2 teaspoons olive or vegetable oil
2 leeks, cleaned and chopped
2 carrots, peeled and chopped
1 clove garlic, minced
1 stalk celery, chopped
3 to 4 cups leftover cooked turkey, shredded or cubed
2 to 3 bay leaves
2 teaspoons dried thyme
1/2 teaspoon salt
1/4 teaspoon ground black pepper
8 cups reduced-sodium chicken broth
6 ounces uncooked egg noodles
1 cup frozen green peas
2 tablespoons chopped fresh parsley leaves

Steps:

  • Heat oil in a large stock pot or Dutch oven over medium heat. Add leeks, carrots, garlic, and celery and saute 4 minutes, until soft. Add turkey, bay leaves, thyme, salt, and black pepper and stir to mix well. Add chicken broth and bring mixture to a boil. Reduce heat to medium-low, partially cover and simmer 10 minutes.
  • Return mixture to a boil and add egg noodles. Cook 10 minutes, until egg noodles are just tender. Stir in peas and cook until peas are just heated through, about 1 minute.
  • Remove from heat, discard bay leaves and stir in parsley.

3 tablespoons lemon juice

1 cup frozen corn (about 5 ounces), thawed
1 cup frozen peas (about 4 ounces), thawed

Steps:

  • Place the first 8 ingredients in a 4- or 5-qt. slow cooker., Toss turkey with pepper and salt. In a large skillet, heat oil over medium-high heat; brown turkey in batches. Add to slow cooker., Cook, covered, on low 4-5 hours, until carrots are tender. Stir in corn and peas; heat through., Cook noodles according to package directions; drain. Turkey carcass (plus neck, wings and giblets, except liver, if available)
1 large onion, coarsely chopped
2 ribs celery, coarsely chopped
2 carrots, peeled and coarsely chopped
1 1/2 teaspoons salt
6 ounces uncooked Chinese noodles
1 tablespoon toasted sesame oil
5 teaspoons grated fresh ginger
4 1/2 tablespoons oyster sauce
6 tablespoons chopped cilantro

Steps:

  • First, make the broth. Combine the turkey carcass and parts, onion, celery and carrots with six quarts of water in a large pot. Bring to a boil over medium-high heat. Lower heat so that liquid is at a bare simmer. Cook, skimming the top as necessary, for 4 hours. Strain the broth and remove the grease. Place in a clean pot and simmer until reduced to 6 cups, about 1 1/2 hours. Broth may be cooked ahead and refrigerated or frozen.
  • To complete the soup, heat the broth if it has been stored. Season with the salt. Cook the noodles according to the package directions. Drain and toss with the sesame oil, ginger, oyster sauce and cilantro. Divide the noodles among 6 bowls and top with the turkey and scallions. Pour the broth over the noodles and serve immediately.

Boiling water
6 cups homemade turkey stock or low-salt chicken broth
1/2 cup thinly sliced shallots (about 3 large)
6 1/8-inch-thick rounds peeled fresh ginger
2 tablespoons fish sauce (nam pla or nuoc nam)
2 cups diced cooked turkey meat (about 10 ounces)
Fresh bean sprouts
Fresh mint leaves
Thinly sliced serrano chiles
Lime wedges

Steps:

  • Place noodles in large bowl. Add enough boiling water to cover noodles. Let stand until noodles are soft, about 5 minutes; drain.

Add 6 parsley sprigs, 1/2 teaspoon dried thyme, and 1/4 teaspoon whole peppercorns. Simmer 2 to 3 hours. Strain, then skim off any fat from surface of the broth.

Bones of a leftover turkey
1 sliced medium onion
1/4 cup chopped fresh ginger
6 smashed garlic cloves
1/2 teaspoon red-pepper flakes
1 Napa cabbage, thinly sliced (about 6 cups)
4 ounces Asian rice noodles
2 tablespoons rice vinegar
1 tablespoon soy sauce
Coarse salt
Cilantro sprigs, for garnish (optional)
Lime wedges, for garnish (optional)

Steps:

  • Break up turkey bones; place in a large pot with onion, ginger, garlic, and red-pepper flakes. Add enough water to cover (10 to 12 cups); bring to a boil. Reduce heat to medium-low; simmer, partially covered, 30 minutes.
  • Discard large solids; strain broth through a fine-mesh sieve into a large saucepan (you should have 8 to 10 cups). Return to a boil. Add sliced cabbage to broth along with rice noodles, vinegar, and soy sauce.

thumb-size piece root ginger , peeled and sliced
2 star anise
1 cinnamon stick
3 cloves
200g dried rice noodles , any type
2-3tbsp fish sauce
2 limes , one juiced, one for wedges
400g roast turkey , shredded
100g bag beansprouts
bunch coriander
bunch mint
4 spring onions , thinly sliced
2 red chillies , sliced (leave the seeds in if you like it hot)

Steps:

  • Pour the stock into a large pan, add the ginger and spices, then leave to simmer and infuse for 10 mins. Soak the noodles according to the pack instructions, then drain and rinse.
  • Add the fish sauce and lime juice to the stock and taste for seasoning - add more fish sauce if you like. Divide the noodles between four bowls, then top with the shredded meat, beansprouts and a scattering of herbs, spring onion and chillies. Ladle the hot stock over the noodles, then serve with more herbs and lime wedges for squeezing.

1 leftover turkey carcass (from a 12- to 14-pound turkey)
3-1/2 quarts water
4 chicken bouillon cubes
1 large onion, halved
4 whole peppercorns
2 bay leaves
1 teaspoon poultry seasoning
1 teaspoon seasoned salt
1/2 to 3/4 teaspoon pepper
1 cup chopped carrots
1 cup chopped celery
1 medium potato, peeled and diced
1/2 cup chopped onion
1 medium turnip, peeled and diced, optional
1 cup uncooked egg noodles

Steps:

  • Place the first nine ingredients in a stockpot; bring to a boil. Reduce heat; cover and simmer for 1 hour. , Strain broth; discard onion, peppercorns and bay leaves. Remove carcass; allow to cool. Remove turkey from bones and cut into bite-size pieces; set aside., Add vegetables to broth; bring to a boil. Steps:

  • Place chicken, onions, garlic, ginger, bay leaves, turmeric, peppercorns, coriander seeds, and several pinches of salt in a large pot. Pour in cold water to cover and bring to a boil over medium heat. Reduce heat and gently simmer until an instant-read thermometer inserted into the thickest part of breast registers 155°F, 30-35 minutes. Transfer chicken to a plate and let cool slightly; keep stock simmering. Remove skin from chicken; discard. Pull meat from bones and shred into bite-size pieces; set aside. Return bones and carcass to stock. Increase heat and bring stock to a boil; cook until reduced by about one-third, 15-20 minutes. Season with more salt if needed.
  • Strain stock into a large saucepan; discard solids. Add carrots, bring to a simmer, and cook until carrots are tender, about 5 minutes.
  • Meanwhile, cook noodles in a large pot of boiling salted water, stirring occasionally, until al dente; drain and rinse under cold water to stop cooking.
  • Divide noodles among bowls. Add shredded chicken meat to stock and cook just until heated through; season stock with more salt if needed. Ladle over noodles. Top soup with scallions and drizzle with chili oil.
