CARB FREE CLOUD BREAD
These are a delicious home-made bread replacement that is practically carb free and very high in protein. They are just like heaven so I call them clouds.

Steps:
- Preheat oven to 300 degrees.
- Separate the eggs very carefully, there must be no yolk in the white.
- In one bowl, mix together the egg yolks, the 3 T. of Cottage Cheese OR Cream Cheese and the one packet of Sweetener until smooth.
- In the other bowl add 1/4 teaspoon of Cream of Tartar to the whites and beat the whites on high speed until they are fluffy and form nice peaks.
- Very carefully fold the egg yolk mixture into the egg whites until mixed, but try and not break down the fluffiness of the egg whites too much.
- Spray two cookie sheets with Pam or other fat-free cooking spray.
- With a large spoon, "scoop" the mixture into 10 even rounds on the sheets (about the size of the top-half of the McDonalds hamburger bun; roughly 3/4 inch thick and 4 to 5 inches across).
- Bake on the middle rack. Here is when you have to watch them, because the cooking time is not the same on any two batches. It is somewhere around 1/2 hour, but it could be less or more. You just need to watch them until them become nice and golden brown (again, the color of a McDonalds bun).
- Remove from the pans and cool on a rack or cutting board.
- While warm they are crumbly and similar to cooked meringue - but don't let this fool you! Once completely cool, seal them in a ziplock storage baggie or a tupperware over night. They will totally change their consistency, to something much more like bread - a softer texture that is nice and chewy. If you do not like softer chewy bread, then eat them as they are, nice and crisp.
- Since the sides that were facing the pan are perfectly flat, you use these to spread things on, or make sandwiches, or even as a burger bun! The choice is up to you, and you will be quite amazed at how much like a bun these really are!

These biscuits are light and fluffy, just like their name implies. Perfect for biscuits and gravy, breakfast sandwiches, or alongside fried chicken.

- Preheat the oven to 450 degrees F. Sift the flour, sugar, salt, and baking powder together into a bowl. Add the shortening and cut it into the flour mixture with a pastry blender until it resembles coarse crumbs. Whisk together the egg and milk. Add it to the flour mixture and stir until it forms a dough. Turn the dough out onto a floured work surface. Knead the dough approximately 20 times. Roll the dough out to a 3/4-inch thickness. Cut the biscuits using a floured 2-inch biscuit cutter. Place the biscuits on an ungreased baking sheet. Place the baking sheet in the oven and bake at 450 degrees F for 10-13 minutes or until lightly browned. Remove the baking sheet from the oven and transfer the biscuits to a wire rack to cool slightly. Serve the biscuits warm or let cool completely and store in an airtight container.

- Preheat oven to 450.
- In a medium bowl mix together the flour and sugar.
- Grate cold butter into bowl and mix until crumbly.
- Mix together egg and milk. Add to bowl and stir just until dry ingredients are moistened.
- Turn onto floured board and knead 3 to 4 times.
- Pat or roll out to 1/2 inch thickness.
- Cut out with a 3 inch biscuit cutter.
- Place on an ungreased baking stone or sheet.
- Bake until golden brown, about 10-12 minutes.

- Preheat oven to 450 degrees.
- Mix dry ingredients.
- Cut in shorting with a pastry blender or a couple butter knives.
- Stir in milk and egg.
- Knead with flour until doughy (not so sticky).
- Roll out 3/4 to 1 inch and cut with biscuit cutter.
- Place close together on an ungreased cookie sheet.
- Bake for 10-15 minutes until the tops begin to brown.
- (check the bottoms to make sure they're cooked through).
- I usually double this recipe if I'm making them for a main course (biscuits & gravy) or use as is for a dinner bread with the meal.

- In large bowl, mix dry ingredients.

CLOUD BISCUITS
This is an old family recipe from my grandmother. These are VERY easy and was the 1st recipe I ever made (at 5 years old). These turn out so light and fluffy, you won't believe it.

Steps:
- 1. Pre-heat oven to 400 degrees
- 2. Beat the egg and milk in a small bowl and set aside
- 3. Put the flour, baking powser, salt and shortening into a mixng bowl. With a pastry blender (or 2 forks) work the flour mixture into the shortening until mealy. Add the egg/milk mixture and mix until combined (this will be sticky)
- 4. Pour out onto floured countertop or board. Sprinkle about 1/2 cup flour over the top and knead for 3 to 5 minutes. Flatten with your hand or a rolling opin until about 1/2 inch thick, and cut out your biscuits.
- 5. Place into an ungreased pan and bake for 10-15 minutes until browned on top. (Check a middle one to be sure they are completely done)
- 6. You now have a wonderful base for Sausage Gravy and Biscuits, GREAT for strawberry shortcake, biscuits with butter and honey....use your imagination!
