ITALIAN POTATO RECIPE
This Southern Italian Potato Recipe, with crushed tomatoes and sliced onions, is an easy Mediterranean side dish. Serve this baked potato dish with meat, chicken or fish.

Steps:
- Peel and cut potatoes into wedges.
- Place the potatoes in a large bowl of cold water while prepping the rest of the ingredients.
- Thinly slice the onion. Set aside.
- Mince the garlic. Set aside.
- Preheat oven to 425° F (220° C).
- Place oven grate on the lower center rack.
- Empty the can of whole peeled canned tomatoes in a large bowl.
- Add one cup of water to the can, swirl and empty contents in the bowl.
- Hand crush the tomatoes.
- Add the minced garlic, dried oregano, paprika and salt and pepper. Feel free to adjust seasonings. Combine together and set aside.
- Drain the water from the potatoes.
- Add the sliced onions and crushed tomatoes and combine.
- Toss the sliced onions with the potato wedges in a large deep baking dish (10.5 x 14.75 inches).
- Arrange the potatoes and vegetables in a single layer, in the baking dish.
- Drizzle olive oil over the top.
- Cover with aluminum foil and bake for about 45-60 minutes or until a knife can easily pierce through the potato. Gently move the potatoes to the baking pan.
- Bake for another 15-20 minutes, without the foil or until most of the moisture has evaporated from the tomato sauce. Stir occasionally.
- Transfer to a serving dish, garnish with fresh chopped parsley and serve.
- OPTIONAL: Garnish with grated pecorino romano cheese or parmesan cheese.

TUSCAN CHEESE POTATO BAKE
Tasty combination of potatoes, cheese, and cream sauce with a crispy topping. You may add more cheese as a topping under the panko crumbs if desired. For a lighter version, use milk to replace the heavy cream and light sour cream instead of regular. You may also use Cheddar, Parmesan, or low-fat cheese.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 3-quart baking dish.
- Melt butter in a large saucepan over medium-high heat. Saute onion, garlic, and thyme in hot butter until onion is tender, 3 to 5 minutes. Whisk flour, salt, and black pepper into onion mixture.
- Gradually whisk milk and cream into onion mixture; bring to a boil, reduce heat to low, and simmer until sauce thickens, about 2 minutes.
- Stir sour cream into sauce until smooth; add fontina cheese and stir until cheese melts.
- Arrange 1/2 the potatoes in the bottom of the prepared baking dish. Pour 1/2 the cheese sauce over the potatoes. Repeat with remaining potatoes and cheese sauce. Top with bread crumbs to cover potatoes entirely.
- Bake in the preheated oven until potatoes are tender and bread crumbs are golden brown, 60 to 70 minutes.

- 1. Scrub potatoes; cut into 1-inch pieces. In large saucepan cook potatoes in lightly salted boiling water 12 to 15 minutes or until tender; drain.
- 2. In a large skillet cook and stir garlic and thyme in butter over medium heat for 1 minute; add potatoes. Coarsely mash potatoes. Stir in buttermilk, 1/2 teaspoon salt, and 1/4 tsp. black pepper. Fold in fontina cheese, half of the Parmesan cheese, and the blue cheese.
- 3. Spread mixture evenly in a greased 2-qt. square baking dish.
- 4. In a small bowl combine remaining Parmesan, panko, Italian seasoning, and oil. toss with a fork to combine. Evenly sprinkle over potato mixture in dish.
- 5. Bake in a preheated 400-degree oven for 20 minutes or until bubbly and top is golden. If desired, sprinkle with snipped fresh parsley.

- Cut precooked sausages into 2" pieces, and both peppers into 1/4" slices.

- Cook ground chuck , onion and garlic in a large skillet over medium heat until meat is browned, stirring to crumble meat; drain. Add spaghetti sauce, water, basil, oregano, and pepper, stir well.

- Bake potatoes in oven or microwave.
- Preheat oven to 450 degrees.
- Heat oil in small sauce pan. Add mushrooms, scallions, garlic, and oregano. Cook over med-high heat for about 3 minutes.
- Add tomato sauce to mushroom mixture. Cook, stirring frequently, for another 3 minutes.
- Split and fluff the baked potatoes.
- Spoon tomato sauce over each of the potatoes and top with mozzarella cheese. Add a little Parmesan cheese if you'd like.

BAKED ITALIAN POTATO WEDGES
These were an experiment I did for tonight's meal and I think they turned out pretty well. They aren't out and out low fat but the only fat used is extra virgin olive oil so it is a good fat and a little bit of fresh Parmesan cheese and you could use the reduced fat version of that if desired. So, far better than deep fried French fries.

- Preheat the oven to 425 degrees.
- Cut each potato in half length wise and then quarter each half to make potato edges.
- Arrange the wedges on a baking tray with the skin side down.
- In a bowl mix together the oil, herbs and garlic salt.

- Heat oven to 200C/180C fan/gas 6. Find a large roasting tin that will hold the chicken thighs and potatoes in a single layer. Halve the chilli, scrape out and discard the seeds if you don't like it too hot, and remove the stalk. Put in a small food processor or mini chopper with the tomato purée, olive oil and garlic. Whizz to a paste, then spread over the chicken. Add the chicken and potatoes to the tin with a good grinding of black pepper and some salt, then mix everything together well with your hands. Add the thyme and roast for 30 mins.
- Stir in the pancetta and roast for 15 mins more, then add the tomatoes and roast for another 15 mins until the tomatoes have softened and the chicken is cooked. Serve straight from the pan and eat with a green salad and some bread, if you like, for mopping up the juices.
