Steps:
- Crush 1 garlic clove and mix with 3 tbsp yogurt, the lemon juice, 1 tsp tomato purée, half the spices, and some seasoning in a medium bowl. Add the chicken, toss, cover and chill in the fridge for at least 1 hr or overnight.
- Make the chilli sauce. Put 100g of the tomatoes, the whole red chilli, the remaining spices, garlic clove and tomato purée, plus 1 tbsp olive oil, half the red onion and the pomegranate molasses in a food processor. Add some seasoning and pulse until puréed, then set aside.
- Heat oven to 200C/180C fan/gas 6, and heat a griddle pan. Thread the chicken onto metal skewers or wooden ones that have been soaked, then wipe off the excess marinade. Skewer the remaining tomatoes on a separate skewer. Lightly oil the griddle with the remaining olive oil and brown the chicken on both sides, then transfer to a baking tray and bake in the oven for 10 mins, or until cooked through. Meanwhile, griddle the tomatoes for 1-2 mins, turning halfway through so they have griddle marks on both sides.
- Serve the chicken and tomatoes on flatbreads with the remaining red onion, pickled chillis, the remaining Greek yogurt, parsley and coriander with the chilli sauce spooned over.

TURKISH LAMB PITAS WITH TOMATO SAUCE
Steps:
- For lamb:
- Combine first 13 ingredients and 2 tablespoons oil in large bowl; mix to blend thoroughly. (Can be prepared 1 day ahead. Cover and refrigerate.) Using moistened hands and 1/4 cup for each, shape lamb mixture into about 20 oval patties measuring approximately 3x1 1/2x1/2 inches. Arrange patties on sheet of foil.
- Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add patties; cook until browned, about 4 minutes per side. Using slotted spoon, return patties to foil. Reserve drippings in skillet.
- For sauce:
- Heat drippings in skillet over medium heat. Add onion and garlic; sauté until onion is soft, about 5 minutes. Add tomatoes, lemon juice, and allspice. Bring to boil, scraping up browned bits. Stir in pomegranate molasses. Return patties to skillet. Reduce heat to medium-low, cover, and simmer until patties are cooked through and tender, about 20 minutes. Transfer patties to bowl. Tilt skillet and spoon fat off top of sauce. Simmer sauce until slightly thickened, mashing tomatoes with back of fork, about 5 minutes. Season with salt and pepper. Return patties to sauce. Remove from heat.
- Meanwhile, preheat oven to 350°F. Wrap pitas in foil; bake 12 minutes to heat.
- Simmer patties in sauce until heated through; mix in green onions. Cut pitas in half; gently open each half. Place 1 or 2 patties and some sauce into each pita half and top with dollop of yogurt.
- *A thick pomegranate syrup that is available at Middle Eastern markets and some supermarkets.

- Kuzu Tandır (roasted lamb) The Kuzu Tandır is known to be one of the most beloved meat dishes in Turkey. It is also known for its tender meaty goodness and is traditionally cooked using a special oven.
- Pilav (rice) Turkish rice is so tasty that you can eat it on its own. What makes it different from typical rice dishes is that it’s richly seasoned with simple ingredients such as onions and special Turkish spices.
- Manti (dumplings) Think Chinese dumplings, but Turkish spices. Think Ravioli, but non-Italian fillings. Manti is an excellent dish that the Turks have mastered because a perfect Manti requires uniqueness when it comes to taste and texture.
- Kestane şekeri (sugared candy) If you have a sweet tooth like the Turks, the Kestane şekeri might be just right for you. These are sugared chestnuts. One of the best traditional food to eat in Turkey, this dessert is extra special because it dates back to the 1300s.
- Mozaik Pasta (chocolate cake) This chocolate cake is a staple in any Turkish cafe. They also say that most Turkish mothers can make their own version of this dessert in an instant.

- Kebap (yes, with a “p”) Even its most famous dish is incredibly diverse. Wikipedia lists 37 varieties, using beef, lamb, or chicken either minced, cubed or thinly sliced, either plated or wrapped, and served with salads, sauces and turşu – pickled vegetables such as peppers, cabbage, carrot, and small cucumbers..
- Köfte. Meat balls. Don’t go into a köfte restaurant expecting anything other than köfte. These restaurants are heaven for the indecisive. The only choices here are whether you have a full or half portion and whether you fancy green salad or piyaz – beans and onions in oil.
- Hamsi (anchovy) With around 5,000 miles of coastline, fishing is big industry. But the number one favorite fish is hamsi, fresh from the Black Sea. While it can be baked or poached, it’s simply best when it is fried.
- Zeytinyağlılar (“those with olive oil”) Time to feed the vegans. Any restaurant displaying a variety of dishes in the window will also have zeytinyağlılar – vegetable dishes cooked in olive oil and served cold.
- İmam bayıldı (or “the Imam fainted” when he found out the cost of all the olive oil) This is an eggplant dish. Eggplant features a lot in the Turkish kitchen and this is a very popular version.
- Karnıyarık. As with so much of Turkish cuisine there is a meat version and a veggie version. Karnıyarık is the meat version of İmam bayıldı, cooked exactly the same but with ground beef or lamb in the stuffing.
- Dolma (stuffed) The vegetable that is, not the diner – although change the suffix and with “doldım” and you can say “I’m stuffed”. Peppers (biber dolması), zucchini (kabak dolması), vine leaves (yaprak dolması), cabbage leaves (lahana dolması), or chard leaves (pazı dolması) are stuffed – the leaves are rolled up, of course – with a mixture of ground beef, spices, and a little rice, then cooked in diluted tomato paste.
- Çiğ Köfte (chee kerfte – raw meatballs) This one began as a serious meat dish but ended up vegan! A speciality dish of raw mince and spices, it was prepared for special occasions – and still is a some parts of the country.
- Mantı. Imagine Italian ravioli made of dough rather than pasta, a third of the size, and topped with tomato sauce, garlic yoghurt, and chili pepper infused melted butter.
- Kahvaltı (breakfast) The full Turkish breakfast is a sumptuous feast of dishes, the promise of which will get the most resistant early riser out of bed.

- Kahvaltı or Turkish breakfast - I know, it's not just one food, but instead, Turkish breakfast is more of an experience. Breakfast is a traditional family gathering and a sit-down affair for most Turks on the weekends.
- Borek - Borek is a variation of baked, filled pastries made of a thin flaky dough, known as yufka, and the filling is either cheese, potatoes, spinach or all three!
- Gozleme - I call this the Turkish version of a Mexican quesadilla, but if you are unfamiliar with this Mexican dish then Gozleme is translated to a stuffed 'pancake.'
- Iskender Kebab - Popular all over the country of Turkey, this is not a dish you make a home! Thin slices of lamb or beef in tomato based sauce, served over cubes of pide bread with a scoop of yoghurt and grilled vegetables by the side.
- Mantı - Probably the coziest of Turkish meals, Mantı is similar to a dumpling or ravioli. While usually filled with a minced lamb mixture, you will find that the mixture varies throughout the regions.
- Meze - Meze, or appetizers, are a perfect addition to any meal. There are so many to choose from, but eggplant, salads, and yogurt-based mezes are usually the favorite.
- Doner Kebab - You won't meet a Turkish person who doesn't love a good doner kebab, well unless they are vegetarians (which I haven't met many who are!).
- Ayran - While this isn’t necessarily a 'food,' it is a much loved salty yogurt drink that everyone enjoys alongside their doner or durum. For some foreigners who eat their yogurt on the sweet and fruity side, it takes a while to adjust, but believe me, before long you will find yourself craving this combination of food for any meal!
- Sutlac - Saving the desserts for last means they are the perfect ending to all Turkish meals (ok, maybe not breakfast). Sutlac is a yummy rice pudding usually cooked, if traditionally served, in a clay bowl.
- Baklava - Baklava is the most popular dessert of Turkey! There are so many variations of baklava but the base is made of layers of yufka dough, different spices (such as cardamom or cinnamon), chopped nuts like pistachios, and soaked in a hot simple syrup.

- Turkish Eggplant Salad Recipe. I know many people are split on eggplant, and I think it has a lot to do with the texture. Like mushrooms, they can be rubbery when cooked wrong.
- Turkish Fava Bean Puree. Fava beans have a wonderfully unique flavor profile, with hints of nuts, sweetness, and even cheese. This appetizer is super popular in Turkey, and it can be made to set up firm or as a dip.
- Greek Yogurt Turkish Flatbread (Bazlama) If you’ve wanted to try homemade flatbread but don’t have a mixer, this recipe is for you! This soft and tender flatbread recipe can be made in one bowl with minimal kneading and just 15 minutes of rest time.
- Turkish Beans. These are not the sweet BBQ beans you might be used to. Instead, they contain tomatoes, onions, garlic, and carrots. The Mediterranean seasoning makes these a great little side to any meal.
- Best Fried Eggplant Recipe with Tomatoes. Between the juicy roasted tomatoes and crisp garlic chips, I could eat this dish as a main meal any day. The key to getting the perfect texture on your eggplant is to salt your slices and let them ‘sweat’ for about 45 minutes.
- Turkish Bread (Pide) I fell in love with these pizza-like bread boats many years ago. They’re a cross between stuffed bread and a savory pie, and I wish I made them more often.
- 20-Minute Turkish Vegetarian Meatballs. There’s no reason vegans have to miss out on a plate full of ‘meaty’ meatballs and spicy marinara. I love finding vegan alternatives, and this one is terrific.
- Roasted Red Pepper Dip (Muhammara Recipe) Slightly sweet, slightly smoky, and just as spicy as you like, this dip is on another level to boring old hummus.
- Turkish Spicy Ezme Salad. This recipe is almost like a Turkish chimichurri. It uses tomatoes, onion, garlic, and parsley and will enhance anything from kebabs to burgers to chicken.
- Turkish Tomato Cucumber Salad. My favorite thing about this recipe has to be the color. It’s lively and beautiful and will brighten up any table. And then there’s the taste!

- Heat a large frying pan over medium/low heat. Add the olive oil and fry onion and peppers until completely soft, but not coloured, 10-15 minutes. Stir regularly, making sure the onions don't catch any colour.
- Grate the tomatoes with the cut side against the coarse side of a box grater, until only the skin remains. Discard the skin. Whisk the eggs in a bowl with some salt and pepper.
- When the onion and peppers are soft, add the grated tomato and chopped parsley. Simmer for 5-10 to allow the flavours to mingle, making sure to stir regularly. Season with salt and pepper to taste.
- Turn the heat down to low. Add the eggs. Cook until the eggs are as you like them, stirring constantly. Personally, I prefer menemen to be slightly runny. Serve immediately, with an extra scattering of parsley, if you like.
