2 cups rotisserie chicken, skin removed and shredded
1 cup broccoli florets, cut into 1/2" pieces
1/4 cup green onion, thinly sliced on an angle
6 oz. VELVEETA, cut into 1/4" cubes
1/4 cup hot sauce
2 Tbsp. honey
1/4 tsp. freshly ground black pepper
1 pkg. (14.1 oz.) ready-to-use refrigerated pie crusts
1 egg beaten with 1 Tbsp. water (for egg wash)
2 Tbsp. salt-free everything bagel seasoning

Steps:

  • Preheat oven to 400°F.
  • Line 2 sheet trays with parchment paper. In a large bowl, add chicken, broccoli, green onion, VELVEETA, hot sauce, honey, and pepper and toss until combined.
  • On a lightly floured work surface, roll out 1 pie crust until it's about 1/2" thick. Using a 4"-biscuit cutter, cut out 10 rounds from each crust, re-rolling the scraps if necessary. Spoon a heaping tablespoon of the filling onto one side of each circle, then fold it in half to create a semi-circle.
  • Press down around the edges of the pies with your finger, then press down with a fork along the edges to seal. Repeat with the remaining pie crust and filling. Lightly brush with egg wash and place on sheet trays, leaving about 1" in between each.
  • Using a paring knife, slice 3 vents in the top of each hand pie. Sprinkle with everything bagel seasoning and bake for 15 to 20 min. until puffed and golden. Remove from oven, let cool for 3 to 5 min. and serve warm or at room temperature.

A lovely warming pie. The stock in the sauce makes it very tasty. I normally serve this with sliced french beans on the side. Always goes down well.

6 chicken fillets
440 g broccoli
8 medium potatoes, peeled
75 g butter
150 ml milk
3 tablespoons flour
150 ml milk
salt and pepper
50 g cheese, grated

Steps:

  • Boil the potatoes until tender and mash- add butter/milk/salt pepper to taste.
  • Poach the chicken in 1.5 pints of water for about 15 minutes Remove from the poaching liquid- this stock must be kept for the sauce. Cut the chicken into bite sized chunks and distribute around the bottom of a large oven dish.
  • Steam the broccoli until tender, break into small florets and drain. Pour cold water over it to keep it green. Place in the oven dish with the chicken.
  • Now for the sauce- melt the butter and cook with the flour for about 1 minute then add the poaching liquid and stir until the sauce thickens. At this point add the cream and season to your taste with salt and pepper.
  • Pour the sauce over the chicken and broccoli and top with the mashed potato. Sprinkle the grated cheese on top.
  • Put in a pre-heated oven, about 180C for 20-25 mintes and hey presto!

2 tablespoons all-purpose flour
3/4 cup whole milk, at room temperature
1 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1/4 cup grated parmesan cheese
1 small store-bought rotisserie chicken breast, chopped into 1/4-inch pieces (about 3/4 cup meat)
1 cup broccoli florets, cut into 1/4 to 1/2-inch pieces, steamed or 2 ounces broccoli florets
1 tablespoon all-purpose flour, for dusting
2 (10 inch) round unfold-and-bake frozen pie crusts, thawed
1 large egg

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a 12-count mini-muffin pan with vegetable oil cooking spray. Set aside.
  • For the pot pie filling: Melt the butter in a 1-quart saucepan over medium-low heat. Add the flour and whisk until smooth, 1 to 2 minutes. Gradually add the milk, whisking constantly to prevent lumps. Simmer over medium-low heat, whisking constantly, until the sauce is thick and smooth, about 6 minutes. Remove the pan from the heat and stir in the salt, pepper, Parmesan, chicken and broccoli.
  • For assembly: On a lightly-floured work surface, roll out the dough 1/8-inch thick. Using the 3-inch round cookie cutter, cut out 12 pieces of dough. Using the 2-inch round cookie cutter, cut out another 12 pieces of dough. Press the large rounds of dough into the bottom of the prepared pan. Spoon the sauce into the pastry.
  • Combine the egg and 1 teaspoon water in a small bowl, using a fork. Brush the edges of the pastry with the egg mixture and place the remaining pieces of dough on top. Lightly press the edges of the dough together to seal. Press around the edges of the pies using the tines of a fork. Brush the tops of each pie with the beaten egg. Cut a 1/2-inch-long slit into the top of the pies using a paring knife. Bake until the tops are golden and the filling is bubbling, 15 to 18 minutes. Cool for 10 minutes and serve.

1/4 cup KRAFT Tuscan House Italian Dressing
1/4 cup fat-free reduced-sodium chicken broth
3 Tbsp. KRAFT Grated Parmesan Cheese
1/8 tsp. crushed red pepper

Steps:

  • Cook pasta in large saucepan as directed on package, omitting salt and adding broccoli to the boiling water for the last 4 min.
  • Meanwhile, heat oil in large skillet on medium-high heat. Add chicken; cook 7 min. on each side or until done (165ºF). Top with shredded cheese. Remove from heat, cover to keep warm.

Hand pies are the perfect compromise between a pastry and a hearty, savory knife-and-fork pie. The filling here consists of a simple but well-seasoned homemade cheese sauce that adds a comforting edge to tender, healthy broccoli. You can use fresh or frozen broccoli in the recipe (see recipe for details). With a pre-made refrigerated pie dough for the crusts, you'll find this recipe easy as pie!

1 tablespoon unsalted butter
1/4 cup chopped yellow onion
1 garlic clove, minced
Kosher salt and freshly ground black pepper
1 tablespoon all-purpose flour
1/2 cup whole milk
Pinch sweet paprika
Pinch dry mustard
2 ounces sharp Cheddar, shredded
1 cup fresh broccoli florets or thawed frozen broccoli florets
One 14.1-ounce box refrigerated pie dough
1 large egg whisked with 1 tablespoon water

Steps:

  • For the cheese sauce: Melt the butter in a medium saucepan over medium-low heat. Add the onion and garlic and cook until softened, about 30 seconds. Season with salt and pepper.
  • Stir in the flour and cook 15 to 30 seconds. Switch to a whisk and slowly stream in the milk while whisking constantly. Continue whisking until no lumps remain. Switch to a wooden spoon, bring to a simmer and simmer, stirring frequently, until thickened enough to coat the back of the spoon, 2 to 3 minutes.
  • Stir in the paprika and mustard. Stir in the cheese, stirring until melted. Season with salt and pepper. Set aside to cool to room temperature.
  • For the hand pies: If using fresh broccoli, prepare an ice bath by filling a medium bowl with ice and water. Bring a medium saucepan of salted water to a boil. Add the broccoli florets and allow to cook until bright green and crisp-tender, 2 to 3 minutes. Drain the broccoli and place immediately into the ice bath to stop the cooking. Drain and pat very dry. If using thawed frozen broccoli, just pat the florets very dry with paper towels.
  • Place the broccoli florets in a food processor and pulse until chopped. Stir the chopped broccoli into the cheese sauce and refrigerate until cooled and set, 1 to 2 hours.
  • When ready to form the hand pies, preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Lay the pie dough out on a work surface. Cut out circles from the dough using a bowl or plate that is 4 inches in diameter and cutting around it with a paring knife. You should get a total of 8 circles. Place 1 1/2 to 2 tablespoons of the broccoli-cheese mixture in the center of a dough round and brush the egg wash mixture around the edge of the circle, then fold one side of the crust over the filling, creating a half-moon. Press the edges to seal, then use the tines of a fork to press gently around the edges to seal again. Repeat with the remaining dough rounds and filling.
  • Brush the tops of the pies with egg wash and prick with a fork or make a small slit with a paring knife in the top of each to release steam. Bake until golden brown, 18 to 20 minutes. Cool for 10 minutes before serving.

  • Set a large skillet over medium-high heat and drizzle in a teaspoon or so of oil. Coat the pan, and when the oil is shimmering add the broccoli. Sprinkle with salt and red pepper flakes. Add the butter, then stir to combine everything and allow the butter to melt.
  • Once the butter is melted, add 1 tsp of water to the pan and cover with a lid. Reduce the heat to medium-low and steam until the broccoli is tender, stirring ever so often. It’ll take about 5 minutes, give or take a few.
