TURKISH WALNUT SOUP

Turkish Walnut Soup image

There are a few countries that claim to be the birthplace of walnut soup, and countless variations and recipes. This particular version is Turkish, and it's one of my favorite autumn soups to make. I've specified vegetable stock in the recipe, although it's worth noting that I've used chicken stock in the past.

Time 35m

Yield 4

Number Of Ingredients 10

1 cup shelled walnuts
1 tablespoon olive oil
3 shallots, chopped
3 cloves garlic, chopped
2 oranges, zested and juiced
1 pinch ground cinnamon
4 cups vegetable stock
½ cup plain yogurt
salt and ground black pepper to taste
¼ cup chopped cilantro

Steps:

  • Roast the walnuts in a dry frying pan over medium heat, stirring frequently, until golden brown and fragrant. Remove the pan from the heat, and pour walnuts onto a cutting board to cool slightly; coarsely chop the nuts.
  • Heat the olive oil in a saucepan over medium heat. Stir in the shallots and garlic; cook and stir until the shallots have softened and turned translucent, about 3 minutes. Add the chopped walnuts, orange zest, orange juice, and cinnamon, and boil for 1 minute.
  • Puree the mixture in a blender or food processor with 1 cup of vegetable stock. Return the soup to the saucepan and pour in the remaining 3 cups of vegetable stock.
  • Bring to a boil; reduce the heat and simmer for 4 to 5 minutes. Remove from heat; stir in the yogurt, and season with salt and black pepper to taste. Garnish with chopped cilantro.

WALNUT SOUP

Walnut Soup image

Provided by Grace Young

Categories     Soup/Stew     Nut     Dessert     Vegetarian     Walnut     Healthy

Yield Makes 4 servings as a tonic

Number Of Ingredients 3

2 cups shelled walnuts, about 8 ounces
1/4 cup rice flour
1 1/2 slabs brown candy (peen tong), about 3 ounces

Steps:

  • Preheat oven at 350°F. In a large saucepan, bring 1 quart water to a boil over high heat. Add the walnuts and boil, uncovered, 1 minute. Drain well. Spread the walnuts on a cookie sheet lined with aluminum foil. Bake 15 to 20 minutes, or until golden and fragrant. Cool on a rack.
  • Place the cooled walnuts in a food processor or blender with 1/2 cup cold water, and process until almost a smooth paste, scraping down sides of work bowl. Add 1/2 cup cold water and process until almost smooth.
  • In a 2-quart saucepan, whisk the rice flour and 1 cup water until smooth. Whisk in the walnut puree and 2 1/2 cups cold water. Heat over medium-high heat, whisking constantly, until mixture comes to a boil. Cut the brown candy into smaller pieces. Add the brown candy, reduce heat to low, and simmer 10 minutes, whisking occasionally. The soup should be the consistency of a light cream soup. If mixture is too thick, whisk in up to 1/2 cup more water. Serve piping hot (no more than 1 1/2 cups per person.)

HOMEMADE MANTI (TRADITIONAL TURKISH DUMPLINGS)

Homemade Manti (Traditional Turkish Dumplings) image

Manti is a famous meal from my country. To prepare this dish takes time, but I'm sure you'll agree it's worth it! Enjoy-afiyet olsun (bon appetit)!

Provided by Asli Ocak

Categories     Main Dish Recipes     Dumpling Recipes

Time 1h30m

Yield 4

Number Of Ingredients 11

2 cups flour
½ teaspoon salt
2 eggs
½ teaspoon water, or as needed
2 onions, peeled
½ pound ground beef
salt and pepper to taste
3 tablespoons vegetable oil
1 tablespoon red pepper flakes
1 tablespoon minced garlic
1 (8 ounce) container plain yogurt

Steps:

  • Combine the flour and salt in a mixing bowl. Add the eggs and water, mixing well with your hands. Add more water, if needed, to form a soft dough. Cover and set aside for at least 30 minutes.
  • Shred the onions and place them in a colander or sieve set over a bowl; drain the juice and discard. Combine the onion, ground beef, salt, and pepper; mix the meat well with a spoon until mashed.
  • Divide the dough into two portions and lightly flour a work surface. Keep one piece of dough covered while you roll out the second portion into a rectangle, rolling the dough as thin as you can. Cut the rectangle into 2-inch squares with a knife or pastry wheel.
  • Place about 2 teaspoons of the meat filling in the center of each square. Seal the dumplings by gathering the edges of the dough and pinching them together at the top to form a bundle. Transfer the finished manti to a floured plate, and sprinkle more flour over the manti to prevent sticking. Repeat with the second piece of dough.
  • Heat the oil and red pepper flakes in a small skillet over low heat just until the pepper flakes have started to color the oil; don't let them burn. Remove from the heat and keep warm. Stir the minced garlic into the yogurt and set aside.
  • Bring a large pot of salted water to a boil over medium-high heat, and cook the manti until the filling is no longer pink, and the dough is tender, 20 to 25 minutes. Drain well. Divide the manti among four plates. Spoon the yogurt sauce over the manti and drizzle each serving with the hot pepper oil.
