You do not need a dehydrator to make easy and flavorful beef jerky at home. It can be dried in a conventional oven in your own kitchen.

1 pound boneless top round steak (or London broil, trimmed of fat)
1/4 cup liquid smoke
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1 1/2 teaspoons kosher salt
1 teaspoon black pepper (freshly ground)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper (or to taste)

Steps:

  • Bake for about 4 hours, or until the jerky is dry to the touch, can be bent, but not break. Check the jerky often since drying times will vary due to oven differences (the process might take as long as 12 hours). Remove from the oven and raise the temperature to 275 F.
  • Arrange the strips on a clean baking sheet, fitted with a clean rack, so they are close together, but not touching or overlapping. Bake for an additional 10 minutes.

Thanks to a new wave of modern day cave-people, eating healthy, high-protein snacks is all the rage, and while you can find many artisan brands out there, making your own is fun, easy, and using this method, relatively quick. Have your butcher slice the beef for you.

¾ cup Worcestershire sauce
¾ cup soy sauce
1 tablespoon smoked paprika, or to taste
1 tablespoon honey, or more to taste
2 teaspoons freshly ground black pepper
1 teaspoon red pepper flakes
1 teaspoon garlic powder
1 teaspoon onion powder
2 pounds beef top round, thinly sliced

Steps:

  • Whisk Worcestershire sauce, soy sauce, paprika, honey, black pepper, red pepper flakes, garlic powder, and onion powder together in a bowl. Add beef to bowl and turn to coat beef completely. Cover the bowl with plastic wrap and marinate in the refrigerator, 3 hours to overnight.
  • Preheat oven to 175 degrees F (80 degrees C). Line a baking sheet with aluminum foil and place a wire rack over the foil.
  • Transfer beef to paper towels to dry. Discard marinade. Arrange beef slices in a single layer on the prepared wire rack on the baking sheet.
  • Bake beef in the preheated oven until dry and leathery, 3 to 4 hours. Cut with scissors into bite-size pieces.

I came across this recipe lately....I remember making this for my son all the time...everyone loved this homemade dried beef.

1 lb flank steak
1/2 cup soy sauce
1/2 cup honey
1/4 cup lemon juice
2 -3 cloves fresh garlic, crushed
1 teaspoon Worcestershire sauce
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Prepare a large baking sheet with a wire rack to fit on baking sheet.
  • Put the flank steak in the freezer for 30 mins, or until firm, but pliable.
  • Slice the steak very thinly across the grain, about 1/8-in thick; or ask your butcher to slice the meat at time of purchace.
  • In a small bowl, combine the soy sauce, honey, lemon juice, garlic, Worcestershire sauce, onion powder, salt and pepper; mix well.
  • Mix and coat the beef strips with the sauce mixture.
  • Refrigerate for 2 hours.
  • Preheat the oven to 180F.
  • Place the strips on a wire rack on a baking sheet.
  • Bake for 12 hours, or until meat is dried (it should bend, but not snap).
  • Store in an airtight container when cool.

This is excellent beef jerky and worth the wait! Less expensive than store bought and tastes better. Double the recipe next time and experiment with different spices you like!

4 lbs london broil beef or 4 lbs flank steaks
2 teaspoons black pepper
2 teaspoons chili powder
2 teaspoons garlic powder
2 teaspoons cayenne pepper, more if you like it hot
2 teaspoons onion powder
1 teaspoon liquid smoke
1/4 cup soy sauce or 1/4 cup low sodium soy sauce
1/2 cup Worcestershire sauce
1/2 cup Frank's red hot sauce

Steps:

  • Trim all fat off meat.
  • Cut steak in to 4 inch strips.
  • The steak should be about 1/2 inch thick.
  • It's easier to cut meat partially frozen.
  • Pound meat lightly, you don't want it too thin.
  • Add all ingredients in a large bowl.
  • Mix well.
  • Cover and refrigerate overnight (8 hrs).
  • Line cookie sheets with tin foil.
  • Place steak strips on sheets, don't overlap meat.
  • Set oven at lowest temperature. (150-175°F).
  • Bake six hours, turning after three hours.
  • Jerky is done when meat is dried out, depending on your oven.
  • Worth the wait!

1 1/2-2 lbs lean flank steak
1/4 cup soy sauce
1 tablespoon Worcestershire sauce
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/2 teaspoon onion salt

Steps:

  • Trim and discard all fat from meat. Slice meat in long 1/4-inch thick strips (easier if meat is partially frozen). Combine remaining ingredients.
  • Add meat strips, coating all surfaces. The meat will absorb most of the liquid. v
  • Cover tightly (I use a Ziploc bag) and marinate overnight in refrigerator.
  • Drain off any liquid.
  • Arrange meat strips together but not overlapping, directly on oven racks.
  • Dry meat at lowest oven temperature, 150 degrees to 200 degrees until meat turns brown, is dry and feels hard (about 10 hours or overnight). Cut into 1-inch pieces, using scissors.
  • Cool thoroughly before storing in airtight containers. Beef jerky keeps indefinitely at cool room temperature or in refrigerator.

5 lbs 90% lean ground beef (90-92%)
4 1/2 teaspoons non-iodized salt
2 1/4 teaspoons Accent seasoning
3/4 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes
2 1/4 tablespoons meat tenderizer
3/4 tablespoon pepper
3 tablespoons brown sugar
1/2 cup Worcestershire sauce
1/2 cup liquid smoke
1/3 cup ketchup

Steps:

  • Mix all spices with ground beef EXCEPT Worcestershire, liquid smoke and ketchup.
  • You need to really get your hands in to mix it well.
  • Press into strips with a jerky gun.
  • Mix Worcestershire, liquid smoke and ketchup in a shallow dish.
  • Coat strips with sauce.
  • Place on trays to dry.
  • Dry according to your dehydrator manufacturers instructions.
  • Other flavors as follows:.
  • Hot and spicy - mix Louisiana hot sauce with water to thin a bit. Coat strips and dry.
  • BBQ - thin your favorite bottled bbq sauce with water. Coat strips and dry.
  • Teriyaki - thin bottled teriyaki sauce with soya sauce. Coat strips and dry.
