CHEESY HAM AND MUSHROOM STRATA
Make this ham-and-cremini strata even more flavorful with a little Parmesan and a lot of Swiss cheese.

- Butter a 9-by-13-inch baking dish.
- Heat the oil in a large nonstick skillet over medium-high heat until hot. Add the mushrooms and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Season with salt and pepper. Set aside.
- Whisk the half-and-half, Parmesan and eggs, 1 1/2 teaspoons salt and a few grinds of pepper together in a large bowl.
- Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the Swiss cheese, followed by the cooked mushrooms and the ham. Cover with the remaining bread cubes and pour the half-and-half mixture evenly over top. Cover with plastic wrap and refrigerate overnight. (This can also be assembled the day of; just let soak at room temperature 30 minutes to 1 hour before baking.)
- On the day of baking, preheat the oven to 325 degrees F.
- Let the strata sit at room temperature while the oven preheats. Remove the plastic and sprinkle with the remaining 1/2 cup Swiss cheese. Bake until slightly puffed and just no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.

- Spray a 13x9-inch (3-quart) glass baking dish with the cooking spray. Peel and thinly slice the green onions; you will need about 1/2 cup. Trim crusts from the bread.
- Arrange 6 bread slices in baking dish. Layer the ham, cheese and onions on bread in dish. Cut remaining bread slices diagonally in half; arrange on onions.
- In a medium bowl, beat the eggs, milk, mustard and pepper sauce with a fork or wire whisk; pour evenly over bread. Cover with plastic wrap or foil and refrigerate up to 24 hours.
- Heat the oven to 300°F. Uncover strata and sprinkle with paprika. Bake uncovered 1 hour to 1 hour 10 minutes or until center is set and bread is golden brown. Let stand 10 minutes before cutting into serving pieces.

- Saute mushrooms in 1 tablespoon of oil. Season with salt and set aside.
- Whisk half-and-half, eggs, salt and pepper until smooth. Spray a 9-by-13-inch Pyrex or ceramic baking dish with vegetable cooking spray.
- Line bottom with 6 slices of bread. Scatter half of the ham, and half of the mushrooms over the bread, then sprinkle with half of the scallions and cheese. Pour 1 cup of egg mixture over the top. Repeat layers with remaining bread, ham, mushrooms, cheese and scallions. Slowly pour remaining egg mixture evenly over top. Cover with plastic wrap, then weight down casserole with 3 16-ounce cans for at least 15 minutes to submerge ingredients. (Can be refrigerated overnight, but return to room temperature before baking.)
- Adjust oven rack to middle position. Bake in preheated 325-degree oven until custard is just set, about 50 minutes. Turn on broiler and broil until strata is spotty brown and puffy (watch carefully), about 5 minutes longer. Let stand for 8 to 10 minutes, then serve immediately.

- 1. In a medium skillet ( I used my iron skillet ) over medium heat, brown onion & ham in either bacon fat ( what I used ) or oil. Set aside
- 2. Butter a 9 x 13 baking dish. Set Aside. I then sliced a loaf of french bread, about 1 1/2 inch thickness. Butter both sides of bread and lay in bottom of dish to cover bottom, without overlapping. You may have to cut one in half to fit it in, depending how big your slices are. Layer half the onion and ham mixture evenly over the buttered bread.
- 3. Sprinkle half the cheeses over the ham. Then, layer with another row of bread. Sprinkle the other half of ham & onions.
- 4. In a large bowl, beat eggs with milk, salt, pepper and parsley. Pour this evenly over the casserole, making sure to cover all of he bread. Sprinkle the top with remaining cheese and cover. Refrigerate over night.
- 5. Bake in a 350 degree oven covered for 30 minutes.
- 6. Remove cover and bake an additional 30 minutes. The last 5 minutes of baking, I broil so to get a golden color on the cheese. Let sit for 5 minutes and cut...delicious!

CHEESE STRATA WITH HAM AND TOMATOES
Steps:
- Butter a 3-quart gratin dish or casserole. Whisk eggs, milk, cream, 1 teaspoon salt, 1/4 teaspoon black pepper, nutmeg, and cayenne pepper in a large bowl. Toss ham, tomatoes, parsley, and chives together in a small bowl.
- Scatter 1/2 cup of cheese into prepared dish. Layer with 1/3 of bread and half of ham mixture. Repeat. Top strata with a final layer of bread and remaining 1 cup cheese.
- Pour egg mixture over top of dish and gently press to make moistened all bread layers. Drizzle with melted butter, cover strata with plastic wrap, and refrigerate for 1 hour or up to overnight.
- Preheat to 350 degrees F. Bake strata, on middle oven rack, uncovered, until slightly puffed and golden brown, about 45 minutes. Let rest 10 minutes before serving.
- Preheat oven to 250 degrees F.
- Arrange tomatoes, cut side up, in a single layer on a parchment-lined baking sheet. Sprinkle with salt. Bake until slightly shriveled but still plump, about 5 hours.
- If not using immediately, refrigerate dried tomatoes, covered, up to 4 days. Or, if desired, layer tomatoes with herb sprigs and add olive oil. Refrigerate, covered, for up to 2 weeks.

HAM AND CHEESE STRATA
I've served this both for breakfast/brunch, as well as for dinner with a salad. It's very versatile, and you can do it with chicken instead of the ham, if you prefer.

- 1. Lightly grease a small baking dish, such as a 8x8" pan, or a small casserole dish. Layer half of the bread cubes on the bottom. Layer the cheese cubes and the ham over the bread. (Note: At this point, you can layer some chopped spinach over the ham/cheese, if desired ... but make SURE the spinach is well-drained, and squeezed VERY dry! Top with the remaining bread cubes. Dot with butter.)
- 2. In a small bowl, beat together the eggs, milk, seasonings, and onion flakes.
- 3. Pour the milk mixture over the entire bread mixture. Sprinkle shredded cheese on top. Sprinkle with paprika.
- 4. Refrigerate overnight, or at least a couple of hours.
- 5. Preheat oven to 375°. Bake for 45 minutes, until set. Serve hot, with a salad, if making for dinner. If you're using this for a brunch, some fresh fruit on the side is nice, like pineapple or a fresh fruit salad.
- 6. Note: if you really like cheese, add extra. I do, and nothing's better than a "little extra cheese". :o)

Steps:
- In a 13x9-in. baking dish coated with cooking spray, layer half of the bread cubes, half of the leeks and half of the red pepper, 3/4 cup Swiss cheese and 3/4 cup cheddar cheese. Repeat layers once., In a bowl, whisk the eggs, milk, beer, garlic, salt and pepper. Pour over cheese. Cover with plastic wrap. Weigh strata down with a slightly smaller baking dish. This recipe was first served to me 35 years ago while up North snowmobiling with a number of families. Now it typically gets served Christmas morning and on Memorial Day weekend while up North with friends. This is always a crowd pleaser and makes great leftovers.

- Grease a 9x12-inch baking pan with butter. Combine Cheddar cheese and Swiss cheese in a bowl.
- Remove and discard bread crusts. Arrange 1/2 the bread on the bottom of the pan. Top evenly with 1/2 the ham and then 1/2 the cheese mixture. Repeat layers of bread, ham, and cheese mixture.
