I just love the recipes that are featured in the Weight Watchers magazines. This is from the September/October 2008 issue that I just received. I haven't tried this yet but will some time in the future.

4 (1/4 lb) turkey cutlets
1 1/2 cups fat free marinara sauce
4 slices fat free mozzarella cheese
1/4 cup parmesan cheese, freshly grated

Steps:

  • Spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the cutlets and cook until browned, 1-2 minutes per side. Transfer to a plate.
  • Add the marinara sauce to the skillet and bring to a simmer. Add the cutlets and turn to coat with the sauce. Top each cutlet with 1 slice of the mozzarella and a spoonful of the sauce. Sprinkle with the Parmesan.
  • Reduce the heat and simmer, covered, until the cheese melts and the cutlets are cooked through, 2 minutes.
  • GOOD IDEA: Accompany each serving the 3/4 cup cooked spaghetti and 1 cup cooked broccoli rabe (the Points value will increase by 3).

Cooking oil
4 ounces turkey breast, cut into bite-sized pieces
Garlic salt
Flour, for dredging
1-ounce chopped onion
1 1/2 ounces mushrooms
1 clove garlic, minced
3 ounces turkey or chicken broth
2 ounces Marsala wine

Steps:

  • In a skillet heat a few tablespoons of cooking oil. Sprinkle the turkey breast pieces with garlic salt and then roll in the flour until coated. Brown the turkey breast pieces in the oil and then add the onion, mushrooms, and garlic. Cook a few more minutes and then drain off the excess oil. Add the broth and Marsala wine and reduce heat. Simmer until sauce thickens.

1 lb turkey breast, sliced (apx 8 pieces)
4 tablespoons white wine or 2 tablespoons lemon juice
1 egg
1 tablespoon water
1/2 cup dry breadcrumbs
1 tablespoon all-purpose flour
1 teaspoon salt
1/2 teaspoon paprika
2 tablespoons parsley, chopped
2 tablespoons olive oil
8 slices tomatoes, Ripe
1 avocado, sliced
8 slices cheddar cheese, thin
4 sprigs parsley

Steps:

  • Pound turkey slices between two sheets of waxed paper until thin.
  • Marinate in wine or lemon juice in refrigerator 30 minutes to one hour.
  • Beat egg slightly with water. Combine bread crumbs with flour, salt, paprika and parsley.
  • Dip turkey slices in egg, then coat with bread crumb mixture. Chill for 1 hour.
  • In large skillet heat 2 Tbl olice oil. Saute turkey about 3 minutes on each side, until golden brown. Remove to shallow baking pan.
  • Place tomato and avocado on each turkey scallopini, then top with cheese.
  • Place under broiler until cheese melts.
  • Arrange on platter or individual plates, allowing 2 slices per person. Garnish with fresh parsley.

1 tablespoon unsalted butter
1 tablespoon olive oil
2 lbs pork loin, cut into 10 cutlets, then pounded to 1/8 inch thick
3 teaspoons kosher salt
1/4 teaspoon fresh ground black pepper
1 cup reduced-sodium fat-free chicken broth
1 teaspoon fresh lemon juice
1 teaspoon lemon zest

Steps:

  • Heat the butter and oil in a large nonstick skillet over medium heat.
  • Season the 10 pork cutlets with 2 tsp of the salt and pepper.
  • Cook the cutlets until lightly browned and cooked through, about 1 min per side or until tender.
  • Remove from pan.
  • Set aside 4 cutlets and keep warm, and save the other 6 for another meal.
  • Add the chicken broth to the pan and simmer, scraping up the brown bits with a wooden spoon until slightly thickened, about minutes.
  • Remove from heat and stir in the lemon juice and the remaining salt.
  • Drizzle the meat with the pan juices and sprinkle with the zest.
  • Serve with Lemon Asparagus.

We found this recipe in a low fat cook book and were skeptical, but my fiance and I are believers now. This is tangy, sweet, hearty, and healthy.

3 tablespoons orange juice
5 tablespoons soy sauce
3 tablespoons chopped onions
3/4 red peppers or 3/4 green pepper
6 slices fresh ginger (quarter size)
18 ounces ground turkey
3/4 cup fresh breadcrumb
1 egg
1 egg white
8 ounces crushed pineapple
2 tablespoons sugar
2 tablespoons white vinegar
2 tablespoons chopped onions
2 tablespoons chopped red peppers or 2 tablespoons green peppers
1 tablespoon minced fresh ginger
1/4 teaspoon crushed red pepper flakes
2 tablespoons raisins

Steps:

  • Preheat oven to 350°F.
  • In a blender or food chopper, combine the juice, soy sauce, onions, peppers, and ginger. Process until it is a fine puree.
  • Pour puree into a medium bowl and add turkey, bread crumbs, and egg.
  • Blend everything well with your hands, and pat it into a loaf pan that has been coated with non-stick spray.
  • Bake for about 45 minutes (I like to use a meat thermometer to be sure). It should be brown on top with no trace of pink in the center.
  • Let the loaf stand for 5 to 10 minutes before you slice it.
  • This loaf is good hot or cold.
  • For the sauce (prepare while the loaf is baking).
  • In a microwave safe bowl, combine pineapple with juice, sugar, vinegar, onions, peppers, ginger, and pepper flakes.
  • Microwave on high for 3-5 minutes.
  • Stir in the raisins and microwave for another minute or two.
  • Let the chutney stand at least 5 minutes before serving. It is tasty warm or cold and keeps for a couple of weeks in the fridge.
  • Serve chutney along side or on top of the finished turkey loaf.

12 ounces turkey breast, in 4 slices 3 oz each,about 1/4 inch thick
1/4 cup flour
1/8 teaspoon salt
1/8 teaspoon pepper
1 egg
2 tablespoons water
1 cup fresh breadcrumb
1/2 cup freshly grated parmesan cheese
1/4 cup butter
snipped parsley

Steps:

  • Rinse turkey slices and pat dry.
  • Stir together flour, salt and pepper in a shallow bowl.
  • In another shallow bowl beat the egg with the water.
  • In another shallow bowl mix the cheese and the bread crumbs.
  • Dip each turkey slice in the flour, then the egg then the bread crumbs.
  • In a 12 inch skillet melt butter over med-high heat.
  • Add coated turkey slices and cook 2-3 minutes per side or until no longer pink.
  • Move to serving platter and garnish with parsley.

1 package (17.6 ounces) turkey breast cutlets
1/4 cup all-purpose flour
1/8 teaspoon salt
1/8 teaspoon pepper
1 large egg
2 tablespoons water
1 cup soft bread crumbs
1/2 cup grated Parmesan cheese
1/4 cup butter, cubed
Minced fresh parsley

Steps:

  • Flatten turkey to 1/4-in. thickness. In a shallow bowl, combine the flour, salt and pepper. In another bowl, beat egg and water. In a third shallow bowl, combine bread crumbs and cheese. , Dredge turkey in flour mixture, then dip in egg mixture and coat with crumbs. Let stand for 5 minutes. , Melt butter in a large skillet over medium-high heat; cook turkey for 2-3 minutes on each side or until meat is no longer pink and coating is golden brown.
