ONE-POT PASTA WITH GROUND TURKEY AND SPINACH

- Heat the oil in a large, high-sided skillet or Dutch oven over medium high heat until it shimmers and then add the ground turkey with 1 teaspoon kosher salt, 1 teaspoon 1 teaspoon ground cumin, the oregano, 1/2 teaspoon black pepper and the crushed red pepper. Break up the turkey with the spices and cook for about 5 minutes.
- Add the onion, red bell pepper, and pressed garlic and cook for another 5 minutes or until the turkey is browned and the veggies soften.
- Add the canned tomatoes with green chiles to the skillet or pot with the rest of the kosher salt, cumin, black pepper, chili powder and stir.
- Add the penne pasta and cover with the chicken broth, bring to a boil, turn down to a simmer, cover and cook until the pasta is just tender, about 8 minutes, stirring occasionally.
- Stir in the cream and fold in the spinach and cook until the spinach wilts, taste for seasoning and top with the shredded cheese.
- Garnish with the chopped cilantro, sit back and watch the forks fly!

- Whisk all dressing together in a small bowl; set aside. Cook pasta according to package directions; drain. Place in a large bowl. While pasta is warm, stir in 1/2 cup dressing. Cover and chill. Add broccoli, turkey, onions, red pepper and remaining dressing; toss to coat. Cover and chill 3-4 hours or overnight.

- Cook pasta according to package directions. Meanwhile, in a large stock pot, cook turkey, onions over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. - Cook the spaghetti according to package instructions until al dente, reserving a cup of cooking liquid. Set aside.
- Heat oil in a large skillet over medium heat. Cut carrots, bell pepper, and onion into large chunks and place in food processor. Pulse until diced into desired size. (Alternativly, you can dice these veggies into a small dice). Add to skillet and saute for 3-4 mintues until softened, adding the minced garlic during the last minute of cooking.
- Push the veggies to the side of the pan and add the ground turkey to the middle, breaking up with a spoon. Season with oregano, dried basil, salt and pepper. Cook through (about 6-7 minutes) then add the tomato paste and zucchini. Saute for an additional two mintues and then pour in the diced tomatoes. Bring to a simmer and cook for 10 minutes, adding pasta water if the sauce is too thick.
