NALYSNYKY (UKRAINIAN CREPES)

This is an original Ukrainian recipe for their Nalysnyky - pronounced: Nah-less-knee-key. A very tasty roll up.

Number Of Ingredients 12

4 large eggs
1 cup whole milk, homogenized
6 tablespoons cold water
1 cup all-purpose flour
1/2 teaspoon salt
2 cups cottage cheese
2 large egg yolks
2 tablespoons whipping cream
1/4 teaspoon salt
1 teaspoon chopped fresh dill weed or 1/2 teaspoon dried dill weed
1/8 cup butter (for frying)
1/4 cup butter, for dotting

Steps:

  • TO MAKE CREPES.
  • In a bowl, using a hand held electric mixer, beat eggs until light and fluffy.
  • Add milk, water, flour and salt and beat until all ingredients are incorporated and batter is smooth.
  • Heat a 6 inch frying pan on medium heat.
  • Butter the pan lightly and pour about 1/4 cup of batter into the pan, swirling the pan until the batter spreads evenly in the pan.
  • Cook crepes on medium heat for about 1 minute or until lightly browned.
  • Bake on 1 side only, do not turn over.
  • Continue to cook the crepes, buttering the frying pan each time.
  • Place the cooked crepes on a platter and keep warm in the oven at 250°F.
  • TO MAKE CHEESE FILLING.
  • Place the cottage cheese in a cheese cloth and squeeze out as much moisture as possible.
  • Transfer the cheese to a mixing bowl.
  • Add egg yolks, cream salt, and dill weed and mix to blend well.
  • Remove warmed crepes from the oven and increase oven temperature to 350°F.
  • Separate and place 1 crepe with the brown side down on a smooth surface.
  • Spoon about 1 heaping tablespoon of cheese filling near one edge of the crepe.
  • Start rolling the crepe over the filling, tuck in each side to prevent the filling from falling out, and continue to roll.
  • Continue to fill and roll the remaining crepes.
  • Place the finished nalysnyky into a lightly buttered 13 inch by 9 inch oven proof casserole dish in layers.
  • Dot each layer with some butter.
  • Bake in preheated 350 F oven for 20 minutes.
  • Serve hot with melted butter, a dollop of sour cream or yogurt.

Here is a different way to make the crepes. This crepe uses baking powder. Cook the crepes until top is just dry before you flip over and cook on the other side for a few seconds. Since I did not have cottage cheese I used Ricotta cheese. I did not have sweet cream so I used Carnation Evaporated milk to cover first layer of pancakes.

2 eggs, well beaten
1 1/2 cups milk
1 tablespoon sugar
1/4 teaspoon vanilla
1 1/4 cups all-purpose white flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon oil
2 cups cream-style cottage cheese
2 eggs, well beaten
1/4 teaspoon salt
1 tablespoon sugar
1 tablespoon chopped dill
sweet cream, to pour over pancakes (just to cover in one layer)

Steps:

  • TO MAKE THE BATTER, mix eggs, milk, and 1 Tablespoon sugar together.
  • Add vanilla and oil.
  • Sift flour, baking powder and salt together and add to milk mixture, stirring until smooth.
  • Using a greased frying pan, fry the batter into thin pancakes like you would do crepes using 1/4 cup of batter per crepe.
  • Use a 7 inch non-stick crepe pan or any non-stick pan of that size.
  • Swirl the batter around to cover pan.
  • I use a brush to lightly brush pan each time with oil or butter.
  • TO MAKE THE FILLING, mix cottage cheese, eggs, salt, 1 Tablespoon sugar and dill.
  • Spread over each pancake with filling about 2 tablespoons and roll up like a jelly roll.
  • Arrange on a well buttered casserole, and pour sweet cream over nalysnyky.
  • Bake at 300 F, for 35 minutes. Uncover towards the end so that they will brown a little. Serve with sour cream. Makes about 12 nalysnyky.
  • For dessert Nalysnyky leave out the dill in the cottage cheese and add a bit more sugar to taste if you wish.

When my husband was a teen he lived with a Ukrainian family in Dauphin, MB. This was one of his favourites. He now makes it every Christmas and is required by several friends to make "care" packages for them. Very rich and delicious. Tub size 4 x 8 x 2 1/2 inch

12 beaten eggs
1 1/2 cups water
1 teaspoon salt
1/2 cup melted butter
1 1/2 cups milk
2 -2 1/2 cups flour
2 lbs dry curd cottage cheese
1 tablespoon sugar
5 eggs
salt
2 tablespoons margarine

Steps:

  • Crepe: Mix all ingredients together.
  • To a hot skillet add 1 tsp.
  • of oil, pour ¼ cup batter spreading it evenly on the whole bottom of the skillet.
  • Fry lightly on both sides.
  • Flip them over on a pile in a dish.
  • Filling: Beat eggs well and melt margarine.
  • Add to cheese filling.
  • Spread the filling in an even layer over the crepe and roll, cut in the middle and place in baking dish with the cut ends against the side of the pan.
  • At this point you can cover the nalysnky and freeze for later or proceed to baking.
  • When you decide to bake the nalysnky, pour heavy or whipping cream over the top, cover and bake for 20 - 25 minutes at 300° Fahrenheit.
  • Watch that they do not get scorched.

Mom made this for all the occasions, Thanksgiving, Easter, Christmas, sometimes birthday's if we begged loud enough. My baba taught her, so it is traditional, but it is different than the other's posted here. A little sweet, a little lemony. We had it as a side during the big meal (a pallet cleanser), but it is good for breakfast with fruit, light lunch with seafood, and excellent with a sauce.

Number Of Ingredients 13

3/4 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1 tablespoon fine sugar
2 eggs, beaten
2/3 cup milk
1/2 cup water
1/2 teaspoon lemon zest
1/2 cup dry curd cottage cheese, smooth
1 egg yolk
1 teaspoon soft butter
1 tablespoon sour cream
melted butter

Steps:

  • Sift the first four ingredients together and make a well in it.
  • Beat the egg with the milk, water and lemon zest. Add this to the dry ingredients and stir well. The mixture will be lumpy.
  • Butter a small fry pan (or crepe pan if you have one) and using a small gravy ladel (equal to about 2 tablespoons) to portion the batter, pour out about a small crepe. Swirl the pan to thin the crepe out and make about a 6" diameter.
  • Fry over medium heat until the top of the crepe dries out and there is a slight color on the bottom side. Flip the crepe as you would a pancake.
  • As the crepes cook, stack them on a plate and cover them with a clean towel so as to keep them from drying out.
  • Blend the filling ingredients together and mash them with the back of a spoon to ensure that the cottage cheese is smooth.
  • Spread the filling onto the crepe as you would when spreading a sandwich with butter (about 1 - 1 1/2 tablespoon of filling/crepe).
  • Roll the crepes up, cut them in 1/2 and layer them in a small buttered casserole.
  • Brush each layer with melted butter.
  • Cover and bake at 250F for 30 minutes.
  • My MIL added a yolk to her crepe, and used all milk as the liquid. She also finely chopped onion and dill into the filling. She served this with a rich mushroom sauce. Yum! and completely different again!
