Turmeric Roasted Cauliflower is roasted in the oven to bring out the sweetness of the cauliflower mixed with the warm, rich spices of turmeric, cumin, coriander and paprika. This makes a wonderful side dish or add it to a rice bowl or a pita sandwich.

1 large head cauliflower, cut into 1 inch florets {about 1 1/2 to 2 pounds}
3 garlic cloves, minced
3 Tablespoons olive oil
1 teaspoon turmeric
1/2 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon coriander
1/4 teaspoon red pepper flakes
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
Garnish with freshly chopped cilantro

Steps:

  • Preheat the oven to 450 degrees F.
  • Cut the cauliflower into 1-inch florets and place them in a large mixing bowl with the minced garlic.
  • In a small mixing bowl combine the olive oil, turmeric, cumin, paprika, coriander, crushed red pepper, salt and pepper and stir. Drizzle the olive oil mixture over the cauliflower and toss to coat.
  • On a large baking sheet evenly spread the cauliflower.
  • Roast in the oven for 25-30 minutes or until the cauliflower is tender and starting to brown on the ends.
  • Serve warm with cilantro.

Number Of Ingredients 7

1 medium head cauliflower*
1 Tbsp ghee
1½ tsp ground turmeric
1 tsp sea salt**
1 tsp garlic powder
1 tsp onion powder
optional: ¼ tsp fresh ground black pepper

Steps:

  • Preheat oven to 425 F. Prepare a large baking sheet with a piece of parchment paper.
  • Cut the core out of the cauliflower, then chop it into large florets.
  • To rice the cauliflower, put it through the food processor with the shredding attachment, or use a box grater. Be warned: this takes muuuuuch longer.
  • Toss the cauliflower rice in a large bowl with 1 Tbsp ghee or coconut oil, the turmeric powder, garlic, onion powder, salt and pepper. Spread the mixture evenly on the prepared baking sheet. Try to smooth out any big clumps.
  • Pop the sheet in the oven, and roast for 20-25 minutes, until the rice becomes lightly browned. Check it at about 20 minutes to make sure it doesn't burn, then keep a close watch until 25 minutes.

  • Place seasoned cauliflower on parchment lined baking sheet and roast in preheated oven for 15 minutes or until lightly browned.

1 jalapeno, finely diced
1 tablespoon grated fresh ginger
1 teaspoon turmeric
1 head cauliflower, cut into florets

Steps:

  • Preheat oven to 425 degrees F.
  • Whisk together the oil, mustard seeds, jalapeno, ginger, and turmeric in a small bowl.
  • Place cauliflower in a medium baking dish and toss with the flavored oil and season with salt. Roast until lightly golden brown and just tender, 20 to 25 minutes. Serve hot.

1 small or 1/2 large head of cauliflower, coarsely chopped (about 7 cups)
4 Tbsp. extra-virgin olive oil, divided
Kosher salt, freshly ground pepper
Coconut-Turmeric Relish (for serving; optional)

Steps:

  • Working in 2 batches, pulse cauliflower in a food processor until pieces are about the size of a grain of rice (some smaller and some larger is fine).
  • Heat 2 Tbsp. oil in a large skillet over medium-high. As soon as oil is shimmering, add half of cauliflower and cook, tossing often, until golden in spots and tender but not mushy, about 3 minutes. Season with salt and pepper and transfer to another medium bowl. Wipe out skillet and repeat with remaining oil and cauliflower. Let cool slightly before serving.
  • If using relish, add to cauliflower and toss to coat. Season with more salt and pepper.
