2 cups heavy cream
3 cloves garlic, smashed
1 bundle thyme
Pinch of cayenne
Kosher salt
1/2 stick butter, plus extra for baking dish
2 pounds turnips, peeled and sliced very thin (mandoline works best)
1 1/2 cups grated parmigiano

Steps:

  • Special Equipment: mandolin, 11 by 7-inch baking dish
  • Preheat the oven to 375 degrees F.
  • Put the cream, garlic, thyme and cayenne in a saucepan and season it with salt. Taste to make sure it is adequately seasoned. Bring the cream to a boil and then turn off the heat. Let the mixture steep for 15 to 20 minutes.
  • Butter the baking dish and layer in 1/3 of the sliced turnips. Sprinkle 1/3 of the grated cheese over the turnips and dot with 1/3 of the butter. Remove the thyme and garlic from the cream and pour 1/3 of the cream over the turnips. Repeat this process 2 more times until all of the ingredients are used up.
  • Cover the dish with foil, place on a baking sheet and bake in the preheated oven for 35 to 40 minutes. Remove the foil and bake for another 20 minutes, until golden. When done a fork should slide in and out of the center of the dish easily.
  • For easier serving, let the dish rest 10 to 12 minutes before serving.
  • Who knew a turnip could be soooooooooooooo good!

SLICED TURNIP & BACON BAKE

85g butter
6 rashers smoked streaky bacon , chopped
1 tbsp fresh thyme leaf
large onion , finely sliced
1 ½kg turnip , peeled and sliced
100g mature cheddar , grated

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Heat half the butter in an ovenproof frying pan. Add the bacon and cook for a few mins, then add the thyme and onions, season and cook for a further 8-10 mins until the onions are soft and golden. Scoop the onions into a bowl, leaving the buttery juices in the pan.
  • Off the heat, layer the sliced turnips in the pan with a scattering of fried onions, a sprinkling of cheese and some dots of butter between the layers. Season with a little salt and plenty of pepper as you go. Cover the pan with foil and bake for 1-1¼ hrs until the turnips are tender when prodded with the point of a knife. Leave the cake to relax for 5 mins. Turn it upside down onto a plate or board, then cut into wedges and serve.

Baking the turnips beforehand facilitates peeling. A very old root veggetable side dish, based ona medieval recipe. Enjoyed even by avowed turnip-haters.

6 small turnips
olive oil
1 -2 ounce grated cheddar cheese
1/4 cup brown sugar
2 tablespoons melted butter
1/3 cup breadcrumbs
2 tablespoons parmesan cheese
1 pinch nutmeg
salt & pepper

Steps:

  • Preheat oven to 325°F
  • Wash turnips and place them in a roasting pan coated with olive oil. Roast about 45 minutes until tender. Peel and slice thinly.
  • Butter a small casserole dish abd fill with alternating layers of turnips and cheese. Sprinkle 1 tsp of brown sugar over each layer of turnips before adding a layer of cheese, lasagna-style.
  • Mix together melted butter, bread crumbs, Parmesan, salt and pepper and nutmeg and sprinkle over the top of the casserole. Return to oven and bake for 10-15 minutes more, uncovered.

This is my favorite gratin, very hearty and full of taste! I have tried several veggie combos and this is by far the best!

2 cloves garlic, smashed
salt and pepper to taste
¾ cup half-and-half cream
2 teaspoons dried thyme
1 bay leaf
1 large leek - cleaned, and cut into 1/4 inch thick rounds
2 large turnips, peeled and sliced
1 cup cubed butternut squash
4 large mushrooms, sliced
2 large carrots, sliced
1 teaspoon chopped fresh rosemary
½ cup crumbled blue cheese
¼ cup shredded Gruyere cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a 2 quart casserole dish, rub with one of the garlic cloves, and sprinkle with a little salt. Set aside.
  • Heat the half-and-half in a small saucepan over medium heat. Add the thyme, bay leaf and both garlic cloves. Remove from the heat just before it boils.
  • Place the leek, turnip, squash, mushrooms and carrots into a large saucepan and fill with about 1 inch of water. Bring to a boil, cover and steam over medium heat for about 5 minutes. Drain and layer vegetables into the prepared casserole dish. Sprinkle rosemary in between the layers. Season with salt and pepper and sprinkle blue cheese and Gruyere cheese over the top. Strain the half-and-half and pour into the casserole.
  • Bake, uncovered, in the preheated oven until vegetables are tender and sauce is thick, about 40 minutes. Uncover for the last 20 minutes to allow the top to brown.

  • Gradually heat milk with thyme, peppercorns, garlic, and onion in a small saucepan until just simmering. Turn off heat and strain milk into a liquid measuring cup. In a medium saucepan, melt butter over medium, then add flour and stir 3 to 5 minutes, moving on to the next step if the mixture begins to darken. Reduce heat to medium low and whisk while adding warm milk. Once combined, increase heat gradually until sauce simmers, then maintain a simmer and stir almost constantly until thickened, 5 to 10 minutes. Off heat, whisk in gorgonzola until nearly melted, then stir in cream. Season with a pinch of ground or grated nutmeg and salt and pepper to taste. Cover or otherwise keep warm while assembling the gratin.
  • Preheat oven to 375 (F). Set a medium pot of water over high heat. Meanwhile, rub a 2 qt. gratin or baking dish with the cut surface of the garlic clove, then grease with butter.
