BAKED BABY BACK RIBS
Even a barbeque purist cannot scoff at these foil-wrapped, baked and glazed baby back ribs. They're satisfyingly sweet, savory, smoky and flavorful. The meat falls off the bones! Baking in foil also reduces the amount of clean up. You'll be busy enjoying these ribs -- who has time for dishes?

- In a small bowl, combine the brown sugar, chipotle chile powder, salt, onion powder, garlic powder, seafood seasoning and black pepper.
- Place each slab of ribs on a piece of aluminum foil large enough to fold over and seal, then place on a baking sheet. Do not seal the ribs in the foil yet (see Cook's Note). Generously sprinkle the dry rub on both sides of the ribs. Place in the refrigerator, meat-side down and uncovered, for at least 1 hour. Preheat the oven to 300 degrees F.
- In a small bowl, combine the apple cider, apple cider vinegar, maple syrup, Worcestershire and minced garlic. Pour half the liquid over each slab and tightly seal each in the aluminum foil, crimping the edges to make a packet.
- Transfer the foil packets and baking sheet to the oven and bake until the meat is tender and starts to pull away from the bones, about 2 hours.
- Remove the sheet pan from the oven. Carefully open the aluminum packets and pour the braising liquid into a small saucepan. Bring the liquid to a simmer over medium heat until it becomes a thick and syrupy glaze, about 4 minutes.
- While the braising liquid reduces, line a baking sheet with foil and gently transfer the ribs to it. Position a rack on the top level of the oven and preheat the broiler.
- Using a pastry brush, generously brush the ribs with about half the glaze. Place the ribs under the broiler for about 1 minute. Brush with the remaining glaze and return to the broiled until charred in spots, about 1 minute more. Slice each rack between the bones into 2-rib portions and serve.
TWICE COOKED BABY-BACK RIBS
These ribs are for those who love them falling off the bone. They come out tender, yet crispy because the are oven-baked, then grilled.

- Preheat oven to 300 degrees.
- Lay slab of ribs on large sheet of aluminum foil.
- Sprinkle salt, pepper, and garlic powder on both sides.
- Use approximately half of your choice of sauce to coat both sides of ribs.
- Wrap foil tightly around ribs and lay on baking pan (to catch any juices).
- Bake in oven for 3 hours.
- After baking remove from foil and place on hot grill (med-high) and baste each side with remaining sauce, until edges are charcoaled and crispy, approximately 15 minutes Let ribs stand for 5 minutes before separating.

BALSAMIC BABY BACK RIBS WITH TRUFFLED TWICE-BAKED POTATOES
Steps:
- For the rub: To a bowl, add the parsley, brown sugar, maple flakes, smoked paprika, salt, cracked pepper, cayenne pepper, garlic and oregano. Mix well.
- For the ribs: Preheat the oven to 325 degrees F. Place the ribs down on foil, brush with canola oil and massage with the rub. Wrap the foil tightly around the ribs, place in a roasting pan and roast for 1 1/2 to 2 hours. Unwrap the ribs and cover with the balsamic barbecue sauce. Broil, uncovered, at 500 degrees F until the sauce is bubbling and caramelized, about 5 minutes.
- For the sauce: Heat a pot on medium. Add the apple cider vinegar, ketchup, maple syrup, aged balsamic vinegar, whiskey, habanero, garlic and red onions. Stir and bring to a simmer for 1 1/2 to 2 hours.
- For the baked potatoes: Preheat oven to 350 degrees F. Bake the russet potatoes in foil for 1 hour. When cool enough to handle, slice open and delicately scoop the cooked potato flesh into a bowl. Add the heavy cream, parsley, scallion greens, butter, truffle oil and sea salt and freshly cracked pepper to taste and whip. Stuff the mix back into the potato skins, wrap in foil and bake until heated through, about 30 minutes.
- On a long rectangular plate, lay down some fresh baby spinach. Place the rack of ribs on top and add the truffled twice-baked potatoes.
SMOKEHOUSE OVEN-BAKED BACK RIBS
This is a phenomenal rib recipe--hands down! You can adjust the seasonings to taste if desired, this recipe is indestructible! Start this recipe a day in advance, the sauce must be made 1-7 days ahead and the ribs need to marinate 24 hours. If you are using two baking sheets on two oven racks you might want to change the positions of the baking sheets halfway through cooking time. Just wait until you try these ribs!

- FOR THE SAUCE; make 1 day or even up to 7 days ahead, heat butter in a medium saucepan over medium heat; add in onion, garlic and cayenne pepper, sauté for about 4 minutes.
- Add in all remaining sauce ingredients; bring to a boil, reduce heat and simmer uncovered for about 45 minutes, stirring occasionally, season with salt and more cayenne if desired; cool to room temperature and chill a minimum of 24 hours before using or up to 7 days.
- FOR THE RIBS; Remove the membrane on underside of the ribs.
- Place ribs in a large roasting pan.
- In a bowl mix together cider vinegar and liquid smoke, then brush over both sides of all the ribs; chill for a minimum of 24 hours.
- FOR THE RIB RUB; after the 24 hour chilling time, in a bowl mix together chili powder, cumin garlic powder, onion powder, cayenne, brown sugar cumin, salt and black pepper; rub spice mix all over the ribs.
- Arrange the ribs meat-side up in a single layer on 2 large baking sheets that have been sprayed with cooking spray.
- Roast at 350 degrees for about 1 to 1/1/4 hours (if browning too much cover loosely with foil).
- Remove ribs from oven, then brush both sides with about 3/4 cup sauce (that is 3/4 cup for all the ribs) return to oven and roast 10 minutes longer.
- After the 10 minutes remove from oven and brush with another 3/4 cup sauce; return to oven for another 10 minutes.
- Remove from oven; cover with foil and let rest for 15 minutes.
- Cut the ribs between the bones into 3-4 rib sections, and serve with remaining sauce.

FALL OFF THE BONE BABY BACK RIBS
This recipe is a work in process, but this is my current method for preparing ribs. This recipe started with a basic recipe from my friend Linda, who got it from another friend, baking the ribs in a broiler pan over water. That causes the ribs to literally fall apart when you try to grill them, so I've been refining the recipe, adding my own touches.

- Remove membrane from back of ribs. This is a must! If you don't remove the membrane, don't bother making the recipe.
- Apply rub to both sides of the ribs. The measurements given in the ingredient list are approximate -- go with amounts you prefer and add/remove any rub ingredients to fit your taste.
- Lay a bay leaf on top of each rack of ribs. Wrap the ribs in aluminum foil -- wrap them very well, either all in one big piece of aluminum foil, or individually wrapped.
- Put in a large roasting pan. You can put them directly on the oven rack, but I use a roasting pan in case juices escape.
- Bake at 200F for 6-8 hours (I prefer about 7-8 hours).
- Remove ribs from oven and unwrap.
- Generously apply hot sauce to ribs. Brush on barbecue sauce, then grill until nicely browned.

INSTANT POT BABY BACK RIBS

- Generously season the ribs with salt and pepper.
- Pour the apple cider vinegar and 1 ½ cups of water in the base of the Instant Pot.
- Insert the rack and place ribs on top. Seal lid on top and cook on high pressure for 20 minutes. Allow the Instant Pot to vent for about 10 minutes before removing the ribs from the pot.
- Meanwhile, preheat an oven to 425 degrees. Carefully, place the ribs on an aluminum foil lined sheet tray and brush both sides of the ribs with bbq sauce. Bake in the oven for 7-10 minutes until the sauce is sticky.
- Slice ribs into sections and serve with additional bbq sauce.
