2 eggs, beaten
1/4 cup milk
1/2 cup dry breadcrumbs
2 tablespoons grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon garlic powder
1 lb ground beef
1/2 lb bulk pork sausage
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 small onion, chopped
1/2 cup chopped green bell pepper
1/2 cup beef broth
1/3 cup water
2 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon sugar

Steps:

  • Make meatballs by combining eggs, and milk, add breadcrumbs, cheese and seasoning then add the meats.
  • Mixwell, and shape into 1 inch balls, broil or saute until brown, and put into slow cooker.
  • Combine sauce ingredients, and pour over meatballs.
  • Cover, and cook 4-6 hours.
  • Serve on rolls with creamy red potatoes, salad, or dessert.

Most ingredients are already on hand! I freeze all but the sauce and then always have this meal handy for emergencies. (Frozen buns taste best when warmed and slightly taosted in the oven before serving)

1 jar Prego spaghetti sauce
12 submarine sandwich bread (Fresh from bakery is best)
15 -20 cooked meatballs (See my other recipie)
1 -2 cup shredded mozzarella cheese

Steps:

  • In a large lipped skillet, warm Prego and meatballs together, let simmer 20 minutes.
  • Ladle sauce mix onto buns.
  • Top with Mozarella Cheese.

1 lb ground beef
10 Ritz crackers, crushed
1 egg
1/4 teaspoon pepper
2 -3 cups spaghetti sauce
1/2 cup mozzarella cheese, shredded
4 sandwich buns, split

Steps:

  • Preheat oven to 375 degrees. Combine meat, cracker crumbs, egg and pepper. Shape into 12 meatballs. Place in 15x10x1 inch baking pan sprayed with cooking spray. Back 20 minutes or until meatballs are cooked through.
  • Pour spaghetti sauce into microwaveable bowl. Microwave on high 2 or 3 minutes or until heated through, stirring after 1 1/2 minutes.
  • Add meatballs to the spaghetti sauce in bowl; toss to coat. Spoon 3 meatballs and 1/4 sauce onto bottom halves of split bread rolls, sprinkle with 2 T. cheese.

12 rhodes dinner rolls, thawed to room temperature
36 fully cooked meatballs
12 skewers
1/4 cup butter, melted
2 tablespoons grated parmesan cheese
1 teaspoon dried parsley
marinara sauce, for dipping

Steps:

  • Roll each dinner roll into a 12-inch rope. Skewer one end of the rope, then a meatball, wrap the dough half way around the meatball and skewer the dough again, then another meatball. Continue this process until you have 3 meatballs on your skewer and end with dough. Position the meatballs at least an inch apart on the skewer. Repeat with all 12 rolls.
  • Lay on sprayed baking sheets and bake at 350°F 18-20 minutes or until dough is golden brown and meatballs are heated through.
  • Combine butter, parmesan cheese and dried parsley and brush over subs. Serve with marinara sauce for dipping.
