TURKEY WALDORF SALAD
An American classic, Waldorf salad gets its name from the majestic Waldorf-Astoria Hotel in New York City, where it was first served in 1896. Crunchy, sweet, savory, and satisfying, it is the perfect use for leftover turkey and all those beautiful fruits and nuts from your Thanksgiving table centerpiece. Chopped ripe pears are a great addition; this tasty salad can also be served on a bed of crunchy butter lettuce in place of the celery root.

- In a large bowl, gently toss the turkey, celery, celery leaves, apple, grapes, and pecans until combined. In a small bowl, whisk together the yogurt, mayonnaise, honey, and 1/4 teaspoon salt until well combined. Put the celery root in a small bowl, add 2 tablespoons of the dressing, and toss to coat completely. Add the remaining dressing to the turkey mixture, season with salt and pepper, and toss gently to evenly dress the salad.
- To serve, spread the celery root evenly onto a serving platter, top with the dressed salad, garnish with celery leaves and serve immediately.
TURKEY TACO LETTUCE WRAPS

- Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat. Add the turkey and season with salt and pepper. Cook the meat, breaking it up into very small pieces, until cooked through, about 6 minutes. Remove to a plate.
- Add the remaining teaspoon of olive oil, the garlic and red onion to the skillet. Reduce the heat to medium-low and cook, stirring, until tender, about 5 minutes.
- Return the turkey to the skillet. Add the chili powder and 1 cup water and increase the heat to medium-high. Cook until most of the water has evaporated, about 3 minutes. Add the corn and beans and cook until no liquid remains, about 3 minutes. Season with a sprinkling of salt and pepper.
- Pile the turkey filling onto the lettuce leaves. Top with some pico de gallo, avocado, queso fresco, cilantro, and a squeeze of lime. Serve with additional lime wedges.
- Combine the tomatoes, jalapeno, lime juice, onion, cilantro and salt in a small bowl and mix.

- For the filling: Brown the turkey in the oil in a large saute pan over medium-high heat until no longer pink. Add the mushrooms, scallions, garlic and water chestnuts, and cook until the mushrooms soften. - Place the dried cherries in a coffee mug and pour hot water over the cherries to cover. Allow them to soak for 5 minutes then drain. Place the cherries on a paper towel lined plate and set aside.
- To prepare the Waldorf Salad combine the mayonnaise, lemon juice, salt and pepper in a medium mixing bowl. With a rubber spatula, blend until smooth.
- Add the cherries, celery, grapes, apple and walnuts to the mayonnaise mixture. Fold to combine. Cover and refrigerate until ready to use.
- To prepare the wraps, line one flatbread with 3 lettuce leaves. Place about 1/4 cup of diced turkey in a line down one short side of the wrap. Place the shredded cheese in a line next to the turkey, and about 1/2 cup of the Waldorf Salad next to the cheese leaving one short end without ingredients. Starting on the end with the turkey, roll the wrap up tightly. Slice the wrap into three 3-inch pieces.
