1/2 chopped onion
1 minced garlic clove
1 cup basmati rice
1 tablespoon turmeric
1 1/2 cups chicken broth
1 bay leaf
1 drop thyme
salt and pepper

Steps:

  • Melt 1 tbsp butter in saucepan, add onion and garlic, cook until softened.
  • Add rice and turmeric; stir to coat.
  • Add remaining ingredients,bring to boil, cover and simmer 17 minutes.
  • Stir in remaining butter, remove bay leaf, serve.

2 cups water
1 tablespoon butter
1 cup long-grain rice
1/2 teaspoon turmeric
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 cup raisins

Steps:

  • In a medium saucepan, heat water and butter over high heat until water boils.
  • Stir in rice, turmeric, salt, and cinnamon. Reduce heat to simmer, cover and cook 15-20 minutes, until rice is tender.
  • Remove from heat, add raisins, and fluff with fork. Cover and let rest 10 minutes before serving.
  • Can be made in rice cooker on regular setting, add raisins at end of cycle and let sit on warm for 10 minutes.

2 teaspoons coconut oil
1/2 cup finely diced onions
1 cup short-grain brown rice
1/4 cup golden raisins
1 teaspoon grated fresh turmeric
2 cloves garlic, grated
2 1/2 cups vegetable stock or water
Salt and pepper

Steps:

  • Heat a medium saucepan to medium heat. Once heated, add the oil and allow to heat up. Once the oil is heated, add the onions and saute until translucent, about 4 minutes. Add the rice, raisins, turmeric and garlic. Toss to coat. Saute gently until you smell a nutty aroma, about 2 minutes, and then add the stock. Bring to a boil, cover and reduce the heat to low. Cook until the rice is tender, about 45 minutes. Remove from the heat and allow to steam for 5 minutes prior to removing the lid. Season with salt and pepper, and fluff with a fork before serving.

1/2 cup shortening
1/2 cup butter
1/4 teaspoon clove
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon orange zest
2 eggs, well beaten
1 2/3 cups sugar
1/3 cup ground almonds (optional)
4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
1 tablespoon brandy
1/4-1/2 cup port wine

Steps:

  • Preheat oven 400°F.
  • In bowl, cream butter and shortening. Add cloves, ginger, cinnamon, allspice, and orange peel. Mix well.
  • Beat in eggs, sugar, and almonds.
  • In another bowl, sift together flour, baking soda, salt, and baking powder. Add to butter mixture alternately with the brandy and wine.
  • Chill dough for about 30 minutes to an hour, or until firm enough to roll.
  • Turn chilled dough out on a floured board and roll until the dough is very thin.
  • Using pastry cutters, cut the dough into desired shapes.
  • Bake on greased cookie sheets for 10-15 minutes, or until nicely browned.

Lesotho, officially the Kingdom of Lesotho, is a landlocked country, completely surrounded by its only neighbouring country, South Africa. The friendly baristas brew Rooibos tea very, very strong - they actually have a special fine grind that can be run through an espresso machine. The tea comes out a deep red, so dark it's almost black. You can use any Rooibos tea, I used tea bags. I will be looking for the loose leaf so I can make this again. Rooibos tea has an added bonus, it's caffeine free! And it doesn't get bitter if you simmer it or let it steep a long time.

Steps:

  • Brew tea double to triple strength or you can simmer on the stove for even more strength. I used 4-5 Rooibos tea bags to 2 cup of water.
  • Add honey to taste.
  • Top with steamed milk. I just heated up almond milk till hot and bubbly.
  • Sprinkle in a dusting of cinnamon, or more to taste.
  • Serve immediately and enjoy.
