My friend at work made these for a party we were having. They were sooooo goood I had to have the recipe. Now, my family ask me to make these all the time.

Steps:
- Melt butter in pan, remove from heat and add brown sugar, stir until dissolved cool slightly.
- add eggs and vanilla.
- Beat well.
- stir in flour and baking powder.
- Mix thourghly add coconut.
- pour into 9x13 pan sprayed w/Pam.
- bake at 350 30 minutes cut while warm.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In large bowl, cream the shortening, brown sugar, eggs and vanilla extract. Slowly blend in flour, baking powder, and salt. Mix until well blended. Fold in chocolate chips, walnuts and coconut. Spread the mixture evenly in pan.
- Bake 20 to 25 minutes. Let cool before cutting into bars.

- Preheat oven to temperature 350°F
- Place butter in a 9x9 inch baking pan and put in oven to melt butter.
- Remove from oven and spread butter evenly over bottom of pan.
- Sprinkle with graham cracker crumbs, pressing down to form a crust.
- Sprinkle chocolate chips over top.
- Pour condensed milk over and sprinkle with a layer of nuts and a layer of coconut.
- Bake 15 minutes, or until coconut is golden. When cooled, cut into bars.

- To cookie mix prepared to package directions, add nuts, coconut and white chocolate chips. Butter the baking dish and spread cookie dough evenly into a thin layer across the baking dish. - Line 13x9-inch pan with foil, with ends of foil extending over sides. Place butter in prepared pan; bake 5 min. or until melted.
- Meanwhile, coarsely chop cookies; reserve 2 cups. Finely crush remaining cookies.

CRANBERRY COCONUT BARS
Steps:
- Crust: Preheat the oven to 350 degrees F. In a mixing bowl, combine the butter, sugar, and salt and mix well. Gradually add the flour, mixing to combine. Stir in the pecans. Press the mixture into the bottom of an ungreased 9-inch square baking pan. Bake 15 to 20 minutes, until browned.
- Filling: In a mixer, combine the sugar, flour, and baking powder and mix well. Add the eggs, milk, vanilla, and zest and mix well. Fold in the cranberries, coconut, and pecans. When the crust is baked, remove from the oven and spread the filling over it. Return to the oven and bake an additional 30 minutes. Cool in the pan on a wire rack. Cut into bars for serving.

- Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend up sides., In a large bowl, mix flour, brown sugar and salt; stir in 1 cup melted butter. - Preheat oven to 375 degrees. Lightly splash a 15-by-10-inch rimmed baking sheet evenly with water, then line with parchment paper.
- In a large bowl, stir together cookie crumbs, sugar, and butter until combined. Evenly press onto bottom and up sides of prepared baking sheet. Bake, rotating halfway through, until firm, about 10 minutes. Transfer to a wire rack; cool, about 20 minutes.
- Sprinkle cooled crust evenly with pecans and chocolate. Pour condensed milk over the top, spreading to cover completely (do not let it drip over the edges). Sprinkle with coconut.

- Heat oven to 350°F. In small bowl, beat butter, granulated sugar and 1/4 teaspoon salt with electric mixer on medium speed until light and fluffy. Stir in 1 cup flour. Pat in bottom of ungreased square pan, 9x9x2 inches. Bake 12 to 17 minutes or until very light brown.
- Meanwhile, in medium bowl, beat eggs slightly with wire whisk. Stir in vanilla. Gradually beat in brown sugar just until blended. Beat in 2 tablespoons flour and 1/2 teaspoon salt; mix well. Stir in coconut and pecans. Carefully spoon coconut mixture evenly over baked layer.

- 1. 1. In medium bowl combine the 24 crushed KEEBLER CHIPS DELUXE Original cookies and butter. Press on bottom of ungreased 13 x 9 x 2-inch baking pan. Bake at 350°F for 10 minutes.
- 2. Meanwhile, in large bowl stir together coconut and sweetened condensed milk. Spoon dollops on crust. Use two forks to evenly spread coconut mixture over crust. Sprinkle with pecans. Bake at 350°F for 15 to 20 minutes more or until beginning to brown.
- 3. Meanwhile, in medium microwave-safe bowl combine semi-sweet chocolate morsels and oil. Micro-cook at high about 1 1/2 minutes or until melted, stirring every 30 seconds. Evenly spread over baked mixture.
- 4. Coarsely break up the 6 remaining cookies. Sprinkle over chocolate. In a small microwave-safe bowl combine white chocolate morsels and remaining oil. Microwave on high about 45 seconds - 1 minute or until melted, stirring every 30 seconds. Drizzle over cookies.
- 5. Cool completely over wire rack. Refrigerate about 1 hour or until chocolate is set. Cut into 2 x 1-inch rectangles.
MRS. KOLBERT'S COCONUT BARS
Steps:
- Preheat the oven to 350°F. In a bowl with a fork stir together 1/2 cup of the brown sugar, 1 cup of the flour, and the butter until the mixture is combined well, press the mixture evenly onto the bottom of a 13-by 9-inch baking pan, and bake it in the middle of the oven for 10 minutes. In the bowl with the fork combine the remaining 1 cup brown sugar, the remaining 3 tablespoons flour, the coconut, the almonds, the eggs, the vanilla, and the salt and blend the mixture well. Spread the coconut mixture evenly over the crust and bake the mixture for 20 minutes, or until it is pale golden. Cut the mixture into 48 bars and let the bar cool completely in the pan on a rack. The coconut bars may be made 1 month in advance and kept frozen in airtight containers.
