MIRACLE CROCK POT CHICKEN

I created this recipe with what I had on hand. By some miracle, my entire family LOVED it. I hope you do too.

3 -4 carrots, peeled & sliced
1 1/2 lbs boneless skinless chicken breasts
1 (10 1/2 ounce) can cream of chicken soup
1 (1 7/8 ounce) package knorr leek soup mix
1/2 cup water
1/4 cup red wine (I used Merlot)
1/2 tablespoon parsley flakes
salt & pepper, to taste

Steps:

  • Spray crock pot with non-stick spray.
  • Layer bottom of crock pot with carrots.
  • Add chicken breasts.
  • Mix the remaining ingredients in a bowl and then pour on top of the chicken.
  • Cook on low for 5-6 hours or on high for 2-3 hours.
  • (I mixed in baby peas at serving time and served it over egg noodles.).

A very simple and tasty quick throw together recipe that is delicious. I serve it over rice, with a nice spinach salad on the side, add a dinner roll and you have a quick elegant dinner. Great for when company's coming.

2/3 cup Miracle Whip
3/4 teaspoon curry powder

Steps:

  • Put the chicken pieces into the crock pot.
  • Mix together the remaining ingredients and then toss with the chicken pieces in the crock pot.
  • Cover and cook on high 4-5 hours or 6-7 hrs on low.
  • Serve over rice.

Created this with the things I had on hand, and it turned out flavorful, juicy and tender. Served it with a little of the broth & onions over rice, with the asparagus on the side. The next day, used some of the chicken for chicken roll ups, with a little mayo, and the broth as an "au jus", then made chicken salad from the rest (mayo, celery seed, and a scoop of the onions from the broth), and put the broth away for noodle soup later in the week. (This was just for us 2, so you may want to adjust the recipe accordingly : )

5 boneless skinless chicken breasts
4 tablespoons butter
1 1/2 cups 2% milk (or over)
2 tablespoons red wine vinegar
1 cup chicken broth
2 teaspoons rosemary
2 teaspoons soy sauce
4 garlic cloves, minced (or to taste)
1 1/2 cups chopped onions
1 bunch white asparagus (or whatever veggie you prefer)

Steps:

  • Soak chicken in a bowl of salt water for about 10 minutes.
  • While chicken is soaking, put butter, milk, vinegar, broth, rosemary, and soy in a medium saucepan and heat until smooth.
  • Chop onion and mince garlic.
  • Pat chicken dry and place in bottom of crock pot.
  • Pour broth mixture over chicken.
  • Sprinkle onion and garlic into broth mixture in crock pot.
  • Cover and cook on High setting for 5 hours, or Low for 8-10 hours.
  • *** During last hour of cooking, add asparagus, or other vegetable.

This recipe using only three chicken breasts is very economical and super delicious! My kids love it and they are extremely picky. The chicken just melts in your mouth and is so flavorful! Garlic bread and salad goes well with this meal. I always taste before serving so I will know what, if anything more, I need to add such as Parmesan, Italian dressing, or milk if it's too thick, etc.

1 teaspoon sea salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon Italian seasoning
1 teaspoon garlic powder
3 skinless, boneless chicken breast halves
1 (10.75 ounce) can cream of mushroom soup
6 ounces Italian salad dressing
⅔ cup sour cream
½ cup grated Parmesan cheese
¼ cup all-purpose flour
2 teaspoons malt vinegar
1 (8 ounce) package angel hair pasta

Steps:

  • Whisk sea salt, black pepper, cumin, paprika, Italian seasoning, and garlic powder together in a bowl. Season chicken breasts with seasoning mixture and place chicken in the slow cooker.
  • Stir cream of mushroom soup, Italian dressing, sour cream, Parmesan cheese, flour, and vinegar together in a bowl; pour over chicken.
  • Cook on Low for 6 hours.
  • Shred chicken in the slow cooker using 2 forks.
  • Bring a large pot of lightly salted water to a boil. Cook angel hair in the boiling water, stirring occasionally until cooked through but firm to the bite, 4 to 5 minutes. Drain.
  • Serve chicken over angel hair pasta.

6 boneless chicken breast halves (frozen)
8 ounces Italian salad dressing (trust me)
10 3/4 ounces cream of chicken soup
1 cup chicken broth
8 ounces cream cheese, softened (who said it was healthy?)
1/2 teaspoon basil
1/2 teaspoon thyme
salt and pepper, to taste

Steps:

  • In your crock pot, combine chicken breasts & dressing. Cover & cook on low for 6 -7 hours- you want it good and tender & juicy.
  • Drain juices and shred chicken meat.
  • In a medium bow- mix soup, broth, cream cheese, basil, thyme & S & P. Pour over slow cooker chicken. Continue to cook on low for one hour.
  • Now, you're ready to serve over pasta or eat it plain. Steamed broccoli is a perfect mate for this dish. Aren't crock pots just the most wonderful cooking companion? Enjoy.

Taken from a Fix it and Forget it Cookbook. Yummy served over croissants and would probably be good over biscuits as well. Turns out with little effort. Makes a lot of creamy sauce. You might be able to cut back a little on the soups, but I usually follow the recipe as directed, since I'd rather have too much sauce than too little. For the soups, use any combination of your favorites--whatever you have on hand--cream of celery, cream of chicken, cream of mushroom, whatever. I have also used reduced fat versions with no problem.
