TURTLE SHAPED COOKIES
Found this in a 2008 Taste of Home magazine, and posting it here to try later. This was submitted by Holly Snyder from Milton Penn. Prep time includes chilling.

Steps:
- In a large mixing bowl, cream the butter and brown sugar until it's light and fluffy.
- Beat in the egg, vanilla and maple flavoring. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Refrigerate for 2-3 hours or until firm.
- Shape dough into 1" balls. Place on lightly greased baking sheets. Push four pecan pieces into each ball for legs, add two small pecan pieces to each for heat and tail.
- Bake at 350*F. for 10-12 minutes or until edges are set. Carefully remove to wire racks to cool completely.
- To make the glaze:.
- In a small saucepan, melt the chocolate and butter with milk. Remove from the heat, stir in confectioner's sugar.
- Dip top of each cookie into glaze. Sprinkle with chopped pecans. Enjoy!

NEVER-FAIL CUTOUT COOKIES
I have tried numerous recipes for cutout cookies over the years-this one is foolproof. My daughter and my granddaughter love making these for holidays and social events. Most of all, we enjoy decorating them. You can try almond flavoring or another flavoring of choice. This recipe is easily doubled. -Irene Palm, Mansfield, Ohio

- Beat butter, cream cheese and sugar until light and fluffy. Beat in egg yolks and vanilla. Gradually beat in flour. Divide dough into 4 portions; shape each into a disk. Cover; refrigerate until firm enough to roll, about 30 minutes., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with floured 3-in. holiday cookie cutters. Place 1 in. apart on ungreased baking sheets., Bake until edges are light golden, 12-14 minutes. Cool on pans 5 minutes. Remove to wire racks to cool completely., For frosting, beat confectioners' sugar, butter, shortening, vanilla and enough milk to reach desired consistency. If desired, tint with food coloring. Spread or pipe over cookies. Decorate as desired.

- Using a handheld or stand mixer with a paddle attachment, beat the butter on high speed until creamy, about 1 minute. Scrape down the sides and the bottom of the bowl as needed. Switch the mixer to medium speed and beat in the granulated sugar and brown sugar until combined. Beat in the egg and vanilla extract, scraping down the sides and bottom of the bowl as needed. Turn the mixer off and pour the dry ingredients into the wet ingredients. Turn the mixer on low and slowly beat until a very soft dough is formed. Beat in the milk on medium speed. The dough will be very sticky. Cover the dough tightly with aluminum foil or plastic wrap and chill for at least 2 hours. Chilling is mandatory.
- Remove the cookie dough from the refrigerator and allow to sit at room temperature for 10 minutes so it is not rock hard. Preheat oven to 350F degrees. Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
- Scoop 1 Tablespoon of dough, form into a ball, and roll in the pecans. Repeat for each cookie. Place 10 balls onto each baking sheet.

- In a medium bowl of a stand mixer, cream together the butter, shortening and sugar. Add in the eggs and vanilla. Sift the flour and baking powder in a small bowl. Add the flour mixture into the creamed mixture until dough comes together.
- Remove 2/3 of the dough. With the remaining 1/3 dough in the bowl, add in the 2 tsp of matcha powder and mix until combined.
- Take the plain sugar cookie dough and split it into half. Take one half of the dough and roll into a cylinder about 1 inch thick in diameter. Then take the matcha dough and roll out to a thin sheet, the same width as the cylinder. Then wrap the matcha dough over the plain cylinder.
- Slice the cylindrical dough to form the bodies. I sliced mine about 1/4 inch thick. As you slice, the dough may flatten at the bottom. Try to shape the bottom so that they end up being round circles again.
