2 INGREDIENT BANANA OATMEAL COOKIES
Bananas and quick oats are all you need to make these soft, sweet breakfast cookies.

- Preheat oven to 350°F. Line a baking sheet with silicone baking mat.
- In a large bowl, add oats and mashed bananas. Mix with a fork until it becomes an evenly mixed, thick batter. If you plan on using add-ins like chocolate chips, mix them into the cookie batter at this time.
- Make 8 round balls out of the cookie batter. Place onto baking sheet, spacing about 2 inches apart. Gently press down on each ball so that it flattens into a round disc. Cookies will not spread much during baking, so keep that in mind when shaping and flattening your discs.
- Bake for about 15 minutes or until cookies are lightly brown and set. Cookie bottoms should also be brown and easily come off baking sheet. Let cookies cool before eating. Store uneaten cookies in the fridge.

- In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
- Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
- Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

- Mix those two together. Old bananas are amazing for this, but you can use fresh ones too.Then add in what sounds yummy to you! (or nothing!) We love:.
- -a handful of chocolate chips.
- -crushed walnut pieces.
- -cinnamon.
- -raisins.
- Since all bananas are different sizes, the needed measurements can vary. If it seems too runny and the cookies would flatten out too much, add in more oatmeal. And make sure to not add in TOO many mix-ins as the cookies won't hold together very well. We cook them at 350 degrees for 15 minutes on a GREASED cookie sheet.

- Preheat oven to 350 degrees F (175 degrees C). Soak raisins in hot water and set aside.
- In large bowl, sift flour with soda, salt and spices. Blend in rolled oats, sugar and nuts. In a separate bowl, beat eggs with fork and add oil, vanilla, and raisins and water mixture. Pour into dry ingredients, stirring until well mixed. Drop by teaspoonfuls about two inches apart onto ungreased cookie sheets.
- Bake 10 to 13 minutes in the preheated oven, until the edges are golden.

- In a 1 quart jar, layer the ingredients in the following order: half of the oats, half of the brown sugar, flour. Mix together the sugar, baking soda and cinnamon, put on top of flour, then remaining brown sugar and remaining oats. Screw on the lid and attach a tag with the following instructions:
- Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. In a large bowl, beat 1 1/4 cups of butter with 1 egg and 1 teaspoon of vanilla until fluffy. Stir in the contents of the jar. Drop cookies by rounded tablespoons 2 inches apart onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Cool on cookie sheets for 1 minute before removing to wire racks to cool completely.

Found this recipe online and tried it out. Turned out yummy. Probably the best recipe to start kids off baking cookies! The add-ins are endless. Choc chips,nuts,spices,fruit etc. When I made the second batch of these, I added vanilla extract and choc chips, turned out great. No secret to these... when you get a nice cookie dough consistency...it's time to bake. The smaller you make them, the less time they will take...and will determine how much you get out of a batch.

- Add bananas and oats to a bowl.
- Mash until creamed together, I used a fork.
- Add additional oats if needed to
- Should end up with a drop cookie consistency.
- Add whatever 'add ins' you'd like but try to keep the dough moist enough to hold the cookie together.
- Place on cookie sheet either by small dropfulls or spoon on and flatten top.
- Bake for 12-15 mins.
