TURMERIC-GINGER MARINATED CHICKEN

Try this flavorful chicken dinner recipe for supper tonight. Seasoned with fresh turmeric, ginger, garlic, and coriander seeds, this is one chicken recipe that you'll want to keep handy.

0.5 cup plain Greek yogurt
2 tablespoon olive oil
1 tablespoon grated peeled fresh turmeric*
1 tablespoon grated peeled fresh ginger
1 tablespoon lime juice
2 cloves garlic, minced
1 teaspoon coriander seeds, toasted and ground
0.5 teaspoon kosher salt
4 skinless, boneless chicken breast halves (1 1/2 lb.) or 1 1/2 lb. skinless, boneless chicken thighs
Cooked basmati rice
Lime wedges
Fresh snipped fresh cilantro

Steps:

  • For marinade, in a small bowl whisk together the first eight ingredients (through salt). Place chicken in a resealable plastic bag. Pour marinade over chicken. Seal bag; turn to coat chicken. Marinate in the refrigerator 2 to 24 hours.
  • Remove chicken from marinade; discard any marinade remaining in bag. Place chicken on a well-greased grill rack. Grill, covered, over medium heat 12 to 15 minutes or until done (165°F for breasts, at least 170°F for thighs), turning once. Serve chicken with rice and lime wedges. If desired, sprinkle with fresh cilantro.

1 chicken, cut up
1 cup lemon juice
1 teaspoon ground turmeric
3 -4 garlic cloves, minced
1 large onion, sliced into rings
salt and pepper

Steps:

  • Combine lemon juice, turmeric, garlic and onion in a large bowl.
  • Add chicken, turning to coat with marinade.
  • Marinade in fridge for 8 hours or overnight, turning occasionally of marinade doesn't cover chicken.
  • Remove chicken from marinade.
  • Sprinkle lightly with salt and pepper.
  • Grill or broil chicken and onions until done, turning once.
  • Serve topped with onions.

1 large head cauliflower
sea salt, to season
1 pinch fresh ground black pepper
2 tablespoons olive oil
1 teaspoon fresh ginger, grated
1 teaspoon ground cumin
1/2 teaspoon turmeric
1 handful coriander, chopped
75 g quinoa

Steps:

  • Preheat the oven to 200°C.
  • Trim the stem of the cauliflower and remove the leaves, but leave the core in tact.
  • Using a large knife, cut the cauliflower from top to base into three or four 3/4-inch-thick steaks. Season each steak with salt and pepper on both sides.
  • Heat 1 tablespoon of olive oil in a pan over medium-high heat. Sear the cauliflower steaks until golden brown, about 2 minutes on each side.
  • Bring together the ginger, cumin, turmeric and mix in a tablespoon of olive oil. Brush or spoon the mixture on the cauliflower steaks.
  • Place this on the baking tray and roast for around 15 minutes, until tender.
  • Cook the quinoa as instructed, serve the cauliflower on top and garnish with the coriander and some mixed salad.

  • Toast the turmeric and chilli powder in a dry frying pan. Mix with the grated ginger, garlic cloves and vegetable oil. Season.

I bought some marinated garlic recently and used it in some recipes... At first my wife was worried about the hole cloves of garlic in the dish but when she tried it she was hooked. I have since used it in several dishes replacing the garlic listed. I looked for some recipes here and didn't have any luck so I looked elsewhere and found this!

30 garlic cloves, peeled*
1/2 cup olive oil
1/4 cup lemon juice
1/4 cup champagne vinegar
salt and pepper, to taste
4 sprigs fresh oregano or 1/2 teaspoon dried oregano

Steps:

  • Blanch the whole cloves of garlic in boiling water for 5 minutes; remove, and plunge into cold water. Drain and dry off the garlic.
  • Mix the remaining ingredients (except the fresh oregano sprigs) in a blender until emulsified. If using dried oregano toss it in with the oil and vinegar.
  • Put the cloves in a jar and cover with the marinade, tuck the sprigs of oregano into the jar. Cover and allow it to marinate for at least 5 days in the refrigerator. Serve as is for a snack or side dish or add to a green salad.
  • Don't be surprised if a couple of people polish off the whole batch in one sitting! I had tried several other marinated garlic recipes before this one and was not happy with the results. This one is perfect!
  • *NOTE: You can double the garlic cloves and will still have enough dressing to cover. The marinade makes a fantastic salad dressing after you use up the garlic.
