I spent a few days in Florence about 30 years ago, and while I don't remember much, I do recall my surprise at how delicious the Tuscan fish stew was. What I found so interesting was how herbs like oregano, sage, and rosemary, which I'd only associated with meat, were also used with seafood. Also, FYI just in case any old-school Tuscans are coming over: I hear that for this to qualify as an official Italian fish stew you need use at least 5 different types of seafood, which is both insane and adorable. Serve with crusty bread.

3 cups cherry tomatoes, halved
1 cup clam juice
4 tablespoons olive oil, divided
¼ cup sliced green onions
4 cloves garlic, sliced
1 anchovy fillet
2 pinches red pepper flakes
12 ounces halibut, cut into 2-inch pieces
1 pound shrimp, peeled and deveined
salt to taste
1 tablespoon chopped fresh parsley
½ tablespoon chopped fresh basil
½ tablespoon chopped fresh oregano
1 pinch minced fresh rosemary

Steps:

  • Puree cherry tomatoes and clam juice in a blender until smooth. Press mixture through a fine-mesh strainer into a bowl.
  • Combine 3 tablespoons olive oil, green onions, garlic, anchovy, and 1 pinch red pepper flakes in a cold plan. Place over medium heat. Cook and stir until garlic and onions just start to soften, about 3 minutes. Stir in the tomato mixture. Bring to a simmer over medium-high heat. Reduce heat to medium and simmer stew until color deepens, about 10 minutes.
  • Add halibut and shrimp to the stew. Season with salt. Increase heat to high. Cover pan and cook until fish flakes easily with a fork, about 5 minutes. Stir in parsley, basil, oregano, and rosemary. Pour stew into a warm bowl. Drizzle in remaining olive oil and sprinkle 1 pinch red pepper flakes on top. Serve with crusty bread.

Steps:

  • Create an Italian herb baste by mixing together the olive oil, Italian seasoning, parsley, basil, shallots, garlic, and Parmesan in a bowl.
  • Preheat a grill to medium, using mesquite wood. Coat the halibut in the Italian herb baste and place fish on the grill. Grill, turning often to avoid burning, until fish is opaque and a knife slides in easily.
  • Remove from heat and serve halibut with fresh vegetables and a starch of choice.

I love Italian and I love Halibut so decided to join the two in marriage. It turned out delicious, so decided to share it with you, my "zaar" friends. It's simple and delicious. I miss living in Seattle mostly for all the fresh fish and seafood, but don't miss the grey!!

3/4 cup dry white wine (like chardonnay, drink the rest with dinner)
4 halibut fillets
3/4 cup extra-virgin olive oil
3 tablespoons italian seasoning
1 tablespoon fresh Italian parsley
2 tablespoons chopped fresh basil leaves
1/3 cup finely chopped shallot
2 minced garlic cloves
1/2 cup grated parmesan cheese

Steps:

  • Place halibut fillets in white wine and marinate for ~20 minutes.
  • Mix the olive oil, Italian seasoning, parsley, basil shallots, garlic and Parmesan cheese together in a bowl.
  • Coat the halibut with the herb mixture and place fish on oil sprayed oven tray. Place in 450F oven for ~14-16 minutes, or until fish is opaque. (Can also be cooked on medium on a grill.).

Steps:

  • Heat grill to medium-high heat. Arrange fish on a rimmed baking sheet; brush 1 tablespoon of the oil over both sides of fish. Sprinkle salt and pepper over fish.
  • In a small bowl, toss pepper strips with remaining olive oil to coat. Grill peppers turning once, until light grill marks appear, about 2 minutes per side. Transfer to a platter or rimmed baking sheet and keep warm.
  • Grill fish on covered grill 3 minutes per side or until fish is opaque in center. Arrange peppers on four warmed dinner plates. Place fish over peppers; top with olives.

2 small eggplants (peeled and sliced not too thinly lengthwise)
2 eggs
1/2 grams cup flour (65)
3/4 cup breadcrumbs (70 grams)
FISH
4 slices fresh or frozen halibut (thawed)
FOR THE SAUCE
2 tablespoons olive oil (26 grams)
1 cup tomato puree (passata) (226 grams)
1 teaspoon basil (3/4 gram)
1 teaspoon oregano (3/4 gram)
1/2 teaspoon 2 grams) salt
1 clove garlic sliced
1/2 cup water (114 grams)
TOPPING
1 cup chopped fresh mozzarella (185 grams)
1/4 cup freshly grated parmesan cheese (25 grams)

Steps:

  • In a medium bowl add sliced eggplant and toss with 3/4 tablespoon of salt. Let sit for 1/2 hour and then drain but don't rinse.
  • In a medium pot add olive oil,garlic, tomato puree, basil, oregano, salt and water, stir to combine and simmer on medium heat till thickened, approximately 20 minutes.
  • In 3 separate plates add well beaten eggs, the second bread crumbs and third flour. Take one slice of drained eggplant at a time and coat in egg then bread crumbs and then flour.
  • (Pre-heat oven to 350° (180° celsius))
  • Fry in a 1/4 cup of hot olive oil (not boiling, eggplant is frying not deep frying) in a medium frying pan at medium to high heat, quickly, remove and place on paper towels. Continue until all eggplant is fried.
  • Clean frying pan and fry fish, quickly on medium to high heat. Remove from pan.
  • In a medium sized baking dish spread a little sauce on the bottom, place 1/2 the eggplant, then the fish, sprinkle with some oregano, parsley and a pinch of salt, top with 1/2 the cubed mozzarella, top with the remaining eggplant, sauce, mozzarella and sprinkle with the grated parmesan cheese. Bake in pre-heated oven for 20-30 minutes. Let sit 5-10 minutes before serving. Enjoy!

  • Bring the salt and water to a simmer and crumble in the saffron. Stir, turn off the heat and cover the pot. Let this come to room temperature, which can take a couple hours, or speed the process by putting the pot in a large pot that has ice in it. Once the saffron brine is at least at room temperature, if not cooler, submerge the halibut in it and brine in the refrigerator for at least 2 hours, and up to five hours.
  • Meanwhile, make the salsa verde. Put the anchovies, mustard and lemon juice in a bowl and mash it all together until the anchovies are basically a slurry or paste. Add the parsley, garlic, chives, capers and red pepper flakes and mix well. Mixing all the while, slowly pour in the olive oil until the sauce comes together. It should look like a very loose pesto or a thick chimichurri. Add salt and black pepper to taste, cover and leave at room temperature.
  • When the halibut is ready, remove it from the brine and pat it dry with paper towels. Set the halibut out on a cutting board for 15 to 20 minutes to warm up a bit.
  • Heat the olive oil in a sauté pan large enough to fit all the pieces of halibut in one layer. When the oil is hot, pat the halibut dry one more time and lay the pieces in the hot oil. Cook at a medium sizzle (think about how bacon sizzles and you have the right idea) until a nice crust forms on the bottom, about 8 to 10 minutes. Baste the halibut with the hot oil as it cooks for at least 30 seconds, and longer if you want the interior of the fish to be fully cooked through. After about 8 minutes, a crust should form on the bottom of the halibut. Carefully lift the halibut up (assume it will have stuck, although it usually sticks in one one small place, if at all) and place it, crust side up, in the middle of some salsa verde on each person's plate.
