1 cup giardiniera (Italian hot vegetable salad), drained
1/4 cup salad olives (green olives with pimiento)
8 slices good quality crusty white bread, 1/2-inch thick slices
8 slices deli cut provolone cheese
4 tablespoons softened butter

Steps:

  • Heat griddle to medium.
  • In a food processor pulse chop the salad and olives into a fine relish. Spread 4 slices of bread with relish and top each with 2 slices cheese and 4 more slices of bread. Butter the outside of the sammies with softened butter and grill until golden on both sides, 4 to 5 minutes total. Cut and serve.

This sandwich was so delicious! From the herb infused bread, to the ooey, gooey cheese, to the crunchy little capers, to smoky bacon and the Parmesan marinara, there was nothing wrong with this sandwich. It was all good! So much flavor in this grilled cheese.

4 slice smoked bacon
1 tsp dried Italian herb
1 egg
1 Tbsp water
3 Tbsp water packed capers, drained
1/8 c flour
1/8 c cornmeal
olive oil for frying
2 Tbsp grated Parmesan cheese
1 c marinara sauce (homemade or store bought
1 1/2 tsp minced fresh rosemary leaves
1 tsp fresh lemon juice
1/2 tsp kosher salt
1/2 c melted butter
4 slice pane Tuscano or Italian country style bread
4 slice Provolone cheese
4 slice Fontina cheese

Steps:

  • 1. Sprinkle bacon slices on both sides with the herbs and place in a preheated non-stick skillet over medium-high heat. Fry until crispy. Remove to paper towels to drain.
  • 2. Whisk egg and water together in a small bowl and stir in the capers.
  • 3. In a separate bowl, combine flour and cornmeal. Drain the capers, add to flour mixture and toss to coat. Heat 1/2 inch of oil over medium-high heat in a small saucepan.
  • 4. When the oil begins to shimmer, carefully add the capers (shake off excess flour) and fry until golden - about 3-4 minutes, remove to paper towels to drain.
  • 5. Pour marinara sauce in saucepan over medium heat. Add Parmesan cheese, stir and continue to cook until the cheese is melted and the sauce is heated through. Remove from heat and set aside.
  • 6. To make the herb butter, combine the rosemary, lemon juice, salt, and melted butter in a small bowl and whisk together.
  • 7. To finish the sandwiches, preheat the broiler and place a large, non-stick skillet over medium heat.
  • 8. Brush one side of each of the bread slices with the herb butter mixture. Place slices butter-side down in the skillet and coat with a portion of the marinara sauce, and then one slice each of the fontina and provolone.
  • 9. When the bread is golden brown and crispy, move the slices to a baking sheet and place under the broiler. Cook until the cheese is melted and beginning to bubble. Remove from the oven and evenly add to each bottom slice, two slices bacon and half of the capers. Add the top bread slices cheese side down, slice, serve and enjoy!.

The soup and sandwich combo will become a featured item on TGI Friday's menu. The judges raved about then and I know why. Delicious!

10 slices sourdough bread
3 tablespoons extra virgin olive oil
1 large red onion, thinly sliced
1/2 cup unsalted butter
1 pint grape tomatoes
1 tablespoon balsamic vinegar
salt and pepper, to taste
3 large portabella mushroom caps, sliced
1/4 cup white wine
5 fresh thyme sprigs
1 1/4 cups grated provolone cheese
1 1/4 cups grated monterey jack cheese

Steps:

  • Preheat oven to 350°F.
  • In a medium skillet, combine 2 tablespoons olive oil and red onion. Cook over medium heat until onions are beginning to soften. Season with salt and pepper and transfer to a roasting dish.
  • In the same skillet, combine tomatoes and balsamic vinegar. Cook over medium heat until the tomatoes are beginning to soften. Transfer to roasting dish with onions.
  • In a medium bowl, gently toss Portobello mushrooms with 1 tablespoon olive oil. Transfer to roasting dish with other ingredients. Add white wine.
  • Place roasting dish in oven and bake for 20-30 minutes. Remove from oven and let mixture cool to room temperature.
  • In a small saucepan, combine butter and thyme springs. Cook over low heat until butter is melted. Remove from heat and discard thyme.
  • Brush one side of each slice of bread with butter. Place slices buttered side down on a clean surface. Top half of the slices with 1/4 cup provolone cheese and 1/4 cup Monterey jack cheese. Top cheese with mushroom mixture, dividing evenly between the slices. Top with remaining bread slices.
  • Heat a griddle (or frying pan) to medium high heat. Place sandwiches on griddle to brown. Flip after 2 minutes to brown other side and cook until golden brown and cheese is melted.
  • To serve: Cut in half and serve with a cup of soup.

4 1/2-inch-thick slices country bread
3 tablespoons garlic-flavored olive oil
4 ounces smoked mozzarella, thinly sliced
1 large ripe tomato, thinly sliced
1/4 cup fresh basil leaves
4 cups arugula leaves
3 tablespoons bottled balsamic vinaigrette

Steps:

  • Brush 1 side of each bread slice lightly with oil, using about 1 tablespoon total. On 2 slices, arrange half of cheese, then tomato, basil, and remaining cheese. Top with remaining bread slices, oil side down. Brush tops of sandwiches with about 1 tablespoon of remaining oil.
  • Heat medium skillet or range-top grill pan over medium heat. Place sandwiches, oil side down, in skillet. Brush tops with remaining 1 tablespoon oil. Cook until sandwiches are golden brown on both sides and cheese is melted, turning once, about 5 minutes per side.
  • Toss arugula with vinaigrette and divide between 2 plates. Cut sandwiches in half or quarters and arrange around arugula. Serve.

6 1/2 ounces mozzarella cheese, sliced
1/4 cup fresh parmesan cheese, grated
1/4 cup pesto sauce
2 bell peppers, grilled and sliced (from the jar or homemade)

Steps:

  • Slice paninis in half. Spread pesto onto each half.
  • Evenly distribute both cheeses and peppers on four bottom halves and top with four top halves.
  • Heat skillet over medium-low heat.
  • Cook sandwiches approximately 5 minutes on each side while applying pressure to flatten them.
  • Sandwich is ready when bread is browned and cheese is melted.

This is a nice change from regular grilled cheese. A lot of adults get tired of regular grilled cheese by the time they have kids, this is one that you and your kids will love as well. Steps:

  • Preheat a large pan over medium heat.
  • Butter each slice of bread on one side.
  • Place mozzarella cheese on un-buttered side of two pieces of bread, top with other two slices of bread.
  • Sprinkle the garlic powder on each buttered side of the bread.
  • Cook in preheated pan until golden.
  • Heat marinara sauce in pan or microwave.
  • Serve sauce with sandwiches for dipping.

This was a winner in the Paula Deen recipe round up in the Nov/Dec.2009 Cooking with Paula Deen contest. It was submitted by Radelle Knappenberger and cooked and judged by Paula Deen. This recipe features a creamy sauce over chicken and we used the extra sauce on a side of pasta as well. Warning capers are not for everyone. This sauce needs to really thicken and takes time so don't make it when you are in a rush. Weekend recipe for sure. Make the sauce first and when it is almost ready do the grilling. I know it is written the opposite here but it works better that way. If after these caveats you want to make it, do so. It is yummy. It is served over whole breasts but slicing the breasts and drizzling sauce disperses the sauce even more. It is up to you. Enjoy! ChefDLH

8 boneless skinless chicken breasts
1 (16 ounce) box Swanson chicken broth
3/4 cup heavy whipping cream
1/3 cup crumbled gorgonzola
2 garlic cloves, minced
1 teaspoon ground black pepper
1/4 cup sun-dried tomato packed in oil, drained
1/4 cup capers, drained

Steps:

  • Preheat grill to medium-high heat (350° to 400°). Spray grill rack with nonstick nonflammable cooking spray.
  • Grill chicken, covered with grill lid, for about 7 to 10 minutes per side, or until cooked through. Set aside, and keep warm.
  • In a medium saucepan, add chicken broth, and cook over high heat until reduced by half. Stir in cream; reduce heat to medium, and cook, stirring frequently, until mixture is reduced by one-third. Add Gorgonzola, garlic, and pepper. Stir until cheese melts and sauce is creamy. Stir in sun-dried tomatoes.
  • Serve chicken with desired amount of Gorgonzola sauce and capers.
  • Makes 8 servings.
