Steps:
- Shape cookie mix into 1-in. balls; roll in egg white, then in pecans. Using the end of a wooden spoon handle, make an indentation in the center of each ball. Fill with a candied cherry half. Place 2 in. apart on greased baking sheets., Bake at 350° for 12-15 minutes or until set. Remove to wire racks to cool.

TASTY THUMBPRINT COOKIES
These cookies are very easy and quick to make and have excellent results. Very tasty and versatile, too, cause you can use any type of jam you prefer.

- Preheat the oven to 190°C/375°F.
- Cream butter and sugar in a big bowl. Add the egg yolk. Sift in flour and salt and stir until just combined. Fold in granola cereal or nuts. Mix well.
- Using your hands (if the dough is sticky, flour them lightly) take small lumps of dough and roll them into balls. Make an indentation into each ball using your fingers or the handle of a wooden spoon.
- Fill each cookie with a ts of your favourite jam and bake for 12-15 minutes on a paper-lined baking sheet. The cookies should be slightly browned and the jam bubbly.
BUTTER AND JAM THUMBPRINTS

- Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone mats.
- Whisk the flour, baking powder and salt together in a bowl.
- In another bowl, whip the butter and the sugar with a hand-held mixer until fluffy, about 5 minutes. Beat in the egg and vanilla until just combined. Slowly beat in the dry ingredients in 2 additions, mixing just until incorporated.
- Scoop the dough into 1-inch balls with a cookie or ice cream scoop and roll in sugar. Place about 2-inches apart on the prepared baking sheets. Press a thumbprint into the center of each ball, about 1/2-inch deep. Fill each indentation with about 3/4 teaspoon jam.
- Bake cookies until the edges are golden, about 15 minutes. (For even color, rotate the pans from top to bottom about halfway through baking.) Cool cookies on the baking sheets. Serve.
- Store cookies in a tightly sealed container for up to 5 days.

- For the shortcrust pastry, sift the flour and icing sugar into a mixing bowl. Add the vanilla sugar, lemon zest and a pinch of salt. Rub the butter into the flour mixture until it is incorporated and then mix in egg yolks. Knead everything into a compact smooth dough. Wrap the dough and chill it for 1 hour.
- Remove the dough from the refrigerator and bring it to room temperature for 10 minutes. Form the dough into a long roll and divide it into 60 equal portions. Form a small ball from each portion and place it on a baking sheet covered with baking parchment (you will need two or more sheets). Press a dip (for the jam) into each ball with the handle of a wooden spoon.
- Heat the oven to 200C/fan 180C/gas 6. Heat the jelly or jam in a saucepan until it melts. Use a teaspoon to fill the dips in the dough balls.
- Bake for 12-15 minutes, then allow to cool completely. Finally, dust the cookies with some icing sugar. The cookies can be stored in an airtight container for several weeks.
TASTY HOLIDAY THUMBPRINT COOKIES

- Preheat oven to 350°.
- Spray cookie sheets with non-stick cooking spray.
- Beat cake mix, orange juice, orange peel and vanilla with mixer for 2 minutes.
- Increase speed to medium and beat 2 minutes more or until dough is smooth (dough should be very sticky still).
- With oiled hands, roll dough into 1 inch balls and place 2 1/2 inches apart on cookie sheets.
- Press the center of each ball with thumb and fill with 1/4 tsp of strawberry fruit spread.
- Sprinkle cookies with the chopped pecans.
- Bake for 8-9 minutes or until cookies are lightly golden brown and lose their shininess.
- Be sure that you don't overbake these cookies or they will be dry.
- Remove from oven and place on wire racks to cool completely.

- In separate bowl, combine flour, cornstarch and baking powder. Mix well.

- Heat oven to 325.
- In large bowl, beat butter and brown sugar until light and fluffy. Add egg and vanilla, beat until blended. Add flour, cracker crumbs and salt. Beat on low speed 1 minute or until stiff dough forms.
- Shape dough by heaping teaspoonfuls into 60 balls. On ungreased cookie sheets, place balls 2 inches apart. With thumb, make indention in center of each.

I started looking for a thumbprint recipe and found this one I have changed it a bit to fit my families tastes. These are a great holiday cookies. I have also dyed the dough orange for Halloween. These are very versatile.
