CROCK POT BBQ BAKED BEANS
These BBQ baked beans in a crock pot are the perfect side dish for your next potluck or BBQ. They are sweet, savory, beefy, hearty, and oh so delicious!

Steps:
- Fry bacon until crisp. Drain on paper towel and crumble or chop into smaller pieces.
- Pour off most of the grease from pan and add ground beef, onion, and garlic. Cook until ground beef is browned and onions are soft and clear. Season to taste with salt and pepper
- Place ground beef mixture and bacon crumbles into a large crock pot.
- Add remaining ingredients and stir well.
- Cover with lid and cook on high 1-2 hours or on low for 4-6 hours.

- Place dry beans in a large pot. Pour water over top and stir in salt. Cover the pot and allow the beans to soak overnight.
- The next day, drain beans reserving 4 cups water. Rinse beans and set aside.
- Meanwhile, heat oil in a large saucepan over medium-high heat until shimmery. Add diced bacon, garlic, and onion to pan and stir frequently until bacon begins to crisp, about 8-10 minutes.
- Reduce heat to medium and whisk tomato paste, molasses, sugar, vinegar, sauce, and chili powder into mixture. Bring to a simmer, stirring constantly and then stir in rinsed beans and 4 cups reserved water.
- Cover beans and bring to a low boil over medium-high heat. Remove from heat and transfer to a 4-qt slow-cooker. Cook beans on high 4-5 hours until beans are soft and sauce begins to thicken. Keep beans in slow-cooker on "warm" until ready to serve. (beans will thicken up even more the longer they sit)

This delicious recipe can be prepared stove top, in the oven, on a BBQ grill, in the crock pot, or over the lowest part of a campfire. The original recipe came from a Marlboro booklet called The Original Cook Like a Man Cookbook. It also called for 2 cups smoked ham, chopped, and was a one-pot meal for camping. We prefer it as a side dish without the ham, and make it on the stove or in the oven, too. My son is the one who introduced me to it. This recipe represents typical cowboy cuisine of the Southwestern U.S.

- Cook and chop bacon.
- Combine all ingredients in a large Dutch oven (or crock pot if using that). Mix well.
- Simmer on the stove, over a camp fire, in the oven (at 350°F), in the crock pot, or on the grill (medium heat) until the vegetables are soft (at least an hour).
- You should stir often (unless you're cooking in the oven or crock pot), to prevent sticking on the bottom of the Dutch oven. Stir lightly, you don't want to mash the beans.

- Preheat oven to 425 degrees Fahrenheit.
- Lightly grease a pie pan.
- In a bowl MIX everything.
- Pour into pie pan.
- Bake in the preheated oven about 30 minutes or until lightly browned.
- You can sprinkle some shredded cheddar cheese on top and return to oven for a few minutes to melt if you wish.

- In a saucepan melt butter, then add cream cheese and mix until smooth.
- Add heavy cream and whisk it inches Then add jalapeño juice and whisk that in
- Mix in Cheese, stir until cheese is completely melted.
- Mix in Jalapeños, Salt, Cajun Seasoning, and Flour.
- Continue whisking until all ingredients are completely mixed.
- Grease a casserole dish and layer bottom of pan with half of the cooked macaroni.
- Gently pour half the mixture over noodles.
- Add another layer of noodles and cheese mixture.
- Sprinkle top with bread crumbs. Cover with foil and bake at 350 for 30 minutes.
- Uncover and bake for another 20 to 30 minutes or until golden brown on top.
