SLOW-COOKER CASSOULET

Slow-Cooker Cassoulet image

Many look down their noses at the slow cooker, but it's perfect for some dishes. Stews, for one. This sausage, duck and white bean stew is rich and hearty, and you can leave the dish wholly unattended for five to seven hours as it cooks. Brown the meat before you put it in the pot or not.

Provided by Mark Bittman

Categories     dinner, soups and stews, main course

Time 5h

Yield At least 4 servings

Number Of Ingredients 15

1/2 pound dried small white beans, like pea or navy
4 cloves garlic, peeled and crushed, plus 1 tablespoon minced garlic
1 medium-large onion, chopped
2 carrots, peeled and cut into chunks
2 cups cored and chopped tomatoes, with their juice (canned are fine)
3 or 4 sprigs fresh thyme or 1/2 teaspoon dried thyme
2 bay leaves
1/4 pound slab bacon or salt pork, in 1 piece
4 sweet Italian sausages, about 3/4 pound
1 pound boneless pork shoulder
2 duck legs
Chicken, beef or vegetable stock, or water, or a mixture, as needed
Salt and freshly ground black pepper to taste
1 cup plain bread crumbs, optional
Chopped fresh parsley for garnish

Steps:

  • Combine beans, crushed garlic, onion, carrots, tomatoes, thyme, bay leaves and meats in a slow cooker, and turn heat to high. (If you like, brown sausage and duck legs in a skillet before adding.) Add stock or water to cover by 2 inches. Cover and cook until beans and meats are tender, 5 to 6 hours on high heat, 7 hours or more on low.
  • When done, add salt and pepper to taste, along with minced garlic. If you like, remove cassoulet from slow cooker, and place in a deep casserole; cover with bread crumbs and roast at 400 degrees until bread crumbs brown, about 15 minutes. Garnish and serve.

CLASSIC FRENCH CASSOULET

Classic French Cassoulet image

This Classic French Cassoulet is a classic and simple yet delicious casserole with beans, pork sausage and chicken breast. Served with a french baguette and salad? Oui Oui!

Provided by Joanna Cismaru

Categories     Main Course

Time 2h40m

Number Of Ingredients 15

4 links Italian pork sausages (or similar, whole or cut into smaller pieces)
1 pound chicken breasts (boneless and skinless, cut into bite size pieces)
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
1 large onion (chopped)
1 medium carrot (chopped)
1 leek (chopped (white and green part))
½ cup white wine (such as a sauvignon blanc or pinot grigio)
2 small shallots (chopped)
4 cloves garlic (minced)
19 ounce cannellini beans ((1 can), drained)
1 teaspoon rosemary (dried)
½ teaspoon herbes de provence
1½ cup water
2 tablespoon parsley (for garnish)

Steps:

  • Preheat your oven to 325 F degrees.
  • Brown the sausage: In a dutch oven or heavy bottomed sauce pan, brown the sausages whole. I prefer a smaller bite so I dice them up in pieces. Remove them once browned.
  • Cook the chicken: Add the chicken breasts to the Dutch oven next, season with salt and pepper, and cook until the chicken is no longer pink and cooked through. Remove and set aside.
  • Saute veggies: Add onion, carrot, and leeks to the pot in the residual sausage fat and cook until tender, about 4 minutes. Then add the shallots and garlic and saute for an additional minute.
  • Deglaze pot: Add the white wine to deglaze the pot, scraping any brown bits from the bottom.
  • Finish the cassoulet: Return the protein to the pot and add beans, herbs, water and seasoning. Bring to a simmer then cover and transfer to the oven to bake for 2 hours.
  • Garnish with parsley and serve.

EASY AND DELICIOUS SLOW COOKER CASSOULET

Easy and Delicious Slow Cooker Cassoulet image

I am married to a chef, but I can't cook. So I make a lot of food in my slow cooker when it's my night to cook. We love France and French cooking, and this recipe is a wonderfully simple, elegant cassoulet that even I can make and he loves. Wonderful for cold nights and dinner parties. Double the recipe for leftovers - it melds overnight very well.

ALL-DAY SLOW-COOKER CASSOULET

All-Day Slow-Cooker Cassoulet image

This cassoulet is filled to the brim with white beans, lamb, garlic sausage, and smoked sausage (and breadcrumbs), but you can make yours with pork or ham, goat, or duck. Whatever you use, keep the proportions similar to those listed below, and you can't lose.

Provided by Andrew Schloss

Categories     Slow Cooker     Lamb     Sausage     Duck     Bean     Breadcrumbs     Soup/Stew

Yield Serves 12

Number Of Ingredients 20

1 pound dried large white beans, such as cannellini or baby limas
1 duck (about 4 pounds)
1 pound boneless leg of lamb, cut into 2-inch cubes
2 teaspoons kosher salt
1/2 teaspoon coarsely ground black pepper
8 ounces garlic sausage, cut into 2-inch lengths
8 ounces smoked sausage, such as andouille, cut into 2-inch lengths
1 large onion, diced
2 large celery ribs, cut into 1/4-inch-thick slices
4 cloves garlic, minced
1/4 teaspoon ground nutmeg
1 teaspoon dried Italian seasoning
Pinch of ground cloves
1/2 cup dry white wine
4 cups beef or chicken broth, or a mixture
1 can (about 15 ounces) diced tomatoes, drained
2/3 cup dried breadcrumbs
1/4 cup coarsely chopped fresh Italian (flat-leaf) parsley
Special Equipment
5-6 quart slow cooker

Steps:

  • Put the beans in a medium bowl, cover with about 3 inches of water, and soak overnight. Or put the beans in a saucepan, cover with water, and bring to a boil for 3 minutes. Remove from the heat and soak for 1 hour. Then drain.
  • Meanwhile, cut the duck into 8 pieces: 2 breast halves, 2 drumsticks, 2 thighs, and 2 wings. Trim off all visible fat and excess skin and set the fat and skin aside. Season the duck pieces and lamb with the salt and pepper and set aside.
  • Cook the duck fat and skin in a large heavy skillet over medium heat until between 1/4 and 1/3 cup fat is in the pan, about 4 minutes. Remove the solid pieces of fat and skin and discard. Brown the duck in the hot fat on both sides, about 4 minutes per side, and set aside. Brown the lamb, about 4 minutes per side, and set aside. Brown the sausage pieces on all sides, about 3 minutes per side, and set aside.
  • Add the onion and celery to the skillet and sauté until lightly browned, about 4 minutes. Add the garlic, nutmeg, Italian seasoning, and cloves and sauté until aromatic, about 1 minute. Add the wine and bring to a boil. Add the beef broth and tomatoes, return to a boil, and remove from the heat.
  • To assemble the cassoulet:
  • Layer the beans and meats, in alternating layers (4 of beans, 3 of meat), starting and ending with the beans. Pour the liquid over all, cover the cooker, and cook until the beans are tender, 8 to 10 hours on low.
  • Preheat an oven to 350°F. Mix the breadcrumbs and parsley and scatter over the top of the cassoulet. Transfer the crock with the cassoulet to the oven and bake until the top is browned and bubbling, about 30 minutes. Serve immediately.

SLOW COOKER PORK CASSOULET

Slow Cooker Pork Cassoulet image

A wonderful bean recipe that is fancy enough for guests. Has a breadcrumb topping.

Provided by Sarah Olson

Categories     Main Course

Time 18h

Number Of Ingredients 14

1 pound cassoulet beans or great northern beans
8 slices bacon (sliced and cooked (you can use a touch of the grease from the bacon to brown the pork ribs))
2 lbs. country pork ribs
3 cups chicken broth
15 oz. can Italian diced tomatoes
1 cup white wine (I used Duck Pond Pinot Gris)
1 1/2 cups diced carrots
1 cup diced white onion
1 Tbsp. minced garlic
1/4 tsp. pepper
1 1/2 tsp. dried leaf thyme (not ground thyme)
2 bay leaves
1 cup Italian seasoned breadcrumbs
1/2 cup salted butter (melted)

Steps:

  • Note before starting, that the beans need to be soaked overnight by covering with water, then draining off that water before starting the recipe. Or if you are short on time you can you use the quick soak method.
  • After cooking the bacon, brown the pork ribs in the same pan using some of the bacon grease, no need to cook the pork ribs through, just brown them.
  • Add beans, cooked bacon, country ribs, chicken broth, diced tomatoes, wine, carrots, onion, garlic, pepper, thyme and bay leaves to the slow cooker, stir.
  • Cover and cook on low for 9-10 hours.
  • When the cooking time is done remove the ribs from the slow cooker, shred and add the meat back to the slow cooker and stir. Remove and discard bay leaves.
  • Preheat oven to 400°.
  • In a small bowl mix together the breadcrumbs and butter. Crumble this mixture over the beans and pork in the slow cooker.
  • Add the slow cooker insert without the lid into the 400° oven for about 10 minutes or until the topping is browned. (be sure your slow cooker is rated for use in the oven, most of the newer Crock-Pot® brand slow cookers are, up to 400°.)
  • Serve and enjoy!

Yield Serves: 6-8

Number Of Ingredients 13

4 duck legs, each cut into 2 portions
500g boned pork shoulder, in large cubes
4 Toulouse sausages, twisted and cut to make 4 small sausages
100g smoked lardons
2 red onions, peeled and cut into thick wedges
1 garlic bulb, halved across
2 x 400g cans chopped tomatoes
600ml hot chicken stock
1 red chilli, scored down one side
A few sprigs of thyme
1tsp sherry vinegar
2 x 400g cans cannellini beans, rinsed and drained
1 large baguette

Steps:

  • Set the oven to 160°C/320°F/Gas Mark 3. Put a deep roasting tin in the oven to heat up or preheat a slow-cook pot.
  • Heat a large frying pan, add the seasoned duck portions, skin-side down, and leave them to brown, then turn them over to seal the meat. Put in the hot tin or pot, drain off all but 1tbsp of fat.
  • Add the pork to the pan and let it brown all over. Spoon into the tin or pot. Add the sausages, lardons, onion wedges and garlic halves, cut-side down, to the pan and brown them all over.

EASY CASSOULET

Easy Cassoulet image

Cassoulet on a weeknight? It's possible! This quick and easy cassoulet with white beans, chicken, and sausages comes together in about 45 minutes.

Provided by Sally Vargas

Categories     Entree     Dinner     Ingredient

Time 45m

Yield 6

Number Of Ingredients 14

4 ounces thick-cut bacon, cut into 1-inch pieces
4 bone-in, skin-on chicken thighs (about 1 1/2 pounds)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 sweet Italian pork sausages (about 12 ounces)
2 tablespoons olive oil, divided
1 yellow onion, finely chopped
3 cloves garlic, minced
1 (14.5-ounce) can diced tomatoes
2 (14.5-ounce) cans great northern or navy beans
1 small handful fresh thyme, tied together with kitchen twine
1 1/2 cups coarse fresh breadcrumbs
2 teaspoons chopped fresh parsley, plus more for garnish
Baguette, for serving

Steps:

  • Prep the chicken and sausages: Pat the chicken dry with a paper towel and season both sides with salt and black pepper. Prick each sausage with the tip of a paring knife in a couple of places. This will prevent them from bursting as they cook.
  • Cook the onions and garlic: Pour off and discard all but a thin layer of fat from the skillet. Return the skillet to the stove over medium heat. Add the onions and garlic and cook for 3 to 4 minutes, until the onions soften.
  • Turn on the broiler: Set a rack about 8 inches from the broiler element and turn on the broiler.

  • The next morning, bring the beans with the onion and garlic to a boil on the stovetop (if your slow cooker insert is cooktop safe, use that). Once they have boiled for 5 minutes, transfer either the cooktop safe pot to the slow cooker base or pour them into your slow cooker insert. Add the olive oil and enough water (if needed) to cover by 2 inches. Cook for 3-6 hours on low or 2-4 hours on high (how long they will take depends on the age of the beans), until mostly tender.
  • Near the end of the beans' cooking time, begin the cassoulet: cook the bacon in a large, heavy skillet until crispy. Move it around so that it does not burn. Remove the bacon and drain on paper towels before crumbling and setting aside.
  • Pour off all but a few tablespoons of the bacon grease (reserve that grease). Now add the sausage and brown it in the skillet. Remove the sausage with a slotted spoon and set aside. Once again pour off excess grease if you need to (I did not), leaving about 2 tablespoons of fat.
