Steps:
- Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with cooking spray or butter.
- Put the berries in the prepared baking dish. Evenly distribute the cake mix over the berries. Sprinkle with the walnuts and oats. Evenly drizzle the butter over the entire dish.
- Bake until firm and golden brown, about 55 minutes. Let sit 5 minutes. Serve with ice cream or whipped cream.

WILD HUCKLEBERRY PIE

Steps:
- Mix the above ingredients together with a spoon so that everything is well distributed;
- pour into the bottom pie shell as it sets in the pie plate.
- Dot the top of the mixture with 2 or 3 dabs of butter.
- Top off with the second pie shell.
- Once it is correctly positioned you should have a 1" overlap on the top crust so that it can be crimped with the bottom crust.
- Crimp or pinch the two crusts together and make a decorative edge to seal the two piecrusts.
- The pie can be refrigerated until you are ready to bake or baked immediately.
- To bake, preheat your oven to 450 degrees.
- Place the pie on the middle shelf of your oven and bake for 15 minutes then turn the temperature down to 350 degrees and continue baking for 30-40 minutes or until the filling starts to bubble over.
- Once the pie looks done and the crust is a light golden brown, it should be done.
- Take it out and let the pie cool on a cooling rack until it is ready to serve.
HUCKLEBERRY BUCKLE II
This is a family recipe from my husband's mom and grandma. I like it better than the traditional cobbler. This works well with blueberries and blackberries also!

Steps:
- Preheat oven to 375 degrees F (190 degrees C.) Grease the bottom of a 9 inch square pan.
- In a large bowl, cream 1/4 cup butter and 1/2 cup sugar. In a separate small bowl, combine flour, baking powder and salt. Stir into butter mixture. Stir in milk; mixture will be thick and lumpy. Spread batter into the prepared pan.
- In a large bowl, combine berries, 3/4 cup sugar and 1/2 cup boiling water. Pour over the batter in the pan. Dot the top with remaining 1 tablespoon of butter.
- Bake in the preheated oven for 45 to 50 minutes.

RHUBARB MIX AND DUMP CAKE
It is a very moist cake and very different from all the ones I have made, pies to jams, bars,cakes..I have been trying to get my husband to like Rhubarb desserts for over 25 years and this one made the grade.... A+... he said now this is a keeper and is not to be given away to the neighbors... LOL...He loved it...

Steps:
- Mix together the first 5 items . flour, gelatin,sugar,cinnamon,and tapioca. (set aside 2 Tab.of mixture for Sauce, seen below).
- Then mix together with Rhubarb -- well coating rhubarb.let set 5 min --.
- Spread into a 9x13 -- or close to that size -- glass cake dish (I have heard rhubarb doesn't like alum.).
- Sprinkle dry cake mix over the entire Rhubarb mixture. cover well.
- Drizzle the cup of water evenly over mixture.
- Spot the top with dabs of butter (about 3-4 Tab).
- Cover tightly with foil.
- Bake 350 F for 45-55 minutes or so until cake is done.
- IF . the cake still looks like flour, in spots, after 45 minute.
- I smear a little more soften butter on top the area and let it set in the oven another 5 minutes Cake should be done by then -- .
- Remove from oven. Cool on rack.

- Top with, Vanilla ice cream,or Cool Whip.
- and on top of that I pour a little of my Rhubarb Sauce over the cake when serving.
- My husband likes to pour a little of the Vanilla Flavored coffee cream over the cake -- So Yummy.

- -- In a small saucepan . Put 2 to 2 3/4 cups chopped rhubarb and 2-3 Tablespoons water.
- 1/2 to 3/4 cup sugar --.
- 2 Tablespoons of the mixture that was set aside from cake (first 5 ingredients.).
- -- cook over MED. Heat, stir as not to bun -- will cook up fast. In about 5-7 minute.
- when the rhubarb is like mush it is done. ,.
- -- It will thicken when chilled -- you can add more water if too thick .just a few drops at a time.
- I Drizzle this over the Cool Whip looks pretty -- and good.

- My husband is not a fan of Rhubarb -- but this is one he said it is a KEEPER.!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan. Mix together the all-purpose flour, whole wheat flour, baking soda and salt. Set aside.
- Combine the egg, vanilla, 1/2 cup melted butter, buttermilk, and 1 1/2 cups brown sugar in a bowl. Add the flour mixture and stir until combined. Gently fold in the huckleberries. Pour batter into prepared pan.
- To make the topping, combine 1/2 cup brown sugar, the white sugar, oats, and cinnamon. Toss with 1 tablespoon melted butter. Sprinkle the topping evenly over the cake batter.

- Drain pineapple, reserving juice. Remove 2 Tbsp. juice; reserve for later use. Pour remaining juice into 13x9-inch baking dish sprayed with cooking spray. Add drained pineapple; mix well.
- Reserve 1/2 banana for later use. Chop remaining bananas; place over pineapple. Sprinkle with dry cake mix, then nuts. Drizzle with milk.

- Preheat the oven to 400 degrees and make sure you have a rack near the top of the oven. Heat rises, remember? Butter and flour an 11-inch tart pan with removable bottom or a 9x13 cake pan and set aside.
- Mix the flour, baking powder, salt and sugar in a large bowl. In another bowl, whisk together the buttermilk and eggs. Now, with one hand whisking the mixture, drizzle in the melted butter. You need to do this to keep the heat of the butter from scrambling the eggs.
- Pour the wet ingredients into the dry ones, and mix just to combine. About halfway through the mixing, add the lemon zest and 1/2 cup of the huckleberries. Pour the batter into the tart pan and make sure it's evenly distributed. Sprinkle the remaining huckleberries over the cake, then the maple sugar.
- Bake for 20-25 minutes, or until a toothpick comes clean out of the center of the cake. Gently remove the tart pan from the oven and set on a rack. Let this sit 5 minutes, then, very gently, pop the bottom up from the pan to free the cake, which will look like a large, flat muffin. If it sticks on the sides of the pan, use a knife to free the cake. Let the cake rest on the rack for 15-20 minutes before eating.
