EVERYTHING BAGEL SUSHI ROLLS



Everything Bagel Sushi Rolls image

Our chopped challenge this week was smoked salmon. We couldn't let go of how much we love it on bagels, so we took those flavors and ran with it. Chopped Basket Ingredient: Smoked Salmon

2 cups sushi rice
Kosher salt
3 tablespoons rice vinegar
1 tablespoon sugar
Finely ground black pepper
4 ounces cream cheese
2 carrots, finely chopped
2 scallions, chopped
Vegetable oil, for greasing
12 ounces thinly sliced smoked salmon
1/4 cup dried onion flakes
1/4 cup sesame seeds
2 tablespoons dried garlic flakes
2 tablespoons poppy seeds
Soy sauce, pickled ginger and wasabi paste, for serving

Steps:

  • Rinse the rice in several changes of cold water, and then add to a medium saucepan with 3 3/4 cups water and 1 teaspoon salt. Bring to a boil, and then cover and reduce the heat to low. Cook, without stirring, until tender, about 15 minutes. Remove the saucepan from the heat and let stand, covered, 15 minutes more. Transfer the rice to a baking sheet. Stir together the vinegar, sugar and 1/2 teaspoon salt. Drizzle over the rice and fold in with a spatula. Let the rice cool completely (about 10 minutes in the refrigerator or 30 minutes at room temperature).
  • Stir together the cream cheese, carrots and scallions.
  • Place a piece of plastic wrap on the work surface and lightly oil. Place 1 1/3 cups rice on the plastic wrap and, using wet hands, press into a 7-inch square. Lay a single layer of salmon over the rice, leaving a 1/2-inch border on the side nearest to you. Line one-quarter of the vegetable cream cheese along the edge of salmon closest to you. Using the plastic wrap as an aid, firmly roll the sushi up into a cylinder. Press the rice together with even pressure to form a roll. Repeat with the remaining ingredients, making 3 more rolls.
  • Stir together the onion flakes, sesame seeds, dried garlic and poppy seeds on a baking sheet. Roll each roll in the seed mixture. Cut each roll into 8 pieces with a wet knife. Serve with soy, wasabi and pickled ginger.

JACKASS ROLL

4 tapioca papers
12 ounces sushi rice, recipe follows
8 ounces pulled BBQ pork butt
16 french fries (crispy)
8 slices avocado (1/4-inch thick)
4 tablespoons Spicy Chili Mayo, recipe follows
Wasabi, for garnish
Gari (pickled ginger), for garnish
2 1/2 cups Japanese short-grain rice
2 1/2 cups water
1 cup rice vinegar
Pinch sea salt
1/4 cup sugar
1 cup mayonnaise (recommended: Kewpie)
1 tablespoon mirin
1 tablespoon rice vinegar
1 teaspoon tamari
1/2 tablespoon lime juice
1/2-ounce chili paste

Steps:

  • In shallow pan with hot water gentle re-hydrate tapioca paper, until soft.
  • Place paper on rolling mat and apply sushi rice on 2/3 of paper. Place pork, French fries, and avocado on rice.
  • Firmly roll paper into itself creating a maki roll. Move mat to 1 side of roll and firm up the end with palm of your hand, and repeat on the other side. Repeat with remaining ingredients.
  • Cut each roll into 6 equal pieces and garnish on top of roll with Garlic Chili Mayo.
  • Garnish plate with wasabi and gari.
  • Wash rice 6 times, until water runs clear from rice. Cook rice in rice cooker and let stand after cooking for 15 minutes. Combine rice vinegar, salt and sugar until dissolved, this is the sushi zu.
  • Place rice in a hangiri, or wooden bowl, and pour sushi zu over top as evenly as possible. Spread the rice out around the bowl as evenly as possible, separating the rice from itself not mashing it. Flip entire rice mixture over and let stand for another 10 minutes. Keep rice in some type of thermal container.
  • Mix all ingredients thoroughly and refrigerate.

SUSHI ROLLS

5 sheets nori
2 cups sushi rice, recipe follows
2 ounces sushi-grade tuna, cut into1/4 by 1/2 by 3-inch strips
2 ounces sushi-grade salmon, cut into1/4 by 1/2 by 3-inch strips
1 hot house cucumber, julienne
1 carrot, peeled and julienne
1/2 avocado, thinly sliced
5 cups short-grain sushi rice
6 cups water
1/2 cup rice vinegar
2 tablespoons sugar
1 teaspoon salt

Steps:

  • Place a nori sheet lengthwise on a bamboo rolling mat, shiny-side down. Position the sheet about 1-inch from the edge of the mat closest to you and leave some of the bamboo mat exposed on either side of the nori sheet. Wet your hands in cool water and take a handful of sushi rice. Place the rice in the center of the nori and use your fingers to spread the rice evenly over the nori. Be sure to leave a 3/4-inch strip of nori uncovered on the far side. Place tuna strips and some julienne vegetable, cucumber or avocado along the center of the rice. Be careful not to overfill the nori. Place your fingertips over the fillings to hold them in place. Then, use your thumbs to lift up the edge of the bamboo rolling mat closest to you. Begin rolling the mat away from you, while applying pressure to the fillings to keep the roll firm. Roll the mat over slowly until it covers the rice and the near and far sides of rice join, still leaving the 3/4-inch strip of nori, rice-free, exposed. While holding the bamboo mat in position, apply pressure to the roll with your fingers to make the roll firm. Slice the roll in half, then cut both rolls twice to make 6 equal sized pieces. Repeat this process with the salmon and various fillings, nori and rice.
  • Rinse the rice in cold water while stirring briskly to remove any dirt. Drain the rice completely. Place the rice and the 6 cups of water in a medium sized saucepan and cover it with a tight fitting lid. Bring the water to a boil over medium heat. Allow the water to boil for 3 minutes and then reduce the heat to low and continue cooking 15 minutes without removing the lid. Remove the rice from the heat and remove the lid (the water should no longer be visible). Turn the rice out evenly on a well-greased cookie sheet using a spatula or rice paddle. Sprinkle the rice with the vinegar, sugar, and salt while mixing with a spatula or rice paddle until the rice reaches body temperature. Keep the rice covered with damp paper towels or napkin until the rice is ready to use.

BAYPORT BBQ SANDWICH ROLLS

1 tablespoon table salt
1 teaspoon yeast
3 pounds high-gluten bread flour, plus more for dusting
Vegetable oil, for greasing
Cornmeal, for dusting

Steps:

  • Combine 4 cups water, the salt and yeast into the bowl of a stand mixer fitted with a dough hook. Set the mixer to low speed and add the flour gradually until fully incorporated. Increase the speed to medium until a ball of dough forms, 1 to 2 minutes.
  • Place the dough into an oiled tub, cover and proof for about 12 hours.
  • Grease the pans with oil and then dust with cornmeal.
  • Dump the dough onto a floured surface and cut into five 1-pound portions. Shape and place the loaves into the prepared pans, and then dust the tops of the loaves with more cornmeal. Cover the pans with a towel and proof for 2 hours.
  • Preheat the oven to 425 degrees F.
  • Remove the towels and bake the loaves for 15 minutes. Remove the bread from the pans and cool on a wire rack. Cut each loaf into thirds and then halve each portion for the buns.

SHRIMP SUSHI ROLLS

1/3 cup seasoned rice vinegar
2 teaspoons sugar
1 teaspoon salt
1 1/2 cup short grained sushi rice
1 1/2 cups water
4 sheets toasted nori
1 Kirby cucumber or 1/2 regular cucumber, seeded and cut into matchsticks
1/2 firm-ripe Hass avocado, peeled, thinly sliced lengthwise, sprinkled with lemon juice
8 large cooked shrimp, peeled and cut in 1/2, lengthwise
Soy Sauce

Steps:

  • For the rice:
  • Mix together vinegar, sugar, and salt.
  • Rinse the rice with cool water in a colander; drain. Put the rice and water in a medium saucepan with a tight-fitting lid. Bring to a boil over high heat, reduce heat to very low and simmer, tightly covered, (For a good seal, wrap the pan's lid tightly with a small kitchen towel and cover the saucepan. Make sure the towel's edges are folded up well away from the heat.) Cook until all the water is absorbed, about 15 minutes. Remove the rice from the heat (don't uncover), and set aside for 10 minutes.
  • Fluff the rice with a fork and transfer to a large bowl. Add the vinegar mixture and toss with a wooden spoon. Spread the rice out on a parchment paper-lined baking sheet. Fan the rice continuously with a fan or magazine until cooled. Cover the rice with a damp towel.
  • To assemble rolls:
  • Place the sushi mat with the slats running crosswise directly in front of you on a clean work space. Lay a sheet of nori shiny-side down and lined up with the closest edge of the mat. Light moisten fingers with water, and evenly press about 1/4 of the rice onto the nori, with 1 1/2-inches uncovered at the far edge. Line up the fillings about an inch from the closest near edge, evenly across the rice. Leave 1 inch of rice uncovered at the far edge.
  • Beginning with the near edge of the mat, tightly roll up the nori, rice, and fillings into a cylinder. Firmly tug on the rounded mat over the roll as you pull on the far edge of the mat to tighten the roll. Open the mat, dab unsealed edge of nori with a bit of water and roll the sushi forward to seal. Transfer the sushi to a plate and cover with damp paper towels. Repeat with remaining rice and fillings.
  • Cut each sushi roll, crosswise, into 8 pieces with a sharp wet knife.
  • Serve with bowl of soy sauce for dipping.

⅔ cup uncooked short-grain white rice
3 tablespoons rice vinegar
3 tablespoons white sugar
1 ½ teaspoons salt
4 sheets nori seaweed sheets
½ cucumber, peeled, cut into small strips
2 tablespoons pickled ginger
1 avocado
½ pound imitation crabmeat, flaked

Steps:

  • In a medium saucepan, bring 1 1/3 cups water to a boil. Add rice, and stir. Reduce heat, cover, and simmer for 20 minutes. In a small bowl, mix the rice vinegar, sugar ,and salt. Blend the mixture into the rice.
  • Preheat oven to 300 degrees F (150 degrees C). On a medium baking sheet, heat nori in the preheated oven 1 to 2 minutes, until warm.
  • Center one sheet nori on a bamboo sushi mat. Wet your hands. Using your hands, spread a thin layer of rice on the sheet of nori, and press into a thin layer. Arrange 1/4 of the cucumber, ginger, avocado, and imitation crabmeat in a line down the center of the rice. Lift the end of the mat, and gently roll it over the ingredients, pressing gently. Roll it forward to make a complete roll. Repeat with remaining ingredients.
  • Cut each roll into 4 to 6 slices using a wet, sharp knife.
