ROSIE'S TRADITIONAL IRISH SODA BREAD
This Irish soda bread recipe was passed on to me by a dear friend of my mother's who was born and raised in Ireland. It's the best Irish soda bread I have ever had. It is much higher, lighter and softer than most other recipes I have seen. It has an excellent flavor and texture, as well.

GRANDMA DOLORES' IRISH SODA BREAD
I got this recipe from my grandmother, who is part Irish. I have always loved this soda bread recipe and make it every year for St. Patrick's Day. Even though the seeds are listed as optional, I consider them a key flavor. If you can't find them, it will taste be tasty bread, but I much prefer the caraway flavor in there.

Steps:
- Place lemon juice into the bottom of a glass measuring cup and pour in enough milk to fill to the 1 cup mark-Do not stir!
- Leave milk on your counter for 1 hour- during this time, measure out all of your other ingredients, but wait to set out the butter until the last 15 minutes.
- Preheat oven to 350F and grease a round cake pan or pie plate.
- Sift together flour, baking soda, baking powder, sugar, and salt.
- Using a pastry blender or two knives, cut in the butter chunks until evenly mixed in and mixture looks grainy.
- Stir in dried fruits and caraway seeds.
- Pour the milk mixture into the bowl and stir with a wooden spoon until all ingredients are moistened- don't overmix.
- Dough will still be tacky at this point but will pick up more flour while kneading.
- Sprinkle some flour onto a flat surface and scape dough onto the floured surface; flour your hands and knead the dough gently until it forms a ball- no more than 2 minutes or you will toughen the dough, and it may be less than that depending upon the humidity of the day.
- (As long as it forms a ball, it can still be little sticky- this is different from yeast bread.) Place dough ball into prepared pan and flatten slightly into a thick disk.
- Using a serrated knife, make a deep cross in the surface of the bread.
- Bake until golden brown and until bread sounds hollow on the bottom when rapped, about 35-45 minutes.

GRANDMA MCANDREWS' IRISH SODA BREAD
This is not the dark bread you see in every restaurant in Dublin or Galway these days but I promise, it's authentic Irish Soda Bread, exactly how my late Irish grandma made it. Serve warm or cold with butter. This freezes great. I've made several loaves before St. Patrick's Day, or family parties. I freeze them, take them out the morning they're needed and warm up in a hot oven for 5 -7 minutes before serving.

- In a large bowl, stir together the flour, sugar, baking soda, baking powder, and salt. In another bowl, whisk together eggs, buttermilk, and corn oil. Make a well in the center of the flour mixture, and pour in the buttermilk mixture. Add the raisins, and stir a few times, just until the ingredients come together into a soft dough. Turn the dough out onto a floured surface, and with floured hands shape dough into a ball. Place the dough on the prepared baking sheet, and cut a large cross in the top with a sharp knife.
- Place the bread on a middle rack of the preheated oven, and bake until golden brown, 30 to 40 minutes.

GRANDMA'S UNBAKED IRISH SODA BREAD
My grandma made this every weekend to go with her traditional big Irish breakfast. It's cooked on an electric griddle and cut into toast-sized slices that can be eaten buttered, toasted, or fried crisp in the bacon drippings. Serve with butter and jam or fry insides down on hot pan with bacon drippings for a minute until golden and crispy. Unfried pieces can be toasted on the second day, but won't keep longer then that.

Steps:
- Preheat an electric griddle or fry pan to medium-high, about 350 degrees F (175 degrees C). Stir the flour, salt, baking powder, and baking soda together in a large bowl until well combined.
- Stir in the buttermilk, 1/2 cup at a time, until the mixture forms a very sticky ball of dough. Turn the dough out onto a well-floured surface, and knead gently 8 to 10 times. Pat the dough into a circle about 1 1/2 inch thick, and cut the circle into quarters.
- Place the wedges onto the preheated griddle and cook until the bottom is golden brown, about 15 minutes; turn over and cook the other side until golden, another 10 to 15 minutes. A toothpick inserted into the center of a wedge should come out clean. Stand the wedges on a wire rack to cool, then cut each wedge in half and slice horizontally for serving.

IRISH SODA BREAD
Traditional Irish soda bread is a very simple and quick bread recipe. There are only a few ingredients. Any recipe that includes orange zest, raisins, or any other fruit is not soda bread. Keep in mind that even as late as the middle twentieth century oranges and other fruits were Christmas gifts. I seriously doubt the poor Irish peasants couldn't get oranges to eat let alone use the zest. If you find a recipe that has sugar, eggs and/or baking powder, it is a cake. If it has yeast, it is not Irish Soda Bread either. Salt was difficult enough to come by. And under no circumstances would an Irishman use his whisky in his bread. (Talk about a stereotype!) So, if you are looking for a REAL "traditional" Irish SODA bread, look for the use of SODA only. Ignore anything else. I got this recipe from my grandma. She cannot remember where she got it. She only knows she and her mom made this together when she was a child. She says spoiled milk, even up to the point of curdling, is better than anything else. If you wanted to get as close as possible to the Mother Isle, use a "soft wheat" or Pastry flour. Otherwise, like my cheap arse, an all purpose works just fine. The recipe is so simple I am sure there are hundreds of others like it. So, I am not taking credit for anyone else's idea. It's just a really easy, simple bread recipe. Use it, you'll love it. This recipe is as easy as anything you will find after making ice cubes. Mix all ingredients in a bowl mix, knead only ten to fifteen times, and bake. Don't forget the three to four beers it takes while you wait for the bread to bake.

Steps:
- Preheat oven to 425.
- Mix dry ingredients in a large mixing bowl with a fork.
- Pour in milk slowly and stir until dough is sticky.
- Sprinkle counter top with flour. Knead dough lightly on counter top 10 to 15 seconds ONLY. Too much will make the bread heavy.
- Grease bottom and sides of corning ware or bread pan and place dough in middle.
- Slice with and "X" across top of dough.
- Place lid on top or cover with another pan. Foil works in a pinch.
- Bake for 30 minutes.
- Remove lid (or any cover from pan) and bake an additional 15 minutes.
- Remove from oven.
- FOR BEST RESULTS! Place a damp paper towel over the bread when cooling. Some say cover with a tea towel and sprinkle water over the top. I am not into using my tea towels, AKA dish towels, for bread covering. What I do is take two paper towels folded over one another, soak them, wring them out, place the folded towels in a single layer over the bread with a pan holder over that until cooled.
- Slice, enjoy!
TRADITIONAL IRISH SODA BREAD
This makes a fairly dense, rustic (ugly, even) loaf of bread that is tasty and not sweet. It is crusty and rough on the outside, chewy inside. Nummy hot with lots of butter! Note: sometimes (depending on humidity etc) it takes a bit more than the 1 1/2 cups of buttermilk--just keep adding a little bit at a time until it all holds together as stated in the recipe.

Steps:
- Heat oven to 425 degrees F. Brush a baking sheet with melted butter or spray with non-stick spray.
- Combine dry ingredients in a deep bowl. Gradually stir in 1 cup buttermilk, beating constantly, until dough is firm enough to be gathered into a ball. If dough crumbles, add up to 1/2 cup more buttermilk, 1 tbsp at a time, until it holds together.
- Place on a lightly floured board and pat into an 8-inch flattened round loaf.
- Place loaf on baking sheet and slash a 1/2-inch deep "X" into the top of the dough with a small, sharp knife.
- Bake at 425 degrees F for about 45 minutes, or until the top is golden.
- Serve hot.
