked chicken is flavored with prepared pesto sauce, garlic, and Parmesan cheese. You can use prepared or our easy homemade pesto for this recipe.

1 chicken, about 4 pounds, (quartered) or about 4 pounds of chicken parts
4 tablespoons prepared pesto
4 large cloves garlic (finely chopped)
juice of 1 lemon, or about 2 tablespoons fresh lemon juice
1 tablespoon olive oil
1/4 cup shredded Parmesan cheese

Steps:

  • Line a 9-by-13-by-2-inch baking pan with foil and then lightly grease the foil.
  • Trim excess fat and remove the skin from the chicken, if desired. Sprinkle the chicken pieces lightly with kosher salt and freshly ground black pepper and place in the prepared pan.
  • Combine the pesto, garlic, and lemon juice; rub the mixture evenly over the chicken pieces. Cover the pan tightly with foil and refrigerate for 1 to 2 hours.
  • Heat the oven to 375 F.
  • Remove the foil and drizzle the chicken breasts lightly with olive oil. Bake in the preheated oven for 55 to 65 minutes, or until chicken is cooked. Juices will run clear when chicken is pierced with a fork. The minimum safe temperature for chicken is 165 F (USDA Guidelines).
  • Sprinkle with shredded or grated Parmesan cheese and continue baking for about 2 to 3 minutes longer. Optional Homemade Pesto
  • Combine 2 cups of fresh basil leaves and about 1/3 cup of pine nuts in a food processor. Pulse 5 to 7 times to chop the basil finely. Add 1/2 cup of grated Parmesan cheese and 2 teaspoons of chopped garlic and pulse 4 or 5 times more. With the processor running, add 1/2 cup of extra virgin olive oil in a steady stream. Transfer the pesto to a bowl. Taste and add salt and freshly ground black pepper, as desired.
  • Store fresh pesto in a tightly covered container in the refrigerator for about 1 week. If you won't be using the pesto right away. A thin layer of olive oil drizzled over the pesto will keep it looking fresh and bright.
  • Freeze homemade pesto -- without the cheese -- in an airtight freezer bag or container for up to 6 months. Add the cheese before using.
  • Spinach and Basil Pesto - Follow the recipe above, but use half spinach leaves and half basil leaves.
