CHOCOLATE-CARAMEL SUPREME PIE
At a church fund-raiser, I purchased a pie-a-month package furnished by a local family. From among all the varieties they made, this one was the best, with its chocolate crust, creamy caramel filling and fluffy topping.

Steps:
- In a large saucepan, add the caramels, butter and water. Cook and stir over medium heat until caramels are melted. Spread over crust; sprinkle with pecans. Refrigerate for 1 hour. , In a large bowl, beat cream cheese and sugar until smooth; spread over caramel layer. Refrigerate., In a large saucepan, melt chocolate chips with hot water over low heat; stir until smooth. Cool slightly. , Fold in whipped topping. Spread over cream cheese layer. Garnish with chocolate hearts or curls if desired. Chill until serving. Refrigerate leftovers.

CHOCOLATE PIE
Steps:
- For the crust: In a food processor, pulse the graham crackers and sugar until crumbs form. Pour in the butter and continue to pulse until the crumbs are coated. Press the mixture firmly into the bottom of a 9-inch pie plate. Set aside.
- For the filling: In a small saucepan, heat the milk until hot but not simmering. To a medium saucepan, add the sugar, flour and cocoa and whisk together well. Lightly beat the egg yolks (saving the whites for the meringue) and pour into the flour mixture. Slowly add the hot milk, stirring. This will create a paste in the beginning, ensuring that the chocolate and flour blend smoothly. Place over medium heat and cook, stirring constantly, until very thick, about 5 minutes. The mixture will start to bubble sporadically; continue to stir and cook for another 2 minutes. Remove the pan from the heat and stir in the butter, vanilla and salt. Stir until the butter is completely incorporated.
- Pour the filling into the crust and chill in the refrigerator, about 45 minutes.
- For the meringue: Preheat the oven to 325 degrees F. With an electric mixer, beat the egg whites with the salt until stiff. With the mixer running, gradually add the sugar and beat until the whites are smooth and glossy. Spread the meringue on the pie, reaching the edges of the crust to seal in the filling. Bake until brown, 15 to 20 minutes. Cool completely before serving.

This pie is so rich. It is so quick and easy. It is also enjoyed quick and easy. You must try this for your next Chocolate Pie. I HAVE to make it EVERY Thanksgiving, especially for son Kevin and son-in-law Dwain. My sister-in-law, Sherry, entered it in their 1996 church cookbook, "Give Us This Day Our Daily Bread", Wise County, Texas.

- Mix water and cornstarch and cocoa until smooth.
- Sir in Eagle Brand milk and egg yolks.
- Cook until thick in saucepan or microwave.
- Stir in 2 tablespoons butter.
- Add vanilla.
- Cool slightly (stirring occasionally).
- Pour into baked pie shell.
- For meringue: Preheat oven to 400°.
- Top with meringue and brown.
- Or may top with whipped cream after chilling pie.

Cool, creamy layers over a buttery crust laced with pecans. One of our family favorites. I guessed on the amount of Cool Whip - you need two cups plus enough for the top layer. Cook time includes one hour of chilling.

- Mix together flour, butter and pecans until well combined; press into the bottom of a lightly greased 9x13 baking dish. Bake at 375 for 10 - 12 minutes, until golden. Remove from oven and let cool.
- Beat cream cheese and powdered sugar until smooth. Fold in 2 cups Cool Whip. Spread over crust and chill for about 1 hour.
- Mix the pudding mixes and milk; beat until thick. Spread over cream cheese layer. Top with another layer of Cool Whip, and pecans if desired. Keep covered in refrigerator.

- 1. On the stove, in a pan, melt together milk, marshmellows and hershey bars broken up. Cook on low heat and keep stirring and mix completely till all ingredients are incorporated. Set aside to cool, only takes a few minutes.
- 2. When cool, take cool whip from refrigerator and add to melted chocolate, milk & marshmellows. Mix together well and add to graham cracker crust,or cookie crust.
- 3. Put into refrigerator overnight.

- Make crust:
- Preheat oven to 350°F with rack in middle.
- Stir together all ingredients and press evenly onto bottom and 3/4 inch up side of tart pan. Bake until firm, about 10 minutes. Cool on a rack 15 to 20 minutes
- Make filling:
- Bring cream to a boil, then pour over chocolate in a bowl and let stand 5 minutes. Gently stir until smooth. Whisk together eggs, vanilla, and salt in another bowl, then stir into melted chocolate.
- Pour filling into cooled crust. Bake until filling is set about 3 inches from edge but center is still wobbly, 20 to 25 minutes. (Center will continue to set as tart cools.) Cool completely in pan on rack, about 1 hour.
- Make glaze:
- Bring cream to a boil and remove from heat. Stir in chocolate until smooth. Stir in corn syrup, then warm water
- Pour glaze onto tart, then tilt and rotate tart so glaze coats top evenly. Let stand until glaze is set, about 1 hour.

- 1. After mixing the cream cheese, powdered sugar, and Cool Whip then spread over completely cooled crust.
- 2. 2 PKGS DESIRED INSTANT PUDDING mixed with 3 C. MILK. Spread over cream cheese layer. Refrigerate until set. Spread remaining Cool Whip over the pudding and garnish with chocolate curls, candy, chips, nuts, etc: Use your imagination.
- 3. PEANUT BUTTER CHOCOLATE VERSION: STEP 1: Crust Add 2/3 c. chopped dry roasted peanuts to 1/2 c. cold butter cut into 1 c. flour. Press into oblong Pyrex 13x9 inch until lightly browned. 350 degree/16-20 minutes. Cool completely
- 4. STEP 2: Beat 8 oz. cream cheese, 1 c. powdered sugar, 1/3 c. peanut butter, and 1-1/2 cups Cool Whip. Spread over cooled crust.
- 5. STEP 3: 1 pkg. Instant Chocolate and 1 pkg. Instant Vanilla Pudding whisked together 3 cups cold milk until smooth. Top cream cheese layer, allow to set and spread remaining Cool Whip and sprinkle with chopped dry roasted peanuts.

- Heat oven to 450°F. Make and bake crust as directed. Cool completely on cooling rack.
